Traditional Cardamom Buns (Kardemummabullar)!
Cardamon buns are my favorite things ever!!!!
I hope you guys like these as much as I do!

Ingredients:
Dough-
5 TBSP water
5 TBSP whole milk
3 TBSP all purpose flour
6 TBSP melted unsalted butter (cooled)
1/2 cup whole milk (slightly warm)
2 TSP instant yeast
2 TSP cardamom seeds (removed from pod if necessary and crushed)
1 TSP salt
1/4 cup granulated sugar
3 cups + 2 TBSP all purpose flour
1 large egg
Filling -
8 TBSP soft butter (I like using Amish butter!)
1 TSP all-purpose flour
Pinch of salt
1/4 cup packed light brown sugar
2 TSP cardamom seeds (removed from pod if necessary and crushed)
Syrup and Cardamom Sugar -
3 TBSP light corn syrup
1 TBSP water
3 TBSP granulated sugar
1 TSP cardamom seeds (removed from pod if necessary and crushed)
Instructions:
Combine 5 TBSP water, 5 TBSP whole milk, and 3 TBSP all purpose flour in a medium saucepan to make tangzhong (also known as a water roux,a paste of flour cooked in water or milk used to improve the texture of bread and increase the amount of time it takes to stale)
Whisk until combined and no lumps remain. Place the saucepan over medium heat and cook, whisking constantly, until it thickens (about 1 - 2 minutes)
While the tangzhong is cooling, combine the yeast, cardamom, salt, sugar, and flour in the bowl of a stand mixer. Whisk briefly by hand to combine
Add melted and cooled butter, slightly warm milk, egg and the cooled tangzhong to the dry ingredients
Mix on medium low until it's all fully combined
Increase mixer speed to medium and knead mix for 4 - 5 minutes or until dough is slightly tacky (NOT sticky and clears the side of the bowl)
Cover the bowl with plastic wrap and allow the dough to rise for 1.5 - 2 hours until it's about twice its original size
To make the filling, combine butter, flour, salt, brown sugar and cardamom in a medium bowl. Using a fork, mix these all together until you get a smooth and spreadable paste
Once dough has risen, preheat oven to 400 F
Put dough onto a clean countertop and roll it out with a rolling pin until it's in the shape of a rectangle that's about 16x20 inches in size (should be smooth enough to not need flour, but flour can be sprinkled on to prevent sticking)
Using an off-set spatula, spread your filling in a thin and even layer over the bottom half of the dough
Fold the top half of the dough rectangle down over the lower half
Roll the folded dough a few times to help everything flatten and adhere
Cut the dough into 12, evenly sized strips that are about 8 inches in length
Working with one strip at a time, use a sharp knife to make a slit up the center of the dough strip until there's just about 3/4 of an inch at the top (it'll look like a looooong pair of pants)
Twist each strip over each other a few times using the thumb and forefinger of each hand
Loosely wrap one of the twisted legs up and around the top of the strip, followed by the other, securing the bottom by coming up and through the center of the bun
Place your buns onto baking sheets, cover with plastic wrap, and set aside. Let your buns rise for an additional 45 minutes
Bake sets of 6 buns at a time for 16 - 20 minutes or until golden brown
Remove buns from the oven and cover with a clean tea towel while they cool to trap excess moisture and keep the buns soft
Heat 3 TBSP of light corn syrup with 1 TBSP of water until bubbling
Combine 3 TBSP of sugar with 1 TSP of cardamom in a small bowl
Brush the syrup over the buns and sprinkle each bun with your cardamom sugar

Scailtin (Irish Whiskey Milk Punch) Recipe
Scailtin is a drink dating back to the 1700's. There are tons of different recipes, each with their varying flavors with how each person prefers to sweeten the drink. Some people insist that it should be sweetened with other, others claim brown sugar, and some argue that it isn't scailtin at all unless it's flavored with caraway. The recipe will differ per region, but this is the recipe that I've snagged from family memory.

Ingredients:
2 cups whole milk
1/2 cup Irish whiskey (Jameson)
2 TBSP honey (or to taste)
1/8 TSP ground ginger
1/8 TSP ground cinnamon
Ingredients:
Pour milk and whiskey into a small saucepan
Stir in the honey, ginger and cinnamon. Heat the mix slowly while whisking, careful not to let it come to a boil
Pour into mugs and top with some grated nutmeg when you're done!
Enjoy! Easy as pie, and cozy as hell.

Mini Rant About Witchtok
I deleted TikTok a while ago because I kept coming across videos that legitimately upset me (and I'm not talking about petty drama, I mean videos on animal harm, etc). So I'm not an active participant in the witchtok community anymore, however I saw a lot during my time on the app that made me take a second glance and I'm wondering if anyone else had similar experiences?
There seems to be a lot of drama in the witchtok space that (at least from what I've seen) doesn't translate into other media spaces in the same way. Witchy content creators on YouTube and Tumblr have pretty niche and lovely spaces where, apart from the spare asshole, maintain quite wonderful interactions. On TikTok I noticed that there seemed to be a ton of in-fighting between witchy creators, particularly those that practice baneful work. Granted, I myself am a baneful practitioner, so that may have skewed my algorithm a bit, but it was still enough to give me a bit of a ?
There were lots of petty arguments and insults thrown at each other, promises to curse them and their family members/friends, sending followers after one another. These people all seemed to be fairly well involved in a community of one another until things would suddenly explode, and allegations of all kinds of bigotry would be thrown at each other with shoddy evidence (if there was any evidence whatsoever). I also want to point out that most of the individuals involved in these online wars were white, or at the very least white passing, and it was rare for any BIPOC to be heard throughout the mess of it all.
It made me really frustrated and, to put it bluntly, exhausted. The community of witches I've seen on Tumblr have either been extremely educated and mature or, at the very least, willing to listen and do better if called out. I don't want to blame TikTok itself, because as we've all seen at this point there are problematic people on every platform. It's just the amount of toxicity in the spiritual/witchcraft community on TikTok is astonishing to me, and I'm hoping to hear other opinions on this.

Moist Spiced Honey Cake Recipe
This is different from my honey loaf recipe with the texture being that of a cake instead of a more bread-loaf consistency. It's yummy, and I hope you enjoy it!

Ingredients:
3 1/2 cups all purpose flour
1 TSP baking powder
1 TSP baking soda
1/2 TSP kosher salt
2 TSP ground cinnamon
1/2 TSP ground cloves
1/2 TSP ground nutmeg
1/2 TSP ground allspice
1 cup vegetable oil
1 cup honey
1 1/2 cups granulated sugar
1/2 cup brown sugar
3 large eggs (room temp)
1 TSP vanilla extract
1/4 cup Irish whiskey (prefer using Jack Daniels)
1 cup warm strong tea
Instructions:
Preheat oven to 350 F and generously grease a bundt cake pan
In the bowl of a stand mixer, whisk together the flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg, and allspice
Make a well in the center and then add oil, honey, sugars, eggs, vanilla, tea, and whiskey
Tip! Measuring oil in the same cup as the honey will help pour the honey out of your measuring tool
Mix on slow speed and then stir together the well to make a thick and well-blended batter. Make sure there are no ingredients stuck to the bottom
Spoon batter into your prepared pan and bake until done
For angel and tube cake pans: 60 - 70 minutes
For loaf cake pans: 45 - 55 minutes
For sheet style pans: 40 -45 minutes
Let your cake stand for 15 minutes before removing it from the pan to cool, then enjoy!

Sweet Pear Bread
I'm back online and going crazy with bread recipes for spring! This one is nice and moist with the addition of pears, one of my favorites fruits!

Ingredients:
2 cups all purpose flour
1 cup sugar
1 TSP baking powder
1/2 TSP baking soda
1/2 TSP salt
1/8 TSP nutmeg
1/2 cup (cold) butter
2 large eggs (room temp)
1/4 cup buttermilk
1 TSP vanilla extract
1 cup *finely* chopped and peeled ripe pears
Instructions:
Preheat oven to 350 F and grease 3 to 5 4x3x2 inch loaf pans
In a large bowl, combine your flour, sugar, baking powder, baking soda, salt, and nutmeg
Cut in the cold butter until mixture resembles coarse crumbs
In a separate bowl, combine your eggs, buttermilk, and vanilla
Stir this wet mix into your dry ingredients until just moistened, then fold in the pears
Bake for 35 - 40 minutes, or until it comes out clean at the center with a toothpick. Then cool for 10 minutes before removing the bread from pans onto wire racks to cool completely
This recipe can also be experimented into making muffins!

Hot Cross Buns for Spring
Spring is here! Finally!
As much as I love the colder weather, the springtime is lovely for picnics and enjoying nature. Hot cross buns are as traditional as treats can come, and they always remind me of spring.

Ingredients:
2 cups all-purpose flour
1/4 TSP cinnamon
1/8 TSP nutmeg
2 TBSP white sugar
2 TSP baking powder
1/2 TSP salt
3/4 cup milk
4 TBSP (melted) butter
1 egg
1/2 raisins or currants
For Crosses -
2 TBSP all purpose flour
2 TBSP warm water
For Glaze -
2 TBSP apricot jelly or jam
Instructions:
Preheat oven to 375 F and grease a 9X13 inch baking sheet
In a large bowl, whisk together your flour, spices, sugar, baking powder and salt
In a separate bowl, combine your milk, butter, and egg
Stir your wet ingredients into your dry ones and mix until they're just blended. If you're using them, fold in your raisins/currants
Turn dough onto a lightly floured surface and knead 8 to 10 times until it becomes smooth
Divide dough into 12 equal pieces, shaping each into a bun and placing onto your baking sheet
To make the iconic crosses, mix together flour and water until it turns into a thick paste. Put this mix into a pastry bag and pipe crosses onto the tops of the buns
Bake for 20 minutes or until golden brown on top and cooked through the center (test with a toothpick!)
Remove from the oven and let cool slightly before glazing with your apricot jelly/jam. If you need to thin it out, warm it over a low heat stovetop just a bit in order to brush the buns evenly

The Barbie movie reminded me about how when I was little my parents were upset that I kept making my Barbie dolls kiss, so they bought me a Ken doll. The next day they found me having a funeral for poor Ken in the garden, he had died of tuberculosis. All the Barbies were in attendance and I buried him under our rose bush. The Barbies were too poor to afford a headstone (it was 1875) so I didn’t mark where the grave was and I never could find him again. He’s probably still there.
