Every Friday we look forward to Veggie Night 🫛🥕🍅🌽🥦!!
Today's Menu
Proteins:
Fry the tofu with olive oil
Salmon with soy + honey sauce cos I don't buy garlic
Boil eggs medium hard
Vegetables:
Toss mushrooms with some butter
Steamed carrots, sweet peas, pumpkin, young corn
Eat as is tomatoes & sliced onions
Carbs:
Steamed young potatoes
Steamed sweet potatoes from last week not in pic
Green Tea Soba for the adults
Sauces to make this a feast:
Magic Japanese Onion Vinegar Soy Sauce
Kewpie Sesame Sauce

Organic Sweet Green Pea and Oyster Mushroom Stir Fry

Sweet green peas are a very good source of vitamin K, manganese, dietary fiber, vitamin B1, copper, vitamin C, phosphorus and folate. They are also a good source of vitamin B6, niacin, vitamin B2, molybdenum, zinc, protein, magnesium, iron, potassium and choline.  And if that’s not enough they are low in calories and high in protein!  
So it’s no surprise I made these green peas the star of this pea delicious stir fry. This is such an easy dish to make, ready in about 15 mins.  You can eat this as a main for veggie night or can easily be a side dish to any meal.  If you make it, let me know what you think? Enjoy!
INGREDIENTS: (I use all organic ingredients)
2 cups of green peas
1 red bell pepper
1 onion
4 cloves of garlic (minced)
1 cup of oyster mushrooms
¼ cup of vegetable broth
salt
pepper
½ cup of freshly grated parmigiana reggiano cheese
Olive oil
INSTRUCTIONS:
Dice the onions and mince the garlic.  In a medium sauce pan heat to medium heat and add olive oil once pan is hot.  Add in the diced onions and garlic and cook down until the onions are translucent.  Add in oyster mushrooms and continue to sauté  until the mushrooms start to brown.  Season with salt and pepper and then add the 2 cups of green peas and diced red peppers.   Stirring constantly until the peas start to soften up.  Add in the ¼ cup of vegetable broth and cook down for 1-2 minutes.  Lastly, add int he freshly grated parmigiana cheese and let simmer for additional 1-2 minutes or until most of the liquid has thickened up.  
Season with a little more salt and pepper to taste. Remove from heat and serve in a bowl or as a side dish.
Serves 4
