Takeout-style Rangoons
The members of my family who can eat gluten always get rangoons from Panda Express. They look so good and I always wished I can eat them... wish granted!
Ingredients
♡ Gluten free wonton wrappers (find recipe here)
♡ 4 oz cream cheese, room temperature
♡ 1/8 tsp garlic powder
♡ 1 tblsp chives, chopped
Instructions
☆ Mix together cream cheese, garlic powder, and chives
☆ Put about 1 tblsp of the cream cheese mixture on a wonton wrapper. Wet the edges of the wrapper and fold
☆ When all rangoons are ready, heat a few inches of oil in a high-sided pot.
☆ Fry rangoons in pot until golden brown, let cool on plate covered with paper towels
☆ Serve with soy sauce

Panda Express Mushroom Chicken (copycat)
Ingredients:
1-1.5 pounds boneless chicken thighs, cubed (could also use breast)
~8oz button mushrooms
2 large zucchini
1 tbsp minced garlic (~6 cloves)
1 tbsp minced ginger (1 small knob)
Chicken marinade:
2 tbsp light soy sauce
1 tbsp Chinese cooking wine
1 tbsp sesame oil
2 tbsp cornstarch
Sauce:
1/2 cup chicken broth or water
1/4 cup light soy sauce
2 tbsp oyster sauce
1 tbsp Chinese cooking wine
1 tbsp sugar
Instructions:
Cut chicken into cubes. Marinade in sauce.
Cook chicken in wok. No need to add more oil. Set aside.
Add a tablespoon of oil to same wok. Add garlic and ginger. Cook until fragant.
Add mushroom and zucchini. Cook until kinda cooked, ~5 minutes. They shouldn't be mushy.
Add in sauce and chicken again. Cook together.
Towards the end, add in a little slurry. Take out some of the sauce and add cornstarch to it and add it back in.
Serve over rice.
Notes:
08/01/2023 - Made it with the amount and it was kind of salty. I hope it's not like this. Just eat it over rice. I even added an extra zucchini. I used organic chicken and that was on sale. The chicken cost like $10, and I had to use the two huge zucchini from Eataly I got.
