I was in Miami a couple of weeks ago, and one thing I really, really liked was the tomato confit that came on a pizza. I did some digging for a good recipe, and this one from Hunter Angler Gardener Cook was the one that worked for me. I opted for a baking dish instead of a sheet pan because then I could put the drained pasta directly in the confit and it made for an absolutely lovely, luscious sauce.

Definitely am tweaking this for an upcoming post!

Zucchini-Pancetta Frittata

Another episode of Goth Girl Can Cook, Zucchini-Pancetta Frittata edition. This had the advantage of using up some leftover pancetta, and some leftover cream cheese. I should have baked it in the carbon steel pan, and it would have been a bit thicker, but I just cooked it for less time. It wasn't as browned on top as it should have been, though
