🌱Garden Update🌱
Oof guys, this was a tough spring. The constant cold, wet, then hot weather has completely obliterated my leafy greens and has stunted my peas! This time last year I was making salads and picking peas 😔
BUT. All is not lost! The carrots and beets are growing strong and so is the garlic. The peas and lettuce in my raised arch-bed seem to be doing better than my in-ground bed. Also, the potatoes have taken off and are looking fabulous 😍
Next weekend is the big summer planting! I've just purchased my tomatoes and peppers!!! I'll also be planting my summer squash and pumpkins 🥰

Recipe for Roasted Lettuce, Radicchio, and Endive
In this classy warm salad, lettuce, radicchio, and endive are stuffed with olives, capers, and herbs and roasted until wilted. 1/2 cup capers, 1 teaspoon ground black pepper, 1 tablespoon dried oregano, 2 heads Belgian endive halved lengthwise, 1 teaspoon salt, 1 teaspoon ground dried chile pepper, 1 head chicory halved lengthwise, 3/4 cup pitted Greek olives, 2 tablespoons grated Romano cheese, 3 tablespoons olive oil divided, 1 head romaine lettuce halved lengthwise, 1.5 teaspoons ground thyme, 2 heads radicchio halved lengthwise

news from the uk right now is that our new prime minister, who was appointed little over a month ago, is now being asked by her own party to resign after almost crashing the pound and having to do a complete u-turn on her policies.
she's actually had even less time in power (because parliament has to 'respectfully' stop due to the queen dying, cos you know, the country had to come to a complete halt for ten days) and her time in control is being likened to the shelf life of a lettuce. no seriously, there is currently a live stream of 'who will last longer, liz truss or this lettuce?':
