πLEMON CHEESECAKE MUFFINS π Fluffyyyyy High Protein // Low Carb // Sugar-Free Muffins that taste like lemon cheesecake π SAVE THIS RECIPE & TAG A FRIEND who should make these for you π β β β β β β β β β Muffin 1/2 cup milk of choice (50g) 3 eggs + 1 egg white (or 4 eggs) Zest & juice of 2 lemons 2 tbsp coconut oil, melted (20g) 3 tbsp sweetener of choice (I use 3 pinches of pure stevia extract or 3 tbsp honey/maple syrup) (90g) 1/2 tsp vanilla extract 2 tbsp @TheChiaCo chia seeds (30g) 1/2 cup coconut flour (60g) 1/4 tsp baking soda 1/16 tsp salt Filling Process 1/2 cup cream cheese (120g), 1/4 cup powdered sweetener (50g), 2 tbsp lemon zest, 1 tbsp lemon juice β β β β β β β β β METHOD Preheat oven to 350 F / 175 C. In a medium bowl, combine all wet ingredients. Stir in all dry ingredients. Let sit for a few mins to let the coconut flour and chia seeds absorb the liquid. Pour a large tablespoon of muffin batter into muffin tin lined with cupcake liners, then add 1 heaped teaspoon of filling, then another tablespoon of muffin batter to cover. Bake for 20-25 minutes until fully cooked. Let cool for at least 10 minutes.
