*Shahi paneer* Recipe: Ingredients - 5 medium sized tomatoes, 2 medium sized onion, 1" ginger, 7 cloves of garlic, 1/4 cup cashew, 1 green chilli, oil, 500g water, 1/4 tbsp red chilli powder (or as required), 1 tbsp ginger-garlic paste, 2 medium tej patta, 1/4 tbsp cumin powder, 1/2 tbsp coriander powder, salt to taste, 1 tbsp shahi paneer masala, 1/2 tbsp cardamom powder, 1/4 cup fresh cream, 1 tbsp sugar, 300g paneer (cut in cubes), fresh coriander leaves or kasoori methi for garnishing Method - 1. In a deep pan take cut tomatoes, cut onions, cashew nuts, chopped green chilli, garlic cloves, ginger. Add water to it to the level of veges or little more. Switch on the gas at low flame. 2. Add 2 tsp oil, 1/2 tsp salt and 1/4 tsp red chilli powder. Let this cook with closed lid for at least 20 mins or till everything is soft enough to be blended easily. 3. Remove this cooked mix from gas and using a hand blender, blend it into a puree. Keep this aside. 4. In another vessel, add some ghee or oil. Then add pinch of asafeotida, 1-2 tej patta, 2 saabut cardamom (optional). Then add the puree to this. Let it cook for a minute. 5. Now add cumin powder, cardamom powder, salt, shahi paneer Masala, sugar and mix it all well. Cook it for 5 mins. 6. Add fresh cream and again cook it in closed lid. Finally add cut paneer cubes and mix it all well. Let this cook for another 5 mins.
