I think what really elevates Amaury Guichon's dessert videos (aka the Chocolate Guy) above the other realistic food decorating videos is that everything he makes is intended to be eaten and taste good. And I mean it in the way that it's not just simply decoration applied to the outside of the cake, but everything is made to be flavourful. He'll mix almonds into the cake base and use fresh berries in the cream. When he cuts it open in the end, you can see the cake is not just plain sponge, but layers with gooey caramel to add to the texture. The dessert looks amazing and you can also tell it tastes amazing.

That and the borderline wood/metalworking.
