A/N: The story is developing slowly but surely. Here, you get to see more of Elvis's charm, but not in the performative way. I enjoyed writing this part and cannot wait for the next one!

Never would you ever think you'd have Elvis Presley as a dinner guest, but you'll soon learn to expect the unexpected.
“Darlin’, that’s an interesting way to skin a potato,” Elvis said, leaning against the kitchen counter as you took a wooden handled vegetable peeler to the potato, finding more success in cutting yourself than anything else.  
You stuck your tongue out in concentration as you continued to rake the gadget against the vegetable. He broke out in sing-song laughter, reaching to take hold of your hand, taking the peeler and throwing it into the sink with a loud, tinny clatter. “Sometimes, the old way is the best way. Got a paring knife?” He asked, holding his hand out. You nodded with a smile, wiping your hands on your apron. You grabbed one of the sharpest knives out of a drawer and handed to him.
 “Be careful, it’s sharp,” you warned him carefully, placing the knife in his hand. 
“Baby, you’re surprised, but my mama and daddy taught me how to cook real good. Mississippi Pot Roast is my favorite. After I learned right, I never let mama cut up the carrots and potatoes.” He grabbed the botched potato you had been working on and spun around over the sink, cutting the peel off in a long spiral, without using a cutting board. You watched the brown strips fall into the basin of the sink. 
“You’re brave,” You admitted to Elvis, coming closer beside him. He eyed you from the side as he cut the vegetables into cubes. 
“Why’s that?” He said with a bright grin.
“How do you do that without using a cutting board or the counter?”
“For a fellow Memphian, I am surprised you don’t know the southern tricks,” He said bumping you softly with his body.
“I’m not a chef. My mom didn’t get the chance to teach me.” You answered honestly. He looked at you for a moment, his eyebrows furrowing slightly, his lips falling into a neutral position. 
He returned to his usual charm before speaking again.“Mm, but cookin’ for your man–he’ll love you forever,” He added with a smirk. “A well-fed man will keep you satisfied, that’s for sure.” Damnit, he did it again. You averted eye contact as your lips curled upward in an enthused smile. You tried to hide it. 
“I’d just assume to cook Swanson dinners,” you said with a wink, grabbing a pan to put the ingredients in. 
His jaw dropped exaggeratedly, making a show of the absurd statement. “Are you looking to be a spinster, cheeks?” 
“Oh no, what did she say?” Uncle Harold said with a mischievous smile as he walked into the kitchen. His hands rested on his hips as he addressed the room. “Only that she would rather serve her man TV dinners than cook, sir.” Elvis straightened himself when your uncle walked into the room. 
“I’ll admit, since Diane and Mitchell passed,” He said, making your eyes go wide immediately. You weren’t expecting him to discuss your parents. You hadn’t told Elvis. “She’s had other things to attend to.” Uncle Harold smiled. “She was a straight A student in school, probably has hundreds of books memorized by now. Also balances my checkbooks at the end of each month. I’ve never been late on a payment,” He said, stepping beside you and patting you lovingly on the back. “That’s because my girl is a superstar.” He bent and kissed you softly on the top of your head. You offered him a soft smile, but the familial interaction was embarrassing, although you had no idea why.
 “Thank you, Uncle Harold.” You said, hugging him from the side. You watched Elvis discreetly, noting his playfulness recede into something more reserved. You knew he was thinking about the mystery of your parents, and it made you feel uncomfortable. There was a moment of silence before Evelyn cut the awkwardness. 
“Daddy!” She wailed from across the house.
“Yes, baby?” He asked, excusing himself, stepping outside of the kitchen to deal with her. 
“Keep your hands to yourself. God is watching,” Uncle Harold said, tilting his head down slightly in warning to Elvis.
“Yes sir. God is my guide always.” He said perfectly, turning on the charm once again. The room cleared and there was another moment of silence as Elvis leaned against the counter, waiting for you to speak.
You didn’t know what to say to Elvis. “I–” You started, being cut off by your own hesitance. 
“You don’t have to talk about it, Y/n.” He said, bringing his hands to yours, reassuring you softly. “That must be very hard to talk about.” 
You swallowed and nodded, unable to bring your gaze back to Elvis. “While I’m here, we will have fun,” He said, tilting your head by your chin with the knuckle of his index finger. “Keep your head up, Cheeks. I want to see you.” In that moment, he wasn’t trying to be the kind of Elvis you had seen in almost every magazine, newsreel or newspaper. He made your heart spin in an interesting way. He seemed to genuinely care about you and it perplexed you. At the same time, you couldn’t help but crave his attention. In reality, you would have felt this same way if he weren’t famous. Now that he was real and standing in front of you, having spent the entire day with you, he no longer fit the persona that had been perceived world wide of this man who was oversexualized; a parasite to young womens’ chastity. 
You nodded and continued to work on dinner with him, finishing the dish off with Uncle Harold when he returned to the kitchen. “Looks delicious, kids,” He said, bending to place the dutch oven in the hot oven. “We’ve got an hour,” He said, looking at his watch and back at you and Elvis. 
“Mind if Elvis and I hang out in my room?” You asked boldly, unsure of what he would say. It was true that you were an adult, but you still lived under his roof. 
“Door open the entire time. No funny business. Make sure I can see your hands at all times.” He paused, his features pulled with skepticism. “I know you’re responsible, but as your guardian–”
“I know. You have nothing to worry about, I promise.” You said softly. 
“I’m really a model gentleman outside of the press, sir. Respect comes first, always.” Elvis said, pulling his hands behind his back, standing straight as an arrow. 
Uncle Harold eyed Elvis for several moments. “Alright, go on. You don’t get off easy for being a celebrity, young man.” He said, pointing a firm finger at Elvis. If anything, it makes me more aware.” Elvis nodded politely with a polite ‘yessir.’ “You both are responsible for setting the table in forty five minutes. Don’t be late.” You gave him a tight hug and a kiss on the cheek before boldly taking Elvis’s hand and guiding him toward the back of the house and down the hall to your bedroom. 
Your room was decorated modestly, adorned with a few paintings and cross-stitchings on the walls. The most impressive thing about your room was the massive library that you had accrued. The ledge of your window was lined with books stacked against one another. You had two large bookshelves on either side of your high boy dresser. Each level was over stacked with hardback books and soft cover books alike, shoved in every open space, creating somewhat of a jigsaw puzzle of color. 
“Wow,” he said, walking in toward the collection. His fingers grazed the edges of the books, his eyes tracing over the avalanche of literature. “You really are a little bookworm,” he said, turning to look at you with a smile before returning to the books in front of him. 
“Just a little bit,” you say, your hands tucked behind your back as you let his eyes roam. “There’s only a few that I haven’t read yet,” you added, turning your head to small stack of books on your night stand. “Once I’m done with those, they’ll find their place over here somewhere.” He regarded them with a small smile before turning his attention to the wall hangings. 
“This is beautiful,” he said, pointing to one of the paintings hanging on your wall. It was a picture of a small house that was painted light blue, with an abundance of flowers lining baskets hanging from each window sill. The front yard was painted in varying shades of green, contoured around a winding gravel driveway. In the background of the painting, there was a small white picket fence winding into the edges of the canvas. A woman bent over with a young child, bent over a small garden. He had no idea what the people in the picture were doing, but you did. You were picking fresh strawberries with your mother. 
“That’s my house.” You said softly. “My childhood home.” You reached your hand up in front of Elvis, letting your finger graze over the garden scene. “This is my mama,” You continued. “We’re picking strawberries.” You paused for a moment. “My mother was a painter.” You said, turning to Elvis. “This is my favorite.” You stepped back with your hands on your hips, looking at the painting more analytically than you had before. “I remember her painting it when I was little. I would spend hours in her little studio in the back of that house watching her paint.” 
Elvis was quiet, his thumb and index finger cradling his face in thought as he observed the painting. “It’s like a memory captured in a painting…forever,” he said finally, still consumed in thought. 
“Every time I look at that painting, I think of my mom. She said that the viewer of the painting was supposed to see what my dad saw when he came home from work one day. I remember mom telling me about the idea on one of those days when I would lay on the floor in her studio.” You backed up and sat on the edge of your bed. 
“That’s so–special.” He looked at the painting for another long moment before turning to you. “Your mom loved you so much. I won’t get to meet her, but I can see in this,” he said, tilting his head as he referred back to the painting, “that you and your dad were the loves of her life.”
You smiled softly, feeling the familiar ache rising in your throat. You pushed it back down before responding. “She was wonderful. I connect with her through reading. She always had books. You’d almost never see her without a book in her handbag or with one perched on her chest in bed.” 
He leaned against your wall. “If you were to see my house, you’d see that we have similar interests.” He smiled gently. “I read all the time. About almost anything, really. That’s what got me to walk into the store this morning.”
You adjusted in bed to give him space to sit at the foot, patting the flat of your palm against the mattress for him to relax and take a seat. You watched him get comfortable, taking off his shoes and tossing them onto the floor before sitting facing you with his legs crossed. 
“What kind of books do you read?” You asked. 
He moved to lay on your bed, propping his head up on his elbow. “I read a little bit of everything–the classics, books on theology, numerology…Nancy Drew,” he said with an enthused smile. 
“I am sure that you don’t read Nancy Drew,” You said, moving to lay on the bed opposite Elvis, mirroring his position. 
“You hardly know me. For all you know, I could be reading nothing more than Dick and Jane.” You eyed him short of rolling your eyes. 
“Why are you at my house, Elvis?” You asked, surprised by the bluntness in your delivery. 
“What do you mean?” He asked, biting at his bottom lip absently. 
“You don’t know me, either–and it feels weird to call you Elvis to your face, not to mention that you are lying on my bed, in my room, in my house…”
He looked at you with amusement. “Well, I didn’t plan to invade your home when I walked into the store this morning.” You watched his free hand smooth over the comforter as he thought. “But it just so happened that I was charmed by you.” You brought your eyes up to his as he finished the sentence. 
“You are Elvis Presley. You say that to every woman that walks in and out of your life.” You said simply, before rolling on your back, staring up at the ceiling. “I’m not a naive airhead.” You eyed him and he returned his gaze evenly. 
“Entertaining the affections of any young lady who might want me is one thing. As a performer, it’s just part of the job.” He wasn’t entirely wrong–he was America’s heartthrob, and he had the entire country watching him, regardless of what he did and who he did it with. 
“But with you, there are no cameras. No news reporters. No shows. No concerts.” He walked his fingers across the blanket as he spoke. “I’m just a man. You’re just a woman.” You sat back up on your elbow. 
“What’s so special about me then?” You asked finally, your curiosity getting the best of you. 
“You knew who I was when we met, but you didn’t freak out or pass out. You treated me like anyone else. I know I can put on the charm when I need to, but I don’t feel like I have to with you.” He answered you honestly and frankly. “You didn’t even ask me about my career, my life or my money. Tells me you aren’t skin deep like so many are. You can never really know who’s really there for you.” 
You paused for a moment, just looking at him. “I don’t believe in idolism. At least I try not to.” You offered him a genuine smile. “Helps bring you down to my level a bit.” 
Your heart fluttered as his smile grew, his eyes leaving yours, his face flushing slightly. “Boy, you’re sassy, aren’t you?” He said before bringing his gaze back up to you. 
“I’m just me,” You answered simply.
“And that’s all I’ll ever ask for.” The moment was quiet. His free hand floated to your face, smoothing a few flyaways from your eyes, tucking them behind your ear. By some sort of magnetism beyond your control, you felt your body tilting towards him. His eyes traced the outline of your lips before traveling back upward to your eyes, his expression transfixed like you hadn’t seen, his eyes turned glassy. You watched him gently pull closer to you and you gave into the unfamiliar moment, closing your eyes as your lips brushed his for the first time. 
“Y/n! Mr. Presley–time to set the table!” Uncle Harold practically shouted from the living room, causing you to startle, hitting Elvis in the head with your own. 
“Ow!” You yelped, pulling your hand up to your head. 
“Are you okay?” He said, bring his hand to your forearm, more concerned for you than himself. 
“I literally just head butted you. Are you okay?” You asked with a soft chuckle, rubbing the spot on your head. 
“Darlin’, I’m hard headed. I’m fine.” 
“Elvis! Get out here!” Uncle Harold announced once again, this time in a warning tone. You raised your eyebrows at Elvis. 
“Coming!” You answered for him, stepping in front of Elvis and heading into the living room with him following behind you. “Sorry, a couple of books fell from my shelf. Hit me in the head,” you lied.
“You’ve got a thing with falling books and bookshelves today,” Evelyn said before popping a few grapes into her mouth as she walked across the living room into the kitchen, eyeing you with a grin. 
Elvis walked around the table patiently with you, helping to set down plates and silverware for four. “So where’s your aunt,” he asked quietly.
“She’s visiting her sister in Natchez,” You answered. “She’s gone until the end of the week.” Elvis nodded before walking to grab glasses to place on the table.

“I have to say, sir,” Elvis said between bites of food. “You have a beautiful home. It’s so cozy and inviting.” He was piling on the charm, making a point to look around the dining room and into the living room at the various decorations lining the walls and table tops. 
“Thank you,” Uncle Harold said quietly, scraping green peas onto his fork. 
“And the bookstore. Wow, just wow,” Elvis said before loading his own fork with a mouthful of food. 
“Thank you. It was my father’s store.” Uncle Harold continued, taking a sip of his sweet tea. “It opened officially in May of 1889. Lot’s of history there. It’s not very busy right now, but I’m hoping business picks up soon.” He wiped his mouth with his napkin. 
“Lots of history here in Memphis. Some treasures you’d never know about. I’m glad I walked in this morning.” Elvis answered.
“So tell me, Mr. Presley,” Uncle Harold began.
“Oh please. Elvis.” Elvis corrected politely. 
“Mr. Presley,” He continued. You eyed Elvis, raising an eyebrow slightly. 
“What brought you into my bookstore this morning, knowing good and well you’d be recognized?” He waited for an answer as he sipped on his beverage. 
“Well, it didn’t look very busy when I came in, and I’m a big reader. I was telling Y/n earlier. It’s one of my hobbies when I need time away from–you know–the noise.” Elvis answered carefully, unsure of what was coming next. 
“Mmmhmm. Don’t you have some gigantic mansion on highway 51…at the top of that big ole hill?” He asked somewhat speculatively. 
“Yessir. My family lives there with me. It sure is a lovely home. I’m grateful for it, but sometimes it’s nice to get out and see different things.” Uncle Harold nodded slowly. “Well, you are welcome back any time, just try not to turn my business into a spectacle.” 
“Never, sir. I’d never disrespect you or your business,” Elvis answered, placing his palm on his chest to convey that he was genuine. 
You finished your meal thankfully with no further interrogation. Uncle Harold was very protective, and the headlines running in the newspapers and gossip magazines only made his hackles stand up further. It wasn’t that he disliked Elvis; moreso, that he didn’t trust him. Celebrities always have an undertow about them–something that evades public speculation. That’s why idolism exists. It’s too easy to get caught up with putting together pieces and parts of a narrative that doesn’t end up being true. So, it was generally accepted by most adults that Elvis Presley was a scoundrel, out to steal as many womens’ virginities and moral compasses as possible. 
“Uncle Harold, you can go sit down. Elvis and I can clean up dinner,” You urged, hoping he wouldn’t argue. 
“Oh well it’s not that much, I can do it,” He continued, getting up from the dining room. 
“No, I want to. For letting us close the store earlier than usual.” You laid it on thick. 
“Well, okay then. Evelyn, please take the trash out. Don’t forget. Garbage truck comes tomorrow morning, bright and early.” He eyed his daughter sternly. 
“Yes, daddy,” she answered, rising from the table.

“I had a good time today,” Elvis admitted, his hands deep in the sink washing dishes from dinner. He refused to let you wash dishes and you bargained with him to dry them instead. “I can’t tell you the last time–” He paused. “Nevermind.”
“No, tell me. I want to know,” You said, leaning up against the counter as you listened. “Please.” You gave him your best puppy dog pout, your insides churning when his full lips spread back into that irresistible smile. 
“I just don’t meet new people often who aren’t connected somehow to my music or my fame,” He said, beginning on a new plate. “It’s refreshing.” He handed you the plate and you took it, continuing to dry. 
“Well, I think at this point, it’s almost impossible to meet any woman who doesn’t know who you are,” You answered honestly, putting up the plate in the cabinet above your head. He shrugged, agreeing with your statement. 
“I love what I do,” he said, turning to look at you as he scrubbed. “But most people, fans included, assume I’m some stupid looker with a good voice.” You smiled, taking the next plate from him. 
“Then who are you, Elvis Presley?” You asked, raising a flirtatious eyebrow. 
“I’m an artist.” He said without hesitation. “I’ve got a God given voice, and I’m gonna use it.” You observed him, finally looking at him for who he was behind the beauty and glamor. He finished the last plate, handing it to you to dry and put up before wiping his wet hands on his trousers. You placed the dish back in the cabinet as he turned around to lean against the counter and face you. “Colonel watches me so closely, I swear. I’m surprised we haven’t heard police cars whirlin’ by trying to find me,” He chuckled softly, raking his damp hand through his hair. 
“Well, I’d be amazed if they found their way here,” You responded.
“That’s the best part. Some freedom.” He paused for a moment. “I don’t know if you’ve seen Graceland or not–it’s a big house and all and yes, I have everything I’ll ever need there–but it was nice to get to be normal today, at least as close to normal as I’ll ever get.”

You walked Elvis out of the house quietly, without your uncle having to ask him to leave. You liked Elvis, but you weren’t counting on seeing him again past the lovely day that you shared. 
“You know, you aren’t at all who I thought you’d be like,” You admitted to him. 
“Who’d you expect, Cheeks? A sex crazed, egomaniac?” He asked the question lightheartedly, letting out a throaty chuckle. 
“Mm, maybe,” You answered with a bashful grin. 
“I am deeply hurt, Cheeks.” He smiled at you beautifully, throwing his hand to his chest, feigning upset. You chuckled softly before letting the conversation settle into a moment of expectant silence. 
“I’m glad I met you, Y/n.” He offered, beginning his goodbye. “I had a wonderful time today. You have a wonderful ability of bringing me back down to my roots. You and your family are a reminder of humble and prideful living.” You braced yourself to let him go and for you to exchange the pleasantries you were sure he had heard so many times before. “You make me crave normalcy–somethin’ I-,” He shook his head with an awkward grin. “Something I thought I’d never want again.” 
“I’m glad you had a good time, Elvis. You certainly are as charming as they say,” You offered, trying your best not to give into the melancholy. 
“I was raised right besides the whole “pelvis” thing, I guess,” He said, shaking his hips, eliciting a giggle from you. “That’s the sound of music to my ears.”
“What is?” You asked, still smiling. 
“Your voice. Your laugh. You are quite the woman, Y/n.” His compliment made you soar and hide within yourself at the same time. You weren’t used to flattery, especially not from one of the most famous rising stars in America. Who would be? 
“Thank you,” you answered modestly. 
“Can I ask you a question?” He asked, his tone lowering softly. His expression had changed to something that almost looked like nervousness. 
“Of course,” You asked, taken back. You weren’t sure what he was about to ask. 
“I-” I started, stroking his chin in thought. “I’d like to see you again.” His eyes shot straight through you, almost daring you to maintain eye contact. 
“You can always come by the bookstore,” You offered. He chuckled, taking your hand softly, bringing it up to his lips, delivering a singer kiss on your lips. “I’m counting on it.” 
Elvis ignited something within you; something that you never thought you’d feel. Of course you’d had your crushes and short lived romances, but they never led to anything more. “I will see you soon,” He said, leaning into you, “Cheeks.” He kissed you softly on the cheekbone, backing away slowly, letting the moment linger between you two. “When I kneel for my evening prayers,” He started, turning around to speak to you from the middle of the lawn, “I’ll be thinking of you.” He smiled genuinely. “Have a wonderful night, Y/n.” He looked at you once more, as if he would forget your face if he didn’t.
“Goodnight, Elvis.”

Cleaning out the fridge recipe: Borscht aka Cabbage & Beet Root Soup
boiled down chicken carcass
de-bone, save broth and meat
smaller head red cabbage, slice thin
two medium beets, shriveled, chopped
three medium limp carrots, treat like beets
part of a zucchini
handful of sprouting garlic
balsamic vinegar, splash
some dried oregano that was getting weak (but bay leaf best)
water to cover stuff in medium large pot
small handful salt
paprika
sour creme
Cook down until veg are soft. Get the handy kitchen gadget that purees and whirl it good so the kids can’t see the beet chucks, nor squash, nor carrots (it should look like a gritty puree soup with indistinguishable grit). Add more salt to taste if necessary. Add liberal amount of quality smoked paprika to your taste. Drizzle with that not-so-cheap-now sour creme that came from the grocer that is mainly liquid for some reason but not rotten. If you have semi solid sour creme, don’t be shy, use it (use what you have but not rotten foods/ dairy product). Past prime veg is ok but rotting goods are not safe edibles for people. Share the bad with your vermiculture pals / compost! Serve soup with slice of bread so the good juices can be sopped up. Soup improves in taste and texture for next couple of days so don’t worry about the large qty (ok to freeze but use safe freezer jars and leave head space for expansion and remember to thaw in fridge or at room temperature).

A Lot of Words about a Thing
This is a “I’m writing this out so next time someone asks I can just point them to this (or copy/paste) instead of having to type it again” thing.
I’ve been doing Hello Fresh for the last two or three months and I thought I’d talk about the ups and downs of it and if I’m going to keep doing it.  This is not an endorsement (which will be clear when you get to the overall middling scoring), but I will put a link at the bottom so we can both get a deal if you want to try it.

So anyway, I had been thinking about doing a meal kit for a long time but pulled the trigger on it back in... like Mid-January, I guess? 
the tl;dr of it all is that I like it and I’ll probably keep doing it for awhile, but it’s not for everyone, and is expensive for what it is, especially if you already know how to cook.
Before I started, I made myself sit down and write out a quick list of what I wanted to get out of trying a meal kit experience, so I’ll rate how successful or not each one of those things is.
First of all, I want to also say, I can already cook.  I’m a pretty good cook.  I can follow a recipe and improvise successfully when necessary usually.  One reason why a lot of people do a meal kit is because they need to learn how to cook and that definitely wasn’t me.
Also, they offer a variety of number and portions on meals to try.  I get three meals a week, with two portions a meal, which means I cook Hello Fresh for dinner one night, and usually the next night have the leftovers.  Friday night is usually “Yay You Made It To The Weekend, You Get To Order Takeout” night.  You can order for several more meals a week, and for up to four portions in each meal, if you want.
So on to the reasons why I decided to try HF, with a grading of how I feel about each one after trying.
Reason One: Try Something New
I was super excited at the beginning of the pandemic now working from home full time, because this was a great chance to really start trying some new recipes.  I had fallen into a pretty bad rut for awhile of some of the same frozen type meals or just making super easy things for dinner and sandwiches for lunch pre-pandemic.  Even though my commute was stupid easy I often felt too wiped at the end of the day to make like, real meals.  So when the pandemic hit and I was Home All The Time, for the first couple of months I was buying interesting ingredients (what I could get my hands on at the time) and really digging into making new and interesting things.  Even baking my own bread and bought some new kitchen gadgets like a pressure cooker to expand my repertoire. 
By like... the end of summer... well the good news was that I was still cooking and hadn’t fallen back to a packaged-food routine most of the time (though still some frozen pizzas or bags of pre-made Asian or Italian food you cook on the stovetop mostly for lunch) but also I had more or less found The Ten Things I Make (like Spaghetti, a great chicken and rice dish that is so good and makes about 6 meals worth of leftovers) and I was real tired of like, recipe hunting.  The most work I was then doing was finding new pressure cooker recipes and tbh almost all of what I was making was Chicken In Some Kind of Sauce Over Rice.  I was burned out.
So Hello Fresh... has been great for that.  I have only made the same thing a couple of times and those were only because i loved them so much the first time I wanted that thing again.  For the most part, I have tried just a ton of new things, including some ingredients I’ve never worked with before or really thought I wouldn’t like!  And I did!  I feel like I am often trying something I have never made before.
Reason 1.5: Variety
OK this is hand-in-hand with Something New but also slightly different.
Try Something New would be rated like a 4.5 out of 5 stars.... but some stars are taken away though, because a lot of their recipes are very similar.  For a protein, there’s like, chicken breasts, hamburger meat, pork chops, chicken sausage and pork sausage.  Occasionally steak.  Basically every meal will start with one of those things.... oh and I guess there’s like some fish choices, but I hate fish.  There’s also vegetarian options, which I have only occasionally gotten.  So within the variety, there’s a lot of similarities.
Also there are a lot of same ingredients in their recipes.  I have grated a lot of lemons and limes.  I have chopped up a lot of carrots, green onions, and potatoes (so many potatoes.)  I have consumed more sour cream than I ever have.  I have started looking for ways to add even a little more variety to the things that are often-repeats that they give you.  
But part of that is my fault -- I am mostly selecting items that I know I will like, or can modify to how I like.  There are a lot of veggie and fish-based choices I could pick up most weeks which I avoid. 
And almost everything I’ve ever made... I’d make again.  I save all the recipe cards so that someday when I don’t wanna do HF anymore, I will have all them all handy to make later.  The HF Subreddit also has a lot of resources like how to do their custom spice mixes, very handy.   There’s been maybe 3 things I’ve made which I’d say were Just Okay, but nothing I’d say that was bad.   And some of the ideas in this paragraph I talk about more, further down.
But also on the topic of “Variety” -- since every meal I make has two portions (occasionally I will stretch something to three) -- points are given back because I’m not “Making a huge pot of spaghetti that I eat for five meals in a row.”  So that’s good, even if it means more cooking overall.
So honestly, on Something New overall, I’ll give this like a 3.5 out of 5 stars, correcting up to 4 stars on a curve, since I strike entire categories of their offerings based on my own tastes.  They offer a pretty good variety of meals to select, and part of the problem here is my fault for hating All Seafood and not being thrilled with the vegetarian options (I also don’t feel like I’m getting my money’s worth without a protein) so there are a lot of meals re-using similar ingredients.   It slides back down to a 3.5 though when you factor in Reasons 3 & 4 below.
Reason Two: Kill Analysis Paralysis
A thing I found increasingly happening by the end of last year was analysis paralysis.  Especially as I started a new job where I’m much, much busier (but happier) in October.  I would find myself staring at the fact that I’d have to make the decision on What To Make For Dinner and dreading it more and more.  It wasn’t really the cooking I hated, but the deciding what to cook, which got me into the lack of variety rut.  More often than I’d like to admit I’d just make a box of Kraft Mac & Cheese or like... just... toast... for dinner because the decision-making part of my brain was tired... or out of spoons as the kids say these days.
This is maybe my favorite part of Hello Fresh overall.  Once every week or two I log onto HF, pick what I’m going to eat like... 5 or 6 weeks in the future, which I can do at a time when I have that decision-making energy, and forget about it.  Every Monday a box shows up on my doorstep, I see what nice things I picked out for myself several weeks ago, and the most I have to decide is which order I will make those things in.
So when it’s a “Make Dinner” day, I don’t have that “shit, I have to make a decision” feeling.  I already know because I pre-planned it back when I wasn’t at the end of a long workday.  It’s one of those small, dumb things that really really helps me mentally in an almost inexplicable way.  And I can feel better about myself because I didn’t eat something dumb for dinner.  And I still allow myself to make easy things for lunch, like a small frozen pizza, a sandwich and some chips, or hey, Kraft Dinner.  And sometimes I do make a big pot of Spaghetti or something that I love and will just have that for lunch every day for a week, and so I don’t have to feel like I’m always cooking.
And on Eat HF Leftovers For Dinner nights, that’s even better, because I have a tasty meal and it just had to get reheated in the microwave or stovetop.  Some meals are easy to half-prepare ahead of time on day one, and just do the last steps on leftover night the next night to have fresher dinner easily.
 Just 5 out of 5 stars here.  This is my favorite part.
Reason Three: Eat More Vegetables.
Uh, yeah, I’m terrible about eating veggies on my own.  The best I can do usually is buy a bag of mixed greens and try to have a side salad with dinner, or buy bags of frozen foods and hope they come with veggies I’d eat. 
So the good thing here, is that when HF sends me vegetables to make, if it’s a veggie I like, I’ll probably make it.
The big problem, though, is that there’s no substitutions.  And I’m still not gonna eat brussell sprouts or, broccoli, or mushrooms. I was a sport and tried making them (except the mushrooms) the first time I got recipes that used them as sides.  And nope... still cant.
But hey, I have done a lot better at eating more fresh green beans, and onions, and carrots, and peppers.  Though sometimes I just snack on the bell pepper instead of cooking it. Still, I call it a win.
I really, really wish I could trade out the side-dish vegetables I know I won’t eat for like, a small side salad, an apple, or hey, even just... carrots!  But nope, no substitutions. =\  I’d score this way better if we could do so.
Still, I’m doing better here, and overall, more vegetables are being eaten.  So, 3 out of 5 stars.
Reason Four: Waste Less Food
The amount of fruit and vegetables I’ve ordered and thrown away over the last year make me cringe.  I would order things with every intention of eating them and then just... not.  Oh yeah I need two lemons, an orange and two limes in case I make ____ recipe!  I need a new bag of baby carrots to snack on and make a side dish and cut into a salad! 
And then I maybe... maybe use half of that before it goes bad.
Probably less.  Because of the Analysis Paralysis and not trying new things.  You run into that problem where you don’t have the ingredients on hand to make a new thing so you can’t make a new thing... but then you buy them but forgot (crucial thing) so the thing still doesn’t get made.  Or you just... don’t plan when you’re gonna make the thing and by the time I’d be like “Oh yeah I should make something with those vegetables” they’d have already turned.
SO... I felt shitty throwing away so much produce, and loaves of bread, and other perishable food that got maybe half-eaten.  So much, for so long.  Yeah, I know I could do better with my meal planning, but it’s been one of those things I always vow to do, and then did not do that thing.
Doing HF has really made me re-evaluate what I buy as groceries, and I have cut way down on ordering unnecessary produce and perishables like bread.  Because I don’t really have to worry about dinner and am allowing myself to do easy lunches that don’t require real “cooking.”  So, overall I am definitely buying and tossing less food.
Also just as another quick note -- what also tends to get tossed out of my HF boxes is a “spicy ingredient”  But in some ways, this works in HF’s favor.  I don’t really like spicy foods.  A small amount of spice is OK but I’d rather just do without it in most things, sorry I’m that white girl.  Most “Spicy” HF meals get spicy by a spice blend, a packet of sriracha / hot sauce, or a jalapeno which they want you to cut up and include.  So whenever I see something that looks good but listed as “spicy”, I can check the ingredient list first and see what makes it spicy, If I think the thing still sounds good without the spicy part, I can order it.  So yeah, I’ll toss spicy ingredients, but that is 100% my choice and it makes things better because it gives me more variety to order those meals and still make it to my own taste.
Oh, and occasionally, the produce is just bad when you get it or not long after.  I haven’t had this problem often, mostly with ginger and garlic.  I do evaluate which meal has the most perishables when I get my box on Mondays and make those first.  Apparently you can call customer service if this happens for a small credit, but I just use pre-diced garlic or powdered ginger when this has happened to me.
So, this would be a 4.5 out of 5 except for... as discussed above... I end up tossing out HF vegetables on occasion I know I hate and won’t eat, and they won’t let me make substitutions. 
But also... cooking for myself... when I make a big batch of something that lasts 4 - 6 portions... more often than I’d like to admit, the last portion or two would never get eaten.  Sometimes I’d TELL myself I’d eat them in a week or so and freeze them only to throw it all away months later.
So let’s call this a 4 out of 5.  Overall, significantly less food waste with HF.
Reason Five: Save Time
I thought that doing HF would mean less prep-work and less time in the kitchen, especially with their easy-to-follow recipes and pre-measured ingredients.
So in that way, yes, time is saved, and it so again takes that mental load off in a lot of ways of not having to make all those pesky decisions.  The materials you’re working with and what you need to do are all Right There for you.  It’s really, nice.
As a side note, like I said I’m a good cook, and I haven’t had any problems following along anything I’ve made, but there were a few things I think are more of a moderate skill level and could be a little challenging for newcomers.  But then, I see people on the HF subreddit all the time saying they learned to cook with no skill and they find the recipes easy so... we’re good there.
However, Saving Time loses points for two big reasons:
First, I’m only making two portions of each meal.  Which, ok... this is my decision.  I could order four portions per meal.  But then... hey that’s taking big points away on the “variety” front. 
The Vegetable Chopping / prep work on a lot of the recipes often takes 10 - 20 minutes, depending on the number of fruits and veggies.  So yay for meeting Goal #3 (more veggies) even if it is balanced out by Goal #5.
And unfortunately, most meals end up taking up more dishes than I’d like to clean up (usually at least a pan and baking sheet, sometimes also a pot.  Plus knife, cutting board, tongs, stirring spoon, maybe a zester, etc.)  So no time is saved on cleanup, either.
Mostly where time is saved is having to pick out recipes and making sure you have/buy all the ingredients.  Not much is saved in the actual cooking.
I do, however, enjoy the time I spent cooking and the knowledge that I’m gonna make something good, so we’ll give it a bit back, there.
As a time saver, I’d give HF a 2.5 out of 5 stars.
Reason Six: Save Money
Y’all, Hello Fresh is expensive.  Honestly the #1 reason I re-evaluate whether I want to keep going with it every few weeks is the cost.  Even though I can afford it.
For basically six meals a week, I’m paying $63 for the food, plus $9 for the shipping.
Which means I’m paying $12 a meal.  For food I make myself.
Not cheap.  A luxury.
Where I don’t feel quite so bad about it is the fact that... for the most part, I am wasting a lot less food.  Except, as mentioned, when I can’t swap out vegetables I hate for something I’d actually eat.
So that makes it irk me even more when I am throwing out vegetables I really hate, because they’re expensive vegetables.
Also that price tag is motivation to make and eat every meal.
Overall, my grocery bills have gone down... honestly pretty significantly.  Because I’m not overbuying food!  Now, they haven’t gone down enough to even out the cost for Hello Fresh... I’m still probably spending about 50% more overall for each dinner now than I was before.
This isn’t a cost savings.  It’s an expense, but one I can afford.  And part of writing out this post is to remind myself to decide when the experience is no longer worth the expense.

Reason Seven: Eat Better
I would like to challenge myself to define “Better” because that’s all I wrote down when I made the list.
Healthier?  Eeeehhhhhh.... maybe?  But not much.
Hello Fresh does offer lighter choices, and sometimes I pick those because they look good and are filled with things I will eat!
But I’m just as likely to pick the most calor-ific things on the menu.
HF also adds a lot of Sour Cream to their recipes, and encourage you to salt and butter your food liberally.  I try to cut down on some of this where I think it’s too much.  But sometimes there’s not much to cut out and still have the meal you ordered.
But also I’m not eating any worse calorie-wise than I was before, probably.  And overall I’m eating a lot more “real food” instead of “packaged food” and fast food than I was.... especially pre-pandemic.  And again, I AM eating a lot more vegetables, so.... that’s... better?
If I define better as Tastier, yeah, I’m doing pretty good in that regard, haha. 
So Better as in healthier: 2.5 of 5 stars.
Better as in tastier: 4 out of 5 stars.
Overall Scoring & Tips
Okay, overall that comes out to a 3.18 out of 5, which I’d round up to a 3.5... which is a pretty good score for how I feel about HF overall.  My current plan is to keep doing it until I go back to working in the office again, and re-evaluate.  For now, it works for me.

If you decide to go for it, here’s a few tips:
Every week or two, go in and choose your meals, don’t let HF choose for you unless you really don’t care.
Read the ingredient list and make sure there’s not too much stuff you don’t like coming in a meal.
The extras are pretty expensive and not really worth it.
Plan on each meal taking about 45 minutes to cook from start to finish including chopping vegetables.  Another 10 - 20 with cleanup depending if you have to handwash dishes or not.
Look for ways to make the meal healthier, especially if it encourages you to add more butter and salt near the end.  You probably do NOT need to do so.
Buy a decent pepper.  I love McCormick’s Peppercorn Medley pepper grinder.  Also sea salt grinder is my personal salt preference.
Add some of your own seasonings.  I buy a jar of pre-diced garlic (yes yes I know the criticisms of the stuff but it’s easy) and throw in a half tablespoon or so of that into a lot of recipes.  Also there are a lot of potatoes that they want you to just cook with olive oil, salt and pepper.  Throw some garlic or onion salt on them, or some Lawry’s Seasoning Salt or steak salt of your choice for some variety.
Your basic 2 quart pot, 8 - 12″ frying pan and cookie sheet, plus a cutting board, decent veggie knife, and typical kitchen utensil set are all you need.  However, a decent meat thermometer and a zester that collects the zest as you go are both highly recommended. 
A sieve and very small rice cooker have also been a lifesaver for making good rice that doesn’t get overcooked.

On Friday I convinced my boss that we should go to the Asian market not far from our office.
It’s probably best that I went with him because it prevented me from obsessively shopping for all the neat little kitchen gadgets, BUT! I did pick up a bunch of really cool stuff: some Korean pastries (red bean paste walnut bites, cream-filled puff pastry, and two others we haven’t tried yet).
I bought a bunch of other stuff to try, among them this kind of Japanese curry boullion that I saw on those mindfulness videos on YouTube.
So basically you grill up your veggies and meat (I used onion, canned potatoes, cauliflower, carrots and fake pork), then add in water (or veggie broth — I did half and half for flavor) and simmer. Then you drop in the bullion, which is in the form of these blocks.
The bullion breaks down and thickens into a delicious brown curry gravy. It said “hot”, but it really wasn’t terribly spicy. I thawed out some of the white rice I made a few weeks ago and fried it up with some beaten eggs and seasoning, then served everything together.
It was really wonderful. Marc liked it so much he snuck an extra piece of bread to clean up the gravy left over in the pot, haha. Half the package made four whole servings — two for tonight and two we were able to freeze.
We also had a bottle of red wine, so I am feeling very happy and cozy and relaxed.
Tidied up after dinner and then started making some bread, which should yield two loaves. Later on we’ll finish the wine and have some apple crisp and ice cream, probably.
I will be a little fatter Monday but I don’t care. I am satisfied and happy <3
