In Super Mario Galaxy, Bowser uses his own version of Mario's Spin move during some of his battles. Mario can actually counter Bowser's Spin by doing a Spin of his own, which will cause Bowser to bounce off. This is not mentioned anywhere in the game.

In Super Mario Galaxy, Polari will not accept Mario feeding him Star Bits until Mario completes his tutorial on Star Bit collecting.
First image: when Mario first arrives on the Comet Observatory in the beginning of the game, shooting Star Bits at Polari will make them bounce off, without him eating them.
Second image: other Lumas on the Comet Observatory will eat the Star Bits.
Third image: after obtaining a Power Star in the Good Egg Galaxy, Polari gives Mario a tutorial on how to collect and shoot Star Bits, whereby he asks Mario to feed him some of them.
Fourth image: only after the tutorial does Polari accept being fed Star Bits.

I genuinely do not understand why they do it, it doesn't benefit Nintendo to make it so scalpers can make bank off their products
Because FOMO is a potent tool to get people to buy something they were on the fence about. They throttle the supply at retail to make the game/console/product build up a reputation as this hot hard-to-find new thing while still promoting it heavily. That way, they can gradually increase the rate of production so that when people see one or two copies on a store shelf, they pick it up because they have no idea if they’ll see it again any time soon. Once it’s like 5-8 months after release and the initial hype has gone down, they flood the market (read: release it at normal quantities). We literally went through this process over the summer with Ring Fit Adventure, with the spring lockdown causing it to sell out and giving them a fresh opportunity to pull this grift even though the game came out last October or so. It also has the side effect of pushing frustrated buyers towards digital copies (Animal Crossing was a big offender, as was Fire Emblem: Awakening back in the day). I assume that in making the digital release for SM3DAS limited, they’re trying to further drum up FOMO by removing the “I can just get it digitally if I don’t find a physical copy by X date” factor. My hope is that the “limited edition” aspect is just the physical release and the bundle with the music player mode, and that they’ll put the three games up individually on the eShop in like April, but I suppose we’ll see.

In Super Mario Galaxy, when Mario is holding a Gold Shell, going into first-person mode creates a flash of light on the screen. This is due to the light being emitted from the Gold Shell briefly blinding Mario.

In Super Mario Sunshine, the notoriously difficult “Watermelon Festival” mission of Gelato Beach derives its challenge from the Red Cataquacks that roam the beach, which destroy the watermelon if they touch it. Red Cataquacks cannot be defeated by Mario’s FLUDD or jumps, only temporarily stunned. The regular way to defeat the Red Cataquacks is to either lure them to a Dune Bud and activate it when they are above it, or to use Yoshi (who is not available in this specific mission).
However, there is an easier way to defeat the Red Cataquacks. Simply lure them to the edge of the water and perform short jumps while hovering. Normally, they do not follow Mario into water, however, this behavior is overwritten when Mario is in a hovering state. As soon as they touch the water at a certain depth, they die permanently. This can be used to relatively quickly clear out the level of all enemies, trivializing the challenge of getting the watermelon to the beach hut.
