I keep forgetting you are also vegetarian!! What sorts of things do you make (if you dont mind talking about it)
I need ideas since I can't really eat most of what my family makes lol
i like to cook from scratch so i don't know how helpful I'll be but I'll lay out some of my favorites
i eat a lot of pasta tbh. fettuccine alfredo, meatless spaghetti (or if i can find the tofu meatballs, that), pasta primavera. I'm trying some mac and cheese with gochujang in it, I'll let you all know how that is.
easy as hell feta tomato pappardelle
not to be cliche and say salad but the nashville hot pickle and spinach dijon make me (a salad hater) like salad. they sell these at walmart or raley's.
i make a vegetarian noodle soup with vegetable broth sometimes. depending on where you are, there's an amy's brand one that's canned. zuppa toscana is a fun one to make if you have veggie italian sausage (i wouldn't put white wine in it. i rarely put wine in anything.)
also korean and indian food is usually vegetarian by default. japchae is really good. it's very vegetable-heavy. i make a cold soondubu (it's usually hot but this is a very good cold for hot days version). this is kong-guksu, which is a peanut sauce ramen dish (better than it sounds).
my favorite indian dishes are palak paneer, tikka masala (i make it with cauliflower or tofu depending), chana masala, basmati rice, and naan.
falafel is vegetarian, and you can make yellow jasmine rice vegetarian easily by making it with vegetable broth instead of chicken broth. and of course, there's hummus and baba ganoush
if you like mushrooms, they're a good substitute for steak on philly cheesteak and this recipe for vegan po' boys is phenomenal.
i make black bean burgers from time to time (i usually buy them bc I'm lazy but they're fun to make). also, black bean and corn tamales are very good. quesadillas are easy too. or cheese enchiladas. they sell vegetarian refried beans too. if not, pre-boiled (or canned) whole pinto beans + vegetable shortening.
we have decent vegetarian sections at the stores i go to. i find safeway and sprouts (I'm not sure if this is a national chain or not) have the best options. i wish i lived in la or sf where all the vegans are.
when in doubt, you just buy nacho fix ins. not healthy but fun and everything that needs to be hot goes in the microwave.

National Noodle Day
Spaghetti, ramen, ziti, egg noodles…most of the best foods are noodles. Try a new kind today, or go out and treat yourself to one of the world’s favorite dishes.
The steam rising from a bowl of noodle soup floats along and dissipates almost like a thing of magic, with rich aromas and the promise of a deliciously warmed belly. In cultures all over the world, noodles have served as a foundation of comfort food, and National Noodle Day celebrates this long history and the place they play in everyone’s life today.
History of National Noodle Day
It is estimated that the origin of noodles dates back as far as two thousand years, or possibly even further. The first mention of noodles in historical records is in a book from the Eastern Han period that dates from between 25 and 220 BC. This unleavened dough has been prepared in many ways, throughout many cultures, using many different ingredients. But one thing remains the same–noodles are almost always delicious!
Noodles–inexpensive, simple, and rather filling–has been a mainstay of the working class for many years. The instant cup of noodles heated quickly in the microwave during a short lunch period. The mainstay of the poor and college-bound, pre-packaged Ramen noodles are often the foundation of a person’s first culinary ventures, as they try to turn the only meal they can afford into something akin to food.
But noodles aren’t only cheap and filling! Now, consider the rich and flavorful bowl of mom’s chicken noodle soup, full of the rich flavors of chicken and carrots, and floating among them are the obligatory egg noodles, which somehow are just the thing to tie this delicious bowl of nutrition together.
For anyone who was born into Italian family, chances are they’ve experienced every kind of noodle the mind can imagine and a few to boot! Rigatoni noodles, spaghetti noodles served with a rich red sauce exploding with flavor, Asian Rice Noodles, or even Fettuccine noodles coated in a thick heavy Alfredo sauce interspersed with bits of chicken.
Noodles have been with mankind in nearly every culture out of history, and National Noodle Day reminds us that this basic and staple food is still the best way to fill a hungry belly at the end of the day.
How to Celebrate National Noodle Day
National Noodle Day can be loads of fun! Making noodles, eating noodles, and enjoying noodles with friends. Try these ideas for spending National Noodle Day:
Go Out for Noodles
Whether at a fast food joint or a sit-down restaurant, noodles are fairly easy to come by in a variety of restaurants.
Noodles and Company, in the United States, is a fast-casual dining place that focuses each of its dishes all around the noodle. Their noodles are all made by hand, and their menu ranges from standards like Macaroni & Cheese and Spaghetti & Meatballs to more unique offerings such as Alfredo MontAmore with Parmesan Crusted Chicken or Grilled Orange Chicken Lo Mein. They also offer gluten-free and vegetarian options for those with certain dietary needs.
It’s a noodle lover’s dream come true!
Get Clever with Ramen Noodles
Those little rectangular packets of dried noodles with a smaller pack of flavorings inside can be used for more than just making some soup! As it turns out, they’re extremely useful to have around the kitchen for a variety of needs. Try out these ways to use those ramen noodles:
Make “Breadcrumbs”. The hard noodles can be crushed up into tiny granules (with a bit of the seasoning packet included). These work well as a substitute for recipes that call for breadcrumbs, such as schnitzel or meatballs.
Use as a Dessert Topping. This might be surprising but those crispy noodles, when cooked with cinnamon and sugar and then fried, offer a delightful chopped topping that can replace nuts on ice cream sundaes or other desserts.
Make Burger Buns. The great thing about ramen noodles is that, once cooked, they can be formed into almost any shape desired. Some people like to add a bit of egg, salt and herbs, then shape them into buns and fry them. These can be used for hamburgers or veggie burgers.
Add Zest to Salads. Take that boring salad to the next level by adding the crunch of pizzaz of ramen noodles. Simply crush the dry noodles and toss them into a coleslaw and top with an Asian dressing. Delicious!

February 7 is National Fettuccine Alfredo Day.
You don’t get the status as one of the most popular pasta dishes created without good reason. Fettuccine Alfredo is an Italian (obviously) pasta dish consisting of fresh fettuccine tossed with butter and Parmesan cheese. It’s simple yet delicious. It’s so tasty that it deserves a day all to itself. Whether you are dining out or doing a spot of home cooking, make sure that Fettuccine Alfredo is on the menu on February 7.
History of National Fettuccine Alfredo Day
The beginnings of this dish can be traced back as far as the 15th century, where there are records of Italian cook Martino da Como cooking pasta with butter and cheese which was known as “macaroni romaneschi” or Roman pasta.
The true inventor of fettuccine alfredo though is Alfredo Di Lelio. The Italian restaurateur was trying to entice his wife, Ines, to eat after giving birth to their first child Armando in 1908. He created a recipe that included a blend of noodles, cheese, and butter, and in turn, created a delicious creamy texture.
Fettuccine Alfredo became a go-to meal for his wife and because the dish turned out so good, Di Lelio added it to the menu in his mother’s restaurant, Piazza Rosa. The dish became a massive hit and Piazza Rosa became known as the birthplace of Fettuccine Alfredo. In 1914, Alfredo Di Lelio opened up his own restaurant in Rome called “Alfredo” and later opened up another restaurant with his son in 1950. In 1977, he opened up a version of the restaurant in New York City, where it became a popular hit.
The dish first made its way to America in the 1920s. American travelers were returning home and reporting on it to such an extent that the dish and Alfredo’s restaurant featured in multiple magazines and guidebooks. The dish’s popularity has only grown since, with chains such as Olive Garden popularizing their own version. By 2005 the dish was so popular that it was given its own holiday and the first National Fettuccine Alfredo Day was celebrated.

Di Lelio and his son Armando opened up a restaurant called II Vero Alfredo, which means “the true Alfredo.” The restaurant is now managed by Alfredo’s grandchildren.

Di Lelio sold the restaurant to a new owner, however, it’s originality remained.
1920
Fettuccine Alfredo hits the U.S.
Famous American actors Douglas Fairbanks and his wife Mary Pickford tried the dish for the first time while visiting Alfredo Di Lelio’s restaurant. They loved it so much they asked for the recipe to take back with them to the United States where it became extremely popular.
