𝗦𝗽𝗮𝗴𝗵𝗲𝘁𝘁𝗶 𝗠𝗶𝗻𝗲𝘀𝘁𝗿𝗼𝗻𝗲
Minestrone is a thick Italian soup , and the ultimate way of using up any leftover vegetables, Pasta and even meats. Minestrone Soup can be vegetarian or not and there is no set recipe for Minestrone soup so you can be a bit experimental with it! I added a photo of a recipe for the Minestrone soup as well as a recipe for the flatbread. I did this yesterday at @easycooklouth and it was something I'd never tried to make before but I love experimenting with flexible recipes. I've looked online and there are various ways of making this , for example, adding tinned tomatoes or cannellini beans.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 30g pasta / Spaghetti or similar
• 1 Carrot
• 1 glove of garlic
• 1 potato
• 2 sticks of celery
• 1 Brown Onion
• 50 ml of tomato passata
• 1/4 Cabbage
• I added half a tin of Tomato soup
•600 ml of veg Stock
• Black Pepper
• Glug of Olive Oil
• Optional - grated cheese
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨
Step 1 - chop up all of the veg into rough small size chunks.
Step 2 - peel the potato and dice.
Step 3 - put a splash of olive oil into a large saucepan and add the onions, garlic and Carrots for 2 mins.
Step 4 - add the rest of the veg - Carrots , Potatoes , Celery (whatever veg you want) to the pan cover and continue cooking on a low / medium heat for a further 5 to 10 mins.
Step 5 - next you need to add your Passata , chopped tomatoes and stock. Mix together , cover and cook for a further 30 on a low heat.
Step 6 - at this stage you need to break up your spaghetti into small pieces.
Step 7 - after 30 mins , check that your veg is slightly soft and add your Pasta to the pan. Cook for another 5 - 10 mins or until the pasta is soft.
Step 8 - serve to your preference. I added grated cheese and ate with the flatbread which was yum!
