Vanilla and Whisky Foie Gras Terrine

After making Mincemeat Foie Gras Terrine for Christmas, this beautifully scented Vanilla and Whisky Foie Gras Terrine, is a most delicious and festive way to begin a New Year's Luncheon! Happy New Year 2024, friends!
Ingredients (serves 6 to 8):
half a plump vanilla bean
500 grams/1.10 pound whole raw Grade A duck foie gras at room temperature, cleaned and deveined
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
6 tablespoons good quality peated Single Malt Whisky (like Islay Island’s Bowmore)
With a sharp knife, scrape the vanilla seeds off the bean. Set aside.
Separate foie gras lobes and place them in a shallow dish. Season with vanilla seeds, fleur de sel and black pepper on all sides, gently rubbing them in.
Pour peated Whisky over the foie gras and gently rub onto the lobes. Place dish in the refrigerator, to marinate and infuse overnight.
The next day, preheat oven to 100°C/210°F. Place one of the foie gras lobe, plump-side down into a 600-millilitre/20-fluid-ounce terrine dish, pressing gently to fit. Drizzle with a little of the remaining Whisky marinade. Place remaining foie gras lobe on top, pressing gently and rubbing the edges to seal. Close with the lid and place in the middle of a large baking dish. Fill baking dish to three-quarters with warm water, to make a bain-marie.
Place baking dish in the middle of the oven, and cook in the bain-marie, 1 hour, at 100°C/210°F.
Once cooked remove bain-marie from the oven, and let cool, half an hour. With a spoon, scoop out excess fat at the top of the terrine, leaving enough to make a thin yellow layer when it cools down and congeal. Cover with the lid once more, and place foie gras terrine in the refrigerator, to chill and infuse, overnight to four days.
Serve Vanilla and Whisky Foie Gras Terrine, cut in slices, with slices of toasted bread, smoked duck slices, and a slightly sweet, well-chilled white wine, like a moelleux Pacherenc du Vic Bihl.

Mushrooms in Cream Sauce...
...or Pilze in Sahnesoße.
This is for @killerblackberrypie, who went looking for the version on our "European Cusines" site and found the site gone.
@dduane had taken it down for maintenance, a new theme and to take some new photos, but while the site was down it web-provider went belly-up. These things happen.
"European Cuisines" Will Return - just not quite yet.
Our recipe was, ironically, one of the recipes slated for new pics, so while this text is from the site's offline backup (with a couple of tweaks from me, because why not?) photos are sourced from the web.
There are many, many other recipes online; they're mostly in German, but Google Translate handles Rezeptedeutch well enough. I've linked to a couple, which is only fair since I'm using their pix.
You'll also see the French word "champignons" in German recipes as often as German "Pilze"; I don't know whether this indicates a French origin for the recipe, or refers to a specific mushroom, or makes the dish sound more classy.

Pilze in Sahnesoße from European Cuisines.
Contrary to popular belief, Germany is not a vegetable-free zone.
In fact, unless you find yourself buried in some tiny backwater in the Black Forest or someplace similar, Germany is much kinder to both vegetable-lover and vegetarian than a lot of other places. It will be rare to find a menu that doesn't have at least a few vegetarian or at least mostly-vegetable options on it, often far more creative than you might expect.
But leaving aside for the moment the issue of vegetarianism per se, Germans really do like more vegetables than potatoes and cabbage, especially seasonal ones in their prime. Asparagus season, for instance, has its own name: Spargelzeit - "asparagus time".
And mushrooms (all right, not as true veggies, but at least as fungi) turn up as stars in many entreés, especially in dishes meant to be served in the autumn, "Pilzsaison", mushroom season, when the good little creatures are coming up all over in the woods and the supermarkets.
This recipe calls for the mushrooms to be sautéed with onions in bacon fat (the bacon is added later). The pan is then deglazed with white wine, and various spices are added, one of them being paprika, which instantly suggests that this recipe probably sneaked over the border from Austro-Hungary, possibly via the Czech Republic.
Finally the cream and bacon go in.
The result is substantial, surprisingly elegant, and yummy.
This is definitely a recipe for a high-end Hobbit menu: an entrée for anyone who doesn't want their mushrooms upstaged by overly large amounts of meat.
The bacon-fat and bacon CAN be left out completely, making the dish meat-free. Use more butter along with more mushrooms and a red pepper diced small, and add 1/4 teaspoon smoked paprika.

INGREDIENTS
NB, we work in metric so that's "correct"; Imperial is converted and "approximate", though it won't make much difference. Just don't combine them or your mushrooms might crash into Mars...
1 kg / 2 lb fresh mushrooms, domesticated or a mixture of wild types to taste
125g / 1/4 pound bacon, diced
60gr 1/4 cup butter or margarine
2 large onions, diced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
60ml / 1/4 cup (or more if needed to deglaze) white wine, preferably a medium or medium-dry one
A pinch of nutmeg
A pinch of mace
250ml / 1 cup heavy cream
The juice of half a medium-sized lemon, strained
2 sprigs of fresh parsley
METHOD
Clean the mushrooms with a soft brush or dry cloth. (Never wash mushrooms.) If they're big, cut them in half.
Fry the bacon in a wok or large pan until lightly browned. Remove the bacon from the pan and set it aside.
Add the butter to the pan drippings. Add the onions; sauté until lightly browned.
Add the mushrooms; cook them until they're tender, stirring often.
When they're tender, raise the heat slightly and stir in the wine, salt, pepper, paprika, nutmeg, and mace. Cover the pan and cook over low heat for 15 minutes.
Remove from the heat. Add the cooked bacon, cream and lemon juice. Reheat until just warm. Do NOT let this mixture boil!!!
Garnish with parsley and serve with noodles, dumplings, mashed potatoes, whole potatoes... And some crusty bread to chase the last of the sauce.

Our original photo used Spätzle, as in the first pic. Ribbon tagliatelle works just fine as well, while here is Saure Pilz-Sahnesoße served alongside Bohemian Dumplings, a long bread dumpling boiled in water or stock then cut into thick slices.

As far as we've been able to make out, the main difference between mushrooms in cream sauce as a main dish, and creamy mushroom sauce for use with something else, is the proportion of mushrooms to everything else, and often the size of pieces into which they're cut. Really small bits are one more ingredient, large generous chunks are much more front and centre.
Ours is definitely a main course, and though we haven't made it for a while, the memory of that last time still makes my Mind Palate go...

there's genuinely so much love in sharing food, like i'm so serious. imagine the foods you share with jason throughout your relationship. a bag of pretzels when stuck in standstill traffic, a milkshake in the booth of a diner followed by the sweetest whipped cream frosted kiss, a bag of fries in the middle of the night when nothings open but fast food places and you've both got the munchies. when you go out to restaurants you always share appetizers and taste eachothers entrées. (he'll go 50/50 on it if you ask, honestly he'd give you the whole plate if you really wanted it.) sharing a bucket of popcorn at the movies, and a stick of cotton candy at a carnival. it seems a little trivial right? sharing food. it does, but it's really not if you think about it. sacrificing some of your sustenance so the other can get a little taste, maybe even more than that and regardless of whether or not you know they like it? there's a potential risk factor, waste. a faste of food, time, money, etc. no one wants to risk wasting any of those things, that's why people say 'sharing is caring' because it doesn't really come natural to humans right? it goes against the grain of self preservation in a way. but sharing with you is more natural than anything jasons done in his entire life, he thinks. he'll share food with you, a bed with you, a home with you, and if you'd let him...even a life.
ro my dear i am cradling you in my arms while we share a plate of strawberries. i am cutting the little leaves off with a knife and pressing the berries into your waiting fingers. this is so good!!!!
just, thinking about jason coming from a background where getting his next meal was a concern. where food was precious and scarce and didn’t always taste good but he ate it anyway. now he’s older and he chooses to share his food with you, a precious resource that he sometimes still has trouble believing isn’t scarce anymore. he never wants you to know hunger the way he’s known it. so a handful of candy here, half a bowl of pasta there, it all adds up. makes him feel good to know that you’re eating well, that he’s helping you eat well. he likes knowing what you like because it’s more information to hoard away about you.
jason cooking for you. sharing the recipes he got from alfred or picked up on his travels. sharing pieces of his past with you in each bite. love and effort and time gone into everything he makes. getting you to teach him new recipes for foods you like, adding bits of you to the story of his life as told by his hands and the ingredients around him. jason sharing and making the most basic elements of life with you because he wants to build a life with you.

Captain Price and Dr. Green’s house
John’s proud beaming face was proof enough to his wife that she had been right about persuading him to invite the ‘kids’ to dinner. Also, the bigger dinner table had been a success, allowing them all to be comfortably seated, and the numerous dishes to be displayed on it.
Heather had roasted a couple of big chickens, made vegetable sides, mashed potatoes, gravy, Yorkshire puddings… and had thought it wouldn’t be enough, given the unholy appetite of the four men present. Johnny had an endless pit in the place where his stomach should be, Kyle was no better, her husband was another bottomless hole when it came to food, and even Simon, given the opportunity, ate like there was no tomorrow.
Thankfully, Kyle brought apple crumble and ice-cream for the dessert, Gabi brought tasty, delicious rice with beans as per her home country recipe, and Christine not only brought a Spanish charcuterie board, but also made a lasagna. Johnny and Simon appeared with several wine bottles, which were as welcomed as the food brought by the others.
And given the rate at which they were eating, there would be no leftovers.
‘‘I can’t believe you’d date a helicopter pilot after almost falling out of one’’ Johnny laughed at Kyle, who didn’t look offended in the slightest as he kept stuffing his mouth full of food with a wide smile.
‘‘Diego is not Nikolai. He doesn’t fly like a madman at least’’
‘‘Who’s Nikolai?’’ Christine and Gabi asked almost at the same time, with genuine curiosity, and John started an intrincate explanation about who the Russian fixer was, that they went way back and even Heather knew him, and told a flowery tale about the time when Gaz almost fell off the helicopter during Kate Laswell’s rescue…
‘‘Wait, wait, wait’’ Christine interrupted, her blue eyes wide and a surprised look on her face. ‘‘What do you mean, ‘rescue’? When did that happen?’’
‘‘November last year’’ Kyle clarified, stealing the last Yorkshire pudding from Johnny’s plate before he noticed.
‘‘Ye bloody asshole…!’’ Johnny complained, trying to steal it back, but Kyle had already taken a bit out of it. ‘‘Ah’ll get back at ye for that!’’
‘‘Johnny, language!’’ Gabi laughed, slapping lightly his arm.
The food by then was mostly gone. After hosting the boys several times, Heather had learned soon that instead of  serving entrées, mains and dessert, it was better to just place everything on the table and sit back to enjoy the spectacle. Some were still stuffing themselves with the remains of the chickens, while others were already enjoying the dessert.
Everyone looked full and content, which made her heart happy, and she smiled at her husband. John smiled back at her, and his hand found hers under the table, brushing his calloused thumb on her palm.
‘‘You look happy, sweetheart’’
‘‘I am’’ Heather whispered back, still smiling. ‘‘I like having them here. Can we do this more often?’’
‘‘Not weekly’’ John rushed to say, and she laughed.
‘‘No, no… but a couple times a month at least’’
John grunted non-committally, squeezing her hand before releasing it when he saw Christine standing up.
‘‘If you excuse me just for a minute, I have to make a call’’
‘‘But what about the rest of your ice-cream!’’ Johnny followed her with his eyes, but she ignored him, already scrolling in her mobile phone while she stepped outside, followed by Simon’s gaze.
‘‘Well, thank God’’ John sighed, side-eyeing Kyle and Johnny when they stole Christine’s remaining ice-cream. ‘‘I hope that means Kate will stop asking me to make her take her calls’’
‘‘She’s stubborn’’ Heather smiled, patting her husband’s knee, and he looked at her, amused.
‘‘Which one of them?’’
Heather laughed, and turned her head to look at Simon, who was just listening to the banter around him, as always. He had finished eating a while ago, but had not pulled down his balaclava yet. Wether that was because he forgot, or because he was comfortable in the current company, Heather didn’t know, but she relished in the opportunity to see as little as she could of her friend, scars that made her heart ache and all.
He noticed she was looking at him and his eyes turned to her, in a silent question, and Heather just shrugged and smiled.
‘‘I’m happy to have all of you here’’
Simon simply nodded, his arms crossed over the table and his eyes returned to the arch that led to the hallway, where Christine had disappeared. Heather smiled again and tried to exchange a knowing look with her husband, but John was emptying his glass of red wine.
Christine stopped in the hall, still able to listen to the sounds coming from the dining room next to the kitchen, but far enough to not disturb them with her conversation, already dialing the number.
‘‘Took you long enough’’ Kate Laswell’s voice was a bit dry when she answered after making her wait for almost twenty seconds, but Christine went for the throat.
‘‘What the fuck is this shit about you needing rescue back in November?’’
‘‘Oh’’
‘‘Oh? What the fuck, ‘oh’? Start explaining why and how you were kidnapped and I didn’t know a thing about it’’
‘‘You were… unwell back in November, honey’’ Kate’s voice was gentler now, and Christine gritted her teeth.
‘‘I could walk’’
‘‘Barely’’
‘‘That’s low’’ Christine snarled, looking in the direction of the dining room when she could hear louder laughter, from Kyle, Johnny and Gabi. ‘‘You can’t expect me to…’’
‘‘I can. You were hanging on to your sanity by a thread back then’’ Kate sighed lightly before continuing, soothingly. ‘‘I didn’t have time for anything, Christine, much less for calling for help. I barely had time to radio John and Gaz.’’
‘‘You’re fucking lucky’’
‘‘I know’’
‘‘I would have gone’’
‘‘I know… My wife says thanks for the almond cake recipe, by the way’’
Christine grunted something under her breath, relieved to hear Kate’s low laugh and deciding to ignore her obvious attempt at changing the subject.
‘‘It was nothing’’
‘‘Can we talk when I’m back? I prefer talking to you face to face’’
‘‘… sure. When are you coming back?’’
‘‘Soon. Gotta go, my wife is threatening me with a wooden spoon through the window, I’m not supposed to answer calls on my work phone when I’m off’’
‘‘Serves you right’’ Christine mumbled again, and Kate laughed. ‘‘See you soon’’
‘‘See you soon’’
She sighed and returned her phone to her pocket, and turned around to go back to the dining room. But she found herself face to chest with Simon, who was standing a couple of steps away from her, in silence.
‘‘Joder! (Fuck!)’’ Christine gasped, but then she smiled and laughed, visibly relieved. ‘‘Sorry, did I take too long?’’
‘‘No’’ Simon shook his head, hands inside the pockets of his hoodie as usual, but his balaclava was still hooked over his nose. ‘‘Gabi is recruiting Johnny and Kyle into helping do the dishes’’
‘‘Oh yeah, her and I talked about it before coming’’ She nodded, taking a peek at the dining room arch door, and then at him again when he didn’t move an inch. His eyes were focused on her hair. ‘‘What?’’
‘‘I’ve never seen you with your hair down’’ He murmured, and she couldn’t help but blush, thankful for the dimness of the hallway. It was true that she had decided to wear her hair down for once, instead of in her usual ponytail, braid or bun. And sitting next to him at the dining table, she had noticed him looking at her quite often during dinner.
‘‘Oh, and what’s the veredict?’’ Christine giggled softly, trying to make a joke, but her smile faltered when he leaned in slightly, bringing his face closer to her hair. She even stood on her tiptoes discreetely, feeling stupid, but strangely excited.
Simon was feeling conflicted, once that he initiated the movement before he was even aware of what he was doing. Now, with his nose mere inches away from the crown of her head, so close that he could smell her shampoo – something with flowers, he guessed – he fought himself to keep his hands inside his pockets. They were in Price’s hallway after all.
Being away for almost a week had been torture, and now, having her this close…
‘‘I like it’’ He rumbled, his subconscious feeling her shudder with the sound of his voice. ‘‘I like your hair’’
‘‘Now you’ll say it makes me beautiful to wear it down…’’ Christine teased, trying desperately to hide the way her body was trembling, specially when he finally buried his nose in her hair.
‘‘You’re always beautiful’’
A loud crash sounded in the kitchen, and then a chorus of laughter. They stayed like that for a couple of seconds more, without moving, and finally, she stepped back, he pulled down his balaclava, and side by side went to the kitchen to see what the other three were doing with the dishes instead of washing them.
Half hidden by the dinning room hallway, Heather and John kept their silence until the kitchen’s door closed, and then she smiled sweetly at her husband.
‘‘Oh, honey’’
‘‘That wasn’t Ghost over there’’ John looked half glad and half concerned, with one arm wrapped around his wife’s waist, feeling her excitement. ‘‘That was Simon’’
‘‘I know’’ Heather could barely contain her happiness. ‘‘Oh, honey, I’m so glad’’
‘‘So am I, sweetheart, but…’’ John hesitated before asking, knowing the answer beforehand. ‘‘Don’t think about it as their friend. What’s your professional opinion?’’
‘‘I can’t speak about my patients, darling’’ Heather teased, jabbing a finger into her husband’s full stomach and giggling when he growled and grabbed her hand.
‘‘Then don’t speak about your patients, speak about our kids’’
She giggled again, and then tangled her fingers in his muttonchops lovingly.
‘‘I remember Simon back when I met him in that London café, with you. All smiles and cocky attitude, and so happy with that little toy plane that he had bought for his nephew’’
John nodded, his blue eyes a bit glossy now thinking about back then. He missed that Simon. He was glad that Simon was still there, inside of Ghost, somewhere, and that little by little, the shell was breaking.
‘‘If you’re asking if I think what it’s growing between him and Christine is good… yeah, I think it is’’ Heather continued, tugging lightly at his facial hair and giggling when he grumbled. ‘‘It’s a curious thing. What she needs most is to take care of others, to feel useful. And to be taken care of, to feel loved, needed. And the same goes for him’’
‘‘Well… we’ll see how it goes’’ John sighed, listening to the laughter and the clattering of dishes coming from the kitchen.

In case nobody has told you recently: I am proud of you.
He’s been grinning at you like the early bird who got the worm all evening, but as he bit into his entrée his demeanour shifted. You perched on the edge of your seat, watching every micro-movement of his face as you await the verdict.  
Preparing for tonight had been gruelling. Tracking down all the right ingredients, multiple practice attempts, conveying to Oz’s people that he was not to be disturbed, not to mention the priming that went into looking good for him. You know he would have loved whatever you’d made, would have fawned over you however you looked, but you wanted tonight to be perfect, and it was all worth it for the blissed-out look on his face right now. 
He takes a second bite, and you can’t stand the anticipation. “Well, what do you think?”
“It's great, Doll.” He smacks his lips as he speaks. “It tastes just like my-“
“Just like you’re Nonna’s. I know!” You feel bad for interrupting, excitement getting the better of you. “It’s her recipe.” 
“How did you manage that?” He asks, dabbing his mouth with his handkerchief.
“I made a few calls, it doesn’t matter. What matters is that you like it.” 
“Of course I like it, I’d like anything you serve me, but this, this is exceptional. You treat me well, don’tcha?” In earnest, you do your best, but Oz really is the caretaker in your relationship. You might cook on special occasions, make sure he doesn't work too hard, but he keeps you well-kept. No bills to worry about, a luxury roof over your head, a wardrobe full of so many clothes and shoes that you’ll never manage to wear all of them, and a soft bed where he reminds you why, of all the men in Gotham, you always come back to him. 
“I do my best.” Plates scraped clean; you begin to clear the table. “I hope you’ve saved room for dessert. We’re having dark chocolate and coffee panna cotta.”
“Oh.” The plates in your hand nearly slip back onto the table, distracted by the disappointment in his tone, but when you turn to him, he’s looking at you with a sly glint in his deep brown eyes. He rests his palm on the back of your exposed thigh, ever so gently caressing your skin as he ghosted upwards, lifting the skirt of your dress in the process. “It’s not that princess, I just had somethin’ sweeter in mind. So as someone who has been only once in Cheesecake Factory, I was looking for a cheesecake copycat recipe only to be absolutely bamboozled by just how fucking calorie dense most of these dishes. Someone calculated what would be like the most caloric order (entrée, main dish, dessert and drink) and it amounted to somewhere 7000cal ( regular is usually 2500)
So imagine this dude being invited on a nice date but the date just…gets the most inconvenient but still very delicious dishes, and he isn’t really able to say no cuz the other is paying….
I’ve never been to a Cheesecake Factory, I think they might be an America only thing? I don’t know much about them but if that’s the case, damn that’s some heavy food they’re serving!

Schnitzel is one of the ultimate comfort foods. It’s hard not to like a food that is fried and golden brown. Schnitzel is commonly made from chicken or veal, but you’ll also find vegetarian versions made from celery root, or in this case, cabbage.
Any recipe for schnitzel always catches my eye, and I’ve often come across cabbage schnitzel in Russian and Eastern European cooking. Meat in that part of the world could be scarce, and cooks came up with creative solutions for making vegetables taste richer. Cabbage was also often one of the only fresh vegetables available during the long winter months. Even after immigrating to the United States with its year-round abundance of all foods, cabbage is still a favored vegetable among families from the former U.S.S.R. We ate a lot of it in my own Russian Jewish home: cooked, fermented, in soups, or in salads. I especially love cabbage as a meat stand-in for its texture, volume, and versatility.
Cabbage schnitzel can be made with boiled cabbage leaves that are folded into envelope shapes that then get battered, coated with breadcrumbs, and fried just like a chicken schnitzel. But my preferred style of cabbage schnitzel requires less work, and instead employs a thick batter of shredded cooked cabbage, breadcrumbs, and beaten eggs to form the schnitzels. This style of cabbage patty ends up with a schnitzel shape and thickness, golden brown outer layer, and crispy edges.
You can serve this unexpectedly rich entrée with a squeeze of lemon and fresh dill for added brightness. Cabbage schnitzel can also be topped with a dollop of sour cream, and I’ve been known to use some hot sauce for heat. While there are a few steps to this recipe, each one is simple, the ingredients are few, the cooking time is quick, and the payoff is big. Cabbage schnitzel tastes little of cabbage and instead transforms into something savory, caramelized, meaty and satisfying.

Being a field body for so long since his newest journey, hitting up familiar haunts with a welcomed companion was novel. There was a certain energy to Navia that attracted him, compelling the ronin to form up a more delectable memory this time around.
Harmless pot shots, shared stories, there was certainly no shortage of mirth for them to share. A new line was being defined, and in truth, he welcomed it with open arms.
"Goodness! To think pleasantries can be turned into mishaps. Have to pity dealing with an robotic exhaust blast like that." Yet, he's quick to remedy the situation as his side of this 'culinary exchange' was made. A fresh batch of Tri-Color dango being drawn onto their snack and tea table, the luster certainly showed his skill. "This has been a long time staple in Hanamizaka, by old and young alike." With that said, while a touch dramatic, he'd give a short, gentlemanly bow to Navia.
"And now, I'd like to bring another Inazuma memory into the growing measure. How about a treat for treat trade?" He'd mention, peeking a gleaming jade eye towards her.

       A soft laugh escaped her lips as Thoma returned to the room with his plate of treats in hand; they'd not known each other long ( and she could not say for how long he'd remain in Poisson, interrupted as they both had been by their chaotic meeting in the waterways and the Epiclese's latest farce of a trial ), but his presence brought a warmth to her hometown that she hadn't realised was missing. Thoma was charismatic, charming, good in a fight and had travelled from a country that Navia had always longed to know more about. As the Tri-color dango was placed in front of her, she suppressed another laugh at his short bow before taking a bite. “ I can see why. It's delicious! ” Milky and sweet at the same time, she would absolutely have to trouble him for the recipe at some point.
       “ A trade? ” Her blue eyes lit up, resting her chin on the palm of her hand thoughtfully. “ Well, seeing as you are already highly skilled in the kitchen, I suppose I could show you how to make my specialty dish. ” She did not have a batch prepared, unfortunately, but the art of baking was sometimes just as fun as the art of eating. “ Or, as is Fontanian tradition, we make this our entrée and I take you out to the Hotel Debord for our main course. On me, of course, seeing as you're a guest of the Spina. ”
