Diet; Another Four Letter Word
As we move through 2021 no doubt many of us will be setting goals myself included!

Some of the most common goals involve improving exercise routines, weight loss, and dietary habits. How many of you have attempted fat loss before; been successful only to gain it back? Maybe even with a few extra pounds? Have you found quick initial results followed by a screeching halt in forward progress?  You are not alone. Weight regain statistics can be frustrating; within a year about half will gain back all the weight they lost. Within 3 years around 95% of people will gain back all weight they lost. Unfortunately, many will end up heavier than their starting weight and the yo-yo dieting cycle is perpetuated. This article will not be providing the weight loss “answer” or specific dietary plan. I hope to point you in a direction of sustainable habits that may help you as you pursue your health and wellness goals.
 Over the years I have found that for many dieting brings up thoughts such as:
Lack
Restrictions
Missing Out
Healthy Food
Low Carb
Starting and Ending
What thoughts came to your mind as you started reading? Too often a dietary approach involves eliminating or severely restricting a macronutrient. For example, A true ketogenic diet would allow for only 5-10% of your daily calories from carbohydrates (no bread, rice, potatoes, or pasta). The carnivore diet offers another extreme example – the diet includes meat, fish, and other animal foods like eggs– excluding all other foods! When your nutritional plan forces you to eliminate foods entirely or like the cases above eliminate entire macronutrient groups your ability to sustain and be consistent with your dietary plan reduces. This is not to say that the examples above or any dietary approach are innately “bad.” In fact, the structuring of most diets force people into caloric or energy deficits (you’re burning more calories than you eat) and you will lose weight. Why then do so many gain back the weight they lose? Too often a dietary plan is started that is not sustainable. When starting a diet how many of you can’t wait until the diet is over (when the weight loss goal is achieved). 
In fact, one of the most important factors in a successful fat loss plan is the ability to sustain your eating habits. In order to be successful, we need something we can sustain, making small adjustments along the way to keep us progressing towards our goals. I challenge you to think- “Is this ‘new diet’ one I’ll be happy a year from now?” If not, it’s probably best to consider your current dietary habits and adopt habits that will be an improvement over what you’re doing currently. 
 Let’s take some of the pressure off. In truth, every single one of us is “on a diet’. Diet is defined as “the kinds of food that a person, animal, or community habitually eats” To be honest, I’ve had way too many pints of Ben & Jerry’s over the past year; Yes, the former bodybuilder struggles too! Understand you are already on a diet if you eat and we all need to eat!
 If improving your eating habits is one of your goals in 2021, think about long-term habit changes. If the diet is the kinds of foods a person habitually eats, then the solution is to habitually eat nutrient-dense foods aligned with your goals. Rather than starting with restrictions, work on ADDING! If your dietary approach starts with healthy additions rather than subtractions, we can build positive associations with your changes.
 What have I added?
Protein is one macronutrient I never skimped on when maximizing my performance and having a lean muscular, and strong physique was my goal.  Committing to eating a protein source each time you eat is a great way to start healthier eating habits.
 Here are a few reasons to consider prioritizing protein intake:
 1.      Protein is an essential nutrient. Nine of the 20 amino acids that make up protein are considered “essential”; your body cannot make these amino acids. Protein is the building block for our lean muscle tissue. When you ingest enough protein, muscle protein synthesis (MPS) is activated – when activated this can improve recovery, help improve your strength and increase lean muscle mass. This is especially true when combined with a weight training program.  
 2.     Protein has a higher thermic effect when compared to carbohydrates and fats.  All of the food we eat actually requires energy to be digested and assimilated into our cells. Protein is a more “expensive” macronutrient and the thermic effect of protein is somewhere between 20-30%. If you eat 100g (400 calories) of protein today 80 – 120 calories are burned during digestion and assimilation of the nutrient!
 3.     Protein is appetite satiating, which typically means you tend to eat less. Why? Protein is typically much more voluminous because it is not calorically dense.  For example, 2 Strawberry PopTart pastries equate to 400 calories. Nearly 1 pound (~12oz) of boneless chicken breast would be needed to reach 400 calories. Which of these choices would be easier to consume? Additionally, protein has an influence on cholecystokinin CCK which has been shown to be a satiety signal.
 4.     If the above is not motivation enough, protein is not just something we can eat. Protein is involved in numerous body processes. Protein’s end products (amino acids) are used to create enzymes that help drive our cellular processes. It is the building block of hormones like growth hormone and IGF-1, two very important hormones shown to aid fat loss and muscle growth.

  What to eat? The short answer is finding protein sources you like to eat!  Over the years I’ve gravitated towards:
Eggs and Egg whites
Chicken (Breast or thighs, the latter has a bit more fat)
Turkey (93-99% lean ground)
Beef (if adding muscle I used cuts like flank/sirloin; when leaning out I stuck with leaner variety like the eye of the round)
Whey Protein Isolate
Fish (wild-caught salmon and cod) 
ShellFish
 No magical dietary plan or secret. I hope you’ve challenged the way you think about diet. What we eat fuels our day, performance, and quite literally our lives. Wanting to improve your physique is admirable and your efforts will be supported and sustained if your dietary practices are sensible and sustainable. Habitually prioritizing protein with your meals is a great way to start eating nutrient-dense foods aligned with your goals. Protein is a powerful macronutrient that supports many body processes and can help to improve body composition, support energy, recovery, and satiety.  Do not let past associations with this four-letter word deter you. Make helpful additions to your daily diet to yield long-term benefits.

An old dog learns a new trick: The Reverse Sear
The Classical (French) way to cook a steak or a chop is to sear it very hard in a skillet, move it to a 500 degree oven to finish, while you cook an ala’ minute sauce in the fond and juices remaining in the skillet. The Reverse Sear, well, reverses that. You put the steak or chop (some 2″ thick, 12oz pork sirloin chops in this case) into the oven, which is set as low as it will go - 175 in my case. I have a remote probe thermometer and cooked them until the interior was 145 - not quite done for pork. It took close to an hour.
As that’s getting close, put a heavy skillet on the burner and get it as hot as the core of a nuclear reactor. When the chop is ready, put some butter into the pan (it should almost explode the pan is so hot) and put the chop onto the butter for about a minute. Flip the chop, and I added another slab of butter to the top of the chop while the bottom seared, in honor of Saint Julia (Child). 
The chops I used had been in the freezer way too long - all freezer burnt to the point I was thinking to just toss them out. They came out as tender as anything I’ve ever eaten, with a fantastically crisp crust. The science behind the reverse sear is that if you sear first, you’ve got all the water in the chop keeping the temperature of the pan down. If the chop is already cooked, the water has mostly drained out. So the crust is fantastic and the interior is tender from the slow cooking.
Served with some rice pilaf since Saturday is my carb day. Some sweet taters roasted with rosemary from my garden and some whole garlic cloves, and some brussels sprouts roasted with pancetta. The sauce is a dijon cream sauce I perk up with some horseradish.

Frozen steaks shipped right to your door. Thanks to styrofoam shipping containers and dry ice, this service model has been around for quite some time. In fact, 2017 marks a massive milestone for the meat distribution giant Omaha Steaks: 100 years. Yep, this family-owned Nebraska-based business has been operating and shipping frozen food across the country for an entire century. Since they’ve been around forever, we thought it would be a great idea to give an updated review of Omaha Steaks covering everything from product offerings, quality and taste, and ultimately comparing it to the competition. But, before we jump into the review…
Remember: Omaha Steaks is More than Steaks
With steaks in their name, it’s easy to overlook that the company offers much, much more than just red meat and gift baskets. They have a full line of seafood, appetizers and sides, desserts, and even wine (depending on where you live). And if you’re a steak-nut like I am, you’ll be drooling over the King Cut and specialty cuts Omaha offers which includes a ridiculous 72oz sirloin. This is the section for me. However, since I love to cook everything sous vide, I had to test drive Omaha’s sous vide product combo.

Unboxing
For this review, we received Omaha’s “Sous Vide Experience” which is a big combo package containing 37 products, one of which is a massive 48oz bone-in ribeye, in addition to a free Anova Precision Cooker. The price on this combo is hefty, but factoring in the sous vide machine cost and how much food you get, it’s really not crazy.
The entire order consisted of the following: 6 filet mignons, 4 New York strips, 2 ribeyes, 6 top sirloins, 2 wild salmon filets, 2 yellowfin tuna steaks, 2 halibut steaks, 2 cod filets, 6 boneless pork chops, 2lbs chicken breast, 1 King Cut 48oz ribeye, 3 spice rubs, and an Anova sous vide cooker.
Quality and Taste
This is the bread and butter of the Omaha Steaks review, and likely the part you’re most interested in reading. After all, when you’re in business for 100 years, you may have customers with both positive and negative experiences. I was definitely left with a positive experience from this order simply because the steaks and fish came out amazing. Now you may be thinking back to an article you read online years ago or a friend who said the steaks were not worth it. The answer is simple: it all comes down to the cook.
Let me tell you my memories of Omaha Steaks. When I was younger, my parents received an Omaha gift basket from our relatives as a Christmas present. My mother always cooked steaks well done. I hated it. In fact, I hated it so much, I nearly gave up eating meat all together.
Years later, I’ve not only learned how to cook a perfect steak (ie, temperature control via sous vide), but more importantly, learned how to cook it to my desired doneness. Long story short, the steaks and fish were amazing, here’s a photo of each:

Know What you Want
Another area I’d like to touch on is the size of the steaks. I’ve heard people say before that Omaha steaks are small. If you’re like me and enjoy a thick cut steak, but go online and order their general 7 oz ribeye, you’ll complain it’s small. That’s because it is! I can’t encourage you enough to make sure you shop around on their site a bit, since it’s so large. Take a look at the custom cuts and king cuts sections, create your own combo, or if grass-fed beef is more your style, they offer that too.
Just check out the size of this sucker! 4″ thick bone-in ribeye.
Comparing it to Competitors
There are two other websites I’d like to call out that are great comparisons; the first is Allen Brothers. Allen Brothers sells exceptional prime-grade beef, likely the best you can buy online. However, the price is craaazy high. We’re talking over ~$40 for one 12oz ribeye.
Another new-entrant I’d like to call out is Crowd Cow. This start-up actually crowd funds grass-fed beef from local farms and ranchers and ships it across the US. It’s not currently available in all states, and there’s many times that ordering is unavailable. The prices are also up there, but are often comparable to Omaha, if not a little more expensive.
To sum it up, there is definitely better steak to buy online, but only if you’re willing to take out a loan to pay for it. Omaha offers convenience and fast shipping with an extensive product line.
Final Thoughts
I will absolutely buy from Omaha Steaks in the future (once my stockpile runs down from the Sous Vide Experience combo) to get my hands on some of those custom cuts and massive steaks. I will obviously still buy from my local butcher for a fresh steak, but the convenience of re-stocking my freezer with a bunch of steaks that are shipped to my door and then simply dropping one into my sous vide cooker is hard to beat.
