Sourdough Bread 74% hydration
After many years of trying to get my sourdough bread to puff like the other bakers.. finally, I did it!! Alhamdulillah!! Finally, I figured it out!!

Sourdough Cranberry Bread
Ingredients:
350 g almond milk warm
250g ripe starter
10g salt
750g bread flour plus spelt flour
Methods:
Add all ingredients in a tub or bowl
Mix them well until shaggy
Autolyse 1 hr
Stretch and fold – 30 mins
Stretch and fold – 30 mins to 1 hr
Stretch and fold – 1 hr

Rest dough or bulk fermentation- 4 hrs

Sourdough Fatayer (Spinach Feta filling)
Let’s see if I could remember how I make this Fatayer using my ripe sourdough starter. If you’re using the discard then you need to add a pinch of yeast.
Ingredients:
1/2 cup vegetable oil
1 1/2 cup almond milk warm.
2 tbsp yogurt
1 cup ripe sourdough starter or 1 tbsp yeast
1 tsp baking powder
2 tsp sugar
1 1/4 tsp salt

Seri Kaya Pandan Jam
Ingredients:
5 duck eggs
2 egg yolks
160g sugar
1 1/2 tbsp pandan juice
280mL coconut cream milk
Method:
Beat eggs and sugar
Add pandan coconut milk mixture to the eggs
Double boil the mixture until thick at medium heat

Mini Sourdough Boule
This sourdough was baked on a baking stone not in a Dutch oven. It turns out better than what I expected.. the oven springs sprang surprisingly..
Here I used almond milk instead of water.

Vegetarian Sambal Tumis
Ingredients:
Prawns
Chopped cabbage – handful
Julienne cut carrot – 1
Sweet onion – 1
2 tomatoes – sliced
Shiitake mushrooms – quarter cut
Garlic powder to taste
2 tbsp sambal tumis
1 tbsp miso paste

Ingredients:
Bulgarian Yogurt
Cucumber squeezed
Pink salt
Dash of black Pepper
Sumac
Lemon juice
Rice vinegar
Olive oil
Methods:
Grate the cucumber

Crunchy Fried Potato
Ingredients:
Potatoes
Water
Oil
Method:
Peel the skin and Boil potatoes
Cut the potatoes in wedges or whatever shape you like.
Let it set for an hour or overnight in fridge
Then heat the oil in a pot and deep fry them until golden brown.
Once brown , bring them out of the oil and let it sat in a drainer to drain the oil before serving them on plate or in your container.
