Look at these beauties! Sourcing for 2023 has begun at our Indian office. This is some beautiful nutmeg and mace grown by a group of farmers in a town called Pollachi located in the Coimbatore district in the state of Tamil Nadu. We got connected with these farmers thanks to the Spices Board of India. To all our customers who were left disappointed because of our limited supplies of nutmeg and mace this time around, we are working hard to source enough produce to last us till 2024. And it's harvesting season in the Wayanad district of Kerala, India. These Tellicherry black peppercorns are now fully ripe and ready to be plucked at our farmer partner's farm. What next? The peppercorns will be separated from the vines and then sun-dried until they take on a black-brown colour. After the drying process is complete, the peppercorns are cleaned to remove farm-level impurities including stems, soil, or any other seeds. The peppercorns are then sifted through mesh screens to sort them into different sizes, a process known as garbling. Garbled peppercorns are more uniform in size and colour and therefore command a higher rate at auction centers across the state of Kerala. Tellicherry peppercorns are one of the biggest in the world with the special extra bold grade measuring close to 5 mm in size. Bigger size also means better and bolder flavour with higher heat levels. Think of the Tellicherry variety as the best of the best when it comes to black pepper similar to what Wagyu is considered in the world of beef. @thesaborco is working towards bringing some of this special variety of black pepper to the Australian shores.
