Before-Whole30 Baseline
One of the reasons I kept putting off committing to a firm eating plan like Whole30 is that I consider myself a pretty healthy eater. I’ve always anticipated that forcing myself to be 100% compliant with a strict plan would send me into a deprivation mentality, and that being a ~90% whole-food eater with a little wiggle room for other stuff wasn’t the worst thing in the world. 
Nonetheless, here we are. I’ve bought into the idea of a 30-day reset of eating only the “right” foods. As my start date approaches, I wanted to focus on the ways in which I’ve been eating well and can build on during Whole30. 
I cook at home. A lot. Ever since I can remember, I’ve loved to cook. Eating is awesome, so why wouldn’t someone want to participate in the creation of the food and make it exactly to spec?! My early attempts as a teen mostly consisted of eggs, pancakes, certain traditional Jewish holiday foods, and cookies. I also messed around with salads, sandwiches, smoothies, etc. (more “food assemblage” than actual “cooking,” if we’re being technical). Then during college I graduated to vegetable stir-fries and sauteed pasta dishes, and I made a lot of marinated chicken breast on my Foreman grill. When the hubs and I moved in together we started incorporated baked salmon once a week along with the grilled chicken, turkey sausage, and turkey meatloaf that became our staples. 
Still, I didn’t realize just how much we ate out in NYC until we moved to the suburbs. Pre-kids, we’d pick something up from the pizza place one night during the week, and perhaps another weeknight we’d meet friends or coworkers for dinner and drinks. And the weekends inevitably involved eating out in some fashion or another. These days I cook dinner every weeknight pretty religiously, and that way weekend restaurant visits and take-out meals really are a special treat for everyone. 
I’m also kind of grumpy and cheap when it comes to grocery store shortcut foods - no cooked rotisserie chickens or other prepared foods from the deli counter for us. That said, I understand that this is often an optimal alternative to true take-out food for people who are too busy to cook. But it’s not like I’m relying on them and need to cut them out now, which is good. 
Finally, I’ve almost always packed and brought my own lunch. Occasionally I’ll treat myself to some sushi (since no one else in my family likes it) as a special Friday lunch, but otherwise I eat a homemade salad or leftovers from the night before. 
Hence, I’m intimidated by the menu requirements of the Whole30, and the prospect of making sure my meals are compliant while also satisfying for my family of picky eaters, but it’s not like this is my first rodeo in the kitchen. 
When I do eat outside food, I don’t go overboard. The sushi aside, when eating in a restaurant I usually pick something sensible like a salad with lean protein. If I indulge in a sandwich, I make sure to stop when I’m full (usually eating around half & saving the other half for the next day). In my youth I was a total glutton whose brain used the “oh, we’re eating out!” signal as an excuse to stuff myself, since it was a “treat”. 
I guess it’s also worth mentioning here that when we eat out, it’s pretty strictly Greek diner, Italian, Thai, or Chinese - i.e. somewhere I can eek out a decent meal (even if it means ordering steamed veggies and tofu with brown rice while everyone else has saucy deliciousness). The only time we even consider a typical “fast food” joint is on road trips, and even there you can always get a salad. 
Obviously, I’m not perfect. My willpower is shit when it comes to a nice diner bread basket or a steaming tray of garlic knots. But, in contrast to my youth, I’m able to have half a slice of challah, or one garlic knot, and stop there. This doesn’t really help with Whole30 since all that stuff is off-limits, but if I used to eat a lot of something, and trained myself to eat just a little, by extension eating none of it isn’t such a big stretch. 
I don’t eat after dinner (anymore). Because I have small children, we eat dinner around 6:30, finish by 7:00, and have them in bed by 8:00. A few months ago, I found myself picking at randomness in the kitchen during the evening cleanup. I realized that I was rushing through dinner, too distracted facilitating everyone else’s eating to slow down and feel myself to satiety. Thus, a few hours later I was either still hungry, or just antsy and unsatisfied enough to pick at nonsense. For the last several weeks, though, I’ve been more strict about dinner being the time to eat the good foods that’ll keep me full until the morning. (I say those exact words to my kids every single night; may as well take my own advice, right?)
I only booze occasionally. Last January I basically gave up drinking alcohol. Every once in a while I’ll have a glass of wine or a beer at a party, but between the negative effect on my triglycerides, the extra calories I don’t need, and the fact that I have small children who wake up me at the asscrack of dawn even if I have a headache, these occasions have been fewer and farther between. The logic also falls somewhere along the lines of “what’s the point of having just one drink?”  The other night I drank (a whole beer!) for the first time in over 2 months, and while it was delicious the buzz kept me up too late and I spent all of yesterday feeling sluggish and exhausted. Not worth it. So I know I can go 30 days without booze, no problem. 
I exercise almost every day. I know there’s a lot of speculation about whether exercise is actually good for weight loss - you burn a lot of calories but that just makes you hungrier, or you pat yourself on the back and take more liberties with crappy food choices, blah blah blah. All I know is that I got into the habit of working out every morning and I can’t imagine how I’d feel if I gave that up. My usual routine is 20-30 minutes on my elliptical, plus some strength exercises from a 30-day challenge chosen by my sister-in-law and her friends. It might be psychosomatic but I’m convinced the endorphins help me manage stress and have energy throughout the day. Plus, knowing I have to get up early to get the workout in before the kids get up is usually enough motivation to get into bed at a decent hour at night. 
The Whole30 book warns that adjusting to the program may affect athletic performance, so I’m going to proceed with caution the first few days. It so happens that we’re almost at the end of a thigh challenge, so the first day of Whole30 I’ll need to do 40 leg swings, 45 side leg lifts, and 45 side lunges (per leg). The next day it’s 50 side lunges, 55 plie squats, and 45 inner thigh pulses. So maybe I’ll skip the elliptical one of those days, or do it as a quick 10-15 minute warmup instead of a full cardio session. Regardless, according to the book exercising means you need to eat an extra (small) meal, and for my money that’s enough reason in and of itself to keep exercising.

Instant Pot Butternut Squash Soup

Shortcuts to deliciousness
By using an Instant Pot, you can speed up the cooking process and concentrate the flavor of the butternut squash—which means you can skip the extra step of roasting the squash that many recipes call for! Plus, this recipe includes flavor and/or texture boosters—crispy bacon bits, Magic Mushroom Powder, and aged balsamic vinegar—all of which will level up this winter soup to dinner party-worthy fare, even if the only fancy pants person slurping it up is YOU.
Can you make this soup in a slow cooker?
If you don’t own an Instant Pot or pressure cooker, you can make this soup in a Crock-Pot: dump all the ingredients (except for the bacon and balsamic vinegar) into a slow cooker and cook on low for about 6 hours. Crisp up the bacon on the stovetop or in the oven and add the bacon bits and a drizzle on the balsamic vinegar when you ladle it up.
Honestly, the hardest part of this recipe is peeling and hacking up the squash! Even with that, I’ve got you covered—simply follow the steps below and you’ll end up with a big bowl of butternut squash cubes!
How to cut up a butternut squash
Cut the ends off of the butternut squash with a chef’s knife. Next, use a small paring knife to cut the squash in half crosswise, at the point where the squash bulges out.
Use a sharp vegetable peeler to remove the skin from the butternut squash. Cut the bulbous part of the squash in half and scoop out the seeds.
Cut the squash up into cubes and wedges of approximately the same size. Done!
Do you need to wear gloves to cut up butternut squash?
Maybe. After cutting up a bunch of squash to create and (repeatedly!) test this recipe, the skin on my hands turned orange and they felt like I had a tight pair of gloves on—but ones that wouldn’t wash or peel off. Apparently, I got butternut squash (cucurbita moschata) dermatitis!
I always noticed this reaction happening after I cut butternut or acorn squash, but I always thought it was just the squash sap discoloring my skin. This time, my reaction was more severe and my skin started itching and cracking. If your skin is sensitive to the butternut squash sap, wear some gloves before you cut it up!
Is there a quick fix?
There really isn’t a fast cure for “squash hands” — you just have to moisturize and softly exfoliate with a wet hand towel. For most folks, the effects just go away after a couple of days. Also, the skin reaction doesn’t mean you can’t eat squash. I can eat it with no issues as long as the squash has been cooked—and I’m so glad because I love it!
Time to make easy Instant Pot Butternut Soup!
Serves 6
Ingredients:
¼ pound bacon, cut crosswise into ¼-inch strips
1 large onion, diced
6 garlic cloves, smashed and peeled
1 medium butternut squash (about 3 pounds), peeled, seeded, and cut into 1-inch chunks
3 cups bone broth or chicken broth
2 teaspoon Magic Mushroom Powder or Diamond Crystal kosher salt
Aged balsamic vinegar
Equipment:
Chef’s knife
Cutting board
Vegetable peeler
Instant Pot
Silicone spatula
Measuring cups
Measuring spoons
Immersion blender
Ladle

Method:
Turn on the sauté function on the Instant Pot and drop in the bacon bits when the metal insert is hot.
Cook the bacon for about 10 minutes or until crispy, stirring every few minutes. Use a slotted spoon to transfer the bacon bits to a paper towel-lined plate.
Add onions and garlic to the bacon drippings and cook for 1 to 2 minutes.
Stir in the cubed squash, broth, and Magic Mushroom Powder.
Lock the lid on the Instant Pot and program it to cook for 7 minutes under high pressure.
When the soup has finished cooking, release the pressure manually.
Taste the soup for seasoning and adjust if necessary. Then, grab an immersion blender to purée the soup until smooth and silky!
Ladle the soup into bowls and drizzle aged balsamic vinegar and crispy bacon bits on top.
You can keep the soup in a sealed container in the fridge for up to 4 days or in the freezer for up to 4 months.

Instant Pot Sweet and Sour Chicken
This just might be the best low syn Sweet and Sour Chicken you ever make – seriously!!
This yummy recipe that was previously published on Slimming Eats has been improved and updated
During the summer, there was an awesome deal for an Instant Pot. I have had my eye on these for a while, but hadn’t jumped in and ordered one. However, I just couldn’t resist the Amazon prime day deal and so I hit add to basket and well you know the rest.
If you haven’t heard of an Instant Pot you are seriously missing out. It is the best kitchen gadget I have purchased. I would even put it above my actifry and that’s saying something. I love this thing so much, that I almost use it EVERY.SINGLE.DAY.
It seriously tops every kitchen appliance I have ever bought.
It is basically a 7in1 cooker, and it slow cooks, pressure cooks, saute’s, has settings for soup, chilli, rice, porridge and even makes yoghurt (I haven’t tried that yet).

I have even been seeing instant pot parties all over social media.
What’s that you might ask? Well basically a group of friends get together around one host’s house, you all bring your instant pot, have a drink (or two, not too many, because well, too much drink and alcohol, might result in serious bodily harm) and each of you cook a different dish.
Amazing the end result is that you all get to bring home a dish, from every person invited. How awesome is that!!
It doesn’t even need to be a big group of friends you could just do it with one good friend to make some stews, casseroles or curries etc to stock up the freezer. 
Today it was dinner time and I literally had nothing prepared. The only protein available in my fridge was some skinless boneless chicken thighs and so I was rooting in the fridge for other ingredients for inspiration.
Fresh pineapple – check! bell peppers – check! various store cupboard ingredients – check. You can see where I am heading with this right? Yep – it just had to be Instant Pot Sweet and Sour Chicken.
Normally for the sweet part of the sweet and sour chicken, I would add maple syrup or honey, but I had neither and I didn’t want to use sweeteners as you just don’t get that yummy thick syrupy sauce. Routing around in the fridge, the apricot jam seemed like a perfect ingredient for that sweet taste and it really was.
The instant pot had this Instant PotSweet and Sour Chicken ready in less than 30 mins and was perfect served with some white rice. Delicious simple ingredients all combined together for a healthy meal.
How can I add a 1/3 speed foods to this Instant pot Sweet and Sour Chicken?
There are heaps of veggies already included in this Instant Pot Sweet and Sour Chicken such as peppers and onion, but if you want to add the speed foods even further, you could serve alongside some stir fried beansprout or even go for Cauliflower Egg Fried Rice instead of regular rice. 
If you opt for a gluten-free soy sauce or coconut aminos (soy free soy sauce alternative) this dish will be gluten free.
Don’t fancy chicken? – you can easily sub with pork or shrimp instead, just take into account that the cooking time will need to be adjusted.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Ingredients
600g of boneless skinless chicken thighs (uncooked)
2 cloves or garlic, minced
1 tsp of freshly grated ginger
1/2 cup/80ml of passata
1/4 cup/60ml of soy sauce (not dark soy sauce)
3 tbs of rice vinegar
1 tbs of apricot jam - 2.5 syns
1 white onion, roughly chopped
1 cup of chopped fresh pineapple
1 red bell pepper, roughy chopped
1 green bell pepper, roughly chopped
1 orange pepper, roughly chopped
1 tbs of cornstarch (or arrowroot or tapioca powder) - 1.5 syns
cooking oil spray
Instructions
Set instant pot to saute mode and spray with spray oil
Once it displays hot, add chicken thighs and fry till lightly browned.
Add in all other ingredients (except cornstarch and pineapple)
Mix to combine.
Add lid and close valve if not a self sealing Instant Pot (Pressure cooker)
Set to manual high pressure for 8 minutes.
Once finished cooking, allow the pressure to release naturally for 8 minutes and then release any remaining pressure.
Spoon out chicken and vegetables with a slotted spoon.
Set to saute mode again.
Mix cornstarch with a little water to make a paste.
Add into sauce and allow to simmer for about 5 mins until thickened.
Add back in chicken, vegetables and fresh pineapple and stir.
Serve with your choice of sides.

Gluten Free - use gluten free soy sauce.
If you don't have a instant pot, this can also be cooked on the stove top, just fry the chicken in a pan as you would for the instant pot, add in all other ingredients (apart from the cornstarch), simmer for 30 mins and then mix cornstarch with water and pour in, stirring until thickened. Adding the pineapple in right at the end.

If you're looking for cheap, fast, and easy Whole30 dishes, you can't beat recipes that showcase the humble egg. I always have a few dozen pasture raised eggs in my fridge so I can whip up healthy, tasty meals in a flash!

My favorite thing about cooking with eggs is that you can use them to stretch your leftovers. If you have some leftover stir-fry or cooked protein but not quite enough to feed the whole family, you can add a few whisked eggs to make a big frittata or scramble. What can you do with cauliflower?
The better question might be: What can’t you do with it? Cauliflower is like the LBD (little black dress) of the veggie world. It’s so versatile. You can dress it up or down and take it anywhere. Cauliflower’s mild flavor and sturdy texture hold up well to many preparations. You can roast it, sauté it, steam it, rice it, and purée it.
Once cooked, it can feature in tacos, buffalo-drenched game day grub, or refined dinner party dishes. It can be a side dish, base layer, or centerpiece. Some restaurants even serve the whole head like a roast, front and center (an impressive move to make at home too).

What is the best way to cook cauliflower?
If you’re keeping your cauliflower intact or serving as a side (in the form of florets or cauliflower steaks), roasting is the best way to cook it. The excess water evaporates in the oven, resulting in a more concentrated, sweeter flavor. The outer layer browns and caramelizes into a crisp, nutty coating, giving way to a soft interior.

Whole30, Day 26
Exercise
35 squats (one abs challenge had a rest day & this was half of the other, I’ll just do the rest - 35 crunches - tomorrow)
Meals
Breakfast: chicken thigh, cauliflower rice, sweet potato w/coconut oil
Lunch: arugula, (cooled) sautéed string beans, two hard-boiled eggs, diced butternut squash ranch dressing
Snack: baby carrots, snap peas, 1 tsp guacamole, 1 strawberry, Larabar
Dinner: beef roast, butternut squash, cauliflower, cucumber, olives, coconut flakes
Notes
I am having some issues with sleep, my friends. The last few days, I can’t sleep past 5 AM. I wake up at some point during the 4 o’clock hour, whether to pee or put one of my kids back in bed, & my brain refuses to chill out enough that I can fall back to sleep. For a few days it was manageable, and I kind of leaned into it, making sure I got to bed by 9:30 (or mayyybe 10 at the very latest) to offset the fact that I’d likely wake up so damn early. In those early mornings, I tried to use the extra time for personal enjoyment, namely reading or listening to podcasts and, when I summoned the will to really get up, to get my exercise in before kids start waking up. 
At first it was really great, getting an extra hour of peace & a jump on the day. But it’s definitely not sustainable long-term as I’m exhausted by dinnertime, drag myself through the kids’ bedtime isht, and then have zero energy left to do anything else. It would work better if I could get up in the morning & do something productive, to offset my evening uselessness. But, I try to be really quiet at 5 AM, because the only thing worse than being up that early is if one of the kids gets up & then can’t go back to sleep. There was definitely a day this week when one of them woke up early, & I braced for the worst, but then he/she (I honestly can’t remember which kid, the sleep deprivation has so affected me) went back to sleep & slept later than normal. 
I’m torn about what to do. I know that if you wake up in the middle of the night, you’re not supposed to engage any electronics or turn on bright lights, so I don’t do this. My usual middle-of-the-night resume-sleep protocol involves doing crossword or sudoku at my desk until I feel tired enough to try laying down again. But at 4:45, it seems absurd to first start a crossword, which will take a least 10 minutes to make me tired, plus another indeterminate amount of time to actually fall asleep again once i get back in bed, leaving me at best an hour before a child comes in & wakes me up. Thus, it doesn’t seem worth it. But I need to try something else. At the very least, I can bring my son’s laundry up to our room to fold in the wee hours. Today I also made sure not to have any extra caffeine, since that might perpetuate the problem. 
Anyway. This is why I haven’t yet set up my new elliptical machine - I’m too tired to do it in the evening, & the early morning isn’t the right time to clang around with tools. We were out most of the day today (I met my niece who is 2 days old!) so I didn’t have time to do it then, but I’m determined to do it tomorrow morning, at some point once the kids are up but occupied. Regardless, I’m getting toward the end of the 30-day abs challenges, which means there are plenty of sit-ups & crunches & leg-raises & other exercises to do, & I can get a decent workout in most days despite the lack of intense cardio. Still, I don’t want to let myself off too easy just because it’s nearing the end of Whole30, either. 
As for today’s eating, we were at a small child’s birthday party today & the list of things I couldn’t eat there is kind of absurd. I’m going to post more about this on my other blog but the notion I’ve arrived at is thus: I don’t necessarily miss the enjoyment of the food itself so much as I feel stigmatized & frustrated by being (usually) the only person not eating the processed foods available. I took the warnings not to become a “Whole30 hermit” seriously, but it’s still quite unnerving to be in a social eating situation & wondering if anyone will notice what you are/aren’t eating, if the guacamole has dairy in it, & who thought fruit punch was a good idea, anyway?! It also occurred to me in the grocery store that it shouldn’t be quite this hard to eat clean & healthy, but the food industry developed as it did before the science could catch up, & our supermarkets are thus flooded with sales on crackers & pretzels while produce remains expensive by comparison. 
Finally, I had a few small victories quelling cravings today. In some ways I’m frustrated that I’m still dealing with those at this late stage of the game, but it might be something that never goes away, really. And I’m at the point where I’ve accepted it. (Tomorrow I hope to discuss what I’ll be doing once the 30 days are over.

Grab and Go Bacon and Egg Cups Ingredients
12 strips of thick cut bacon
Oil, butter, or bacon fat to grease the muffin tins
1½ cups grated sweet potato, packed
13 eggs, divided
Optional: ½ cup grated cheddar cheese (omit for Whole30)
12 asparagus spears, tips cut off (reserve the stems to roast for dinner!)
6 grape tomatoes, cut in half
A little pepper and smoked paprika, to serve
Instructions
Preheat your oven to 350 degrees.
Line a baking sheet with parchment paper.
Grease a 12-cup muffin tin with either oil, butter, or bacon fat. (See notes)
Lay the bacon on the parchment lined tray and bake in the oven for 10 minutes.
In a medium sized bowl, mix the grated sweet potato, 1 egg, the Vital Proteins Collagen Peptides and, of you’re using, the cheddar cheese.
Divide the sweet potatoes between the 12 muffin tins and press into the bottoms and up the sides.
Bake in the preheated oven for 8 minutes.
Cut each bacon slice in half and lay 2 halves in each of the muffin cups, letting them overhang a little.
Carefully add one egg to each of the 12 muffins tins. I find it’s easiest to do this by cracking them into a small bowl, one at a time, then pouring them into the muffin cups.
Top with an asparagus spear and a cherry tomato half. Bake for 18-20 minutes, or until the whites are firmly set.
Remove from the oven and let them cool for 5 minutes in the muffin tin.
Run a knife or an offset spatula around each to loosen it then carefully remove them.
Set them on a paper towel to remove the oil that will be on their bottoms.
Sprinkle with a little pepper and smoked paprika and serve.
The Bacon and Egg Cups best warm, but are also delicious straight from the fridge. Keep them covered in your fridge for up to 3 days.
Notes: If you know your muffin tin tends to stick (like mine always does) you may want to cut out 12 small rounds of parchment paper to put in the bottom of each muffin cup. Do this by folding a piece of parchment several times so you only have to cut out one circle.
