#Repost @a.m._in_japan • • • • • • 誉国光 土田酒造株式会社 Repost of the best from the past: Tsuchida 99 99% koji rice yamahai Tsuchida-shuzo, Tone-gun Gunma This was the big surprise at the tasting I organized. It's made from 99% koji rice, which is usually only 20-30% of the rice used in making nihonshu along with plain steamed rice and the yeast cultured rice. I don't know how they get that to work, but with a sweetness of -13 and acidity of 3.5, it was something one doesn't usually run across. The color of dilute apple juice and with a slight cloudiness and viscosity, it had an aroma of caramelized apple with a hint of onion. It was pleasantly thick in the mouth but very much buoyed by a vibrant acidity. Flavorwise, it made me recall tart apple custard but had a clean spicy finish and no syrupy sweet aftertaste. It went extremely well with a strongly flavored yogurt-based curry and was exquisite with a pumpkin and amazake pudding that my coworker made, a pairing that won raves from the participants!
