Update from Hawaii 🌺🤙🏼 * * Landed on big island. * * Quit a lot has happened since the last update. Kaua’i finished with finding myself back in civilization after living in nature for a while. I connected with so many beautiful souls at ecstatic dancing and found myself more grounded everyday. Today I woke up on big island after I experienced the force of Pele the first time. The volcano lightens the night sky over the puna area in a firing red and leaves me gasping. I am ready to connect with all the inspiring people who decided to stay & hopefully share the experience. I am curious to life and learn with the people who decided to practice permaculture and connect with the nature around them. Currently being with the beautiful souls of @hawaiiansanctuary. So my wwoofing experience will start soon as well. Until then: I will share some impressions from the island over the story. Plus enjoying all this delicious food all over ! Aloha people. 🌺 * * Just a little update from the island of Oahu. 5 days, sleepless nights in a hammock and 1000 mosquito bites later, I have the chance to share the first impressions of my tour. I already have collected crazy stories to fill an evening; but for now I will just share my top 5 tips when you plan to come to Hawaii on a budget & with a backpack: 1. remember the rain when you pack (it is literally raining every day, only for an hour, but enough to wet everything. 2. on Oahu : take the Bus day ticket. You come around the island for 7,25$. 3. Dont bring too much stuff ! You can basically get everything here. Thriftshops are everywhere and you simply just need cloths that you can walk in, sleep in and a bikini. 4. search for WWOOFing or other work exchanges. It will sage you a lot of money and is an incredible opportunity to get to know the country from a locals perspective and people from all over the world. WWOOFing is also a great way to enrich your expertise about sustainable farming guys ;) 5. stay open-hearted and ASK. People are so friendly and welcoming here. Simple cashew asparagus tagliatelle „transform the leftovers“ ✨🌿 * * Find the recipe on: www.truefoodsblog.com * * Posting the rest of the recipes that we have prepared last week :) this one was a simple leftover creation from a asparagus stew combined with spelt tagliatelle and a cashew Creme. Due to shortly cooking the asparagus again and the fact that it soaked over night - it got super creamy and almost melted with the tagliatelle. Definitely one of my favorite summer dishes so far. What a shame that this is actually not to much work :/. Anyways you know what time it is ? It's short before the summer break and exams are next week...so easy meals are convenient at the moment ! This recipe might look like much work but I actually just threw in all the vegetables that we have and fruits that was already getting slightly too ripe! Then just add everything you find in the kitchen that needs to used - always after the strategy "first in first out". Hope you enjoy this small recipe & fingers crossed for everyone who has the same struggle as we do now 🤞🏼

Papaya Chutney - "sweet, fruity & a spice explosion" 🍑✨ * Find the recipe on: truefoodsblog.com * * Little storytime: Two days ago I purchased two really two really beautiful ripe papayas for Moritz because he wanted to try to make an Asian salad out of them. Unfortunatly, we found out that you need non-ripe Papayas for it. There we were: two people who actually don't like papaya, with two ripe papayas. Luckily I remembered a recipe for a really nice mango chutney which perfectly worked out with papayas and made even us like this strange fruit! * Do you guys have any tips what to do with the other one ?? - comment below

This summer I have been on Oahu, Kauai and big island Hawaii, traveling as a vegan on a budget. How I survived, what I ate and where I have found it, what where my favorite restaurants and secret tips - everything is included into this article. Fruits and veggies were way more expensive than I have thought. Healthy food way less available than I expected. Vegan food choices were rare and rather secret. Still I have managed to survive under 100$ a week for almost three months!! And i definitely was not saving on vegan soulfood! I had to be creative and open-hearted. Now we are sitting in T-shirt’s in the vivid streets of Italy. I told Moritz today „just imagine someone would have told us back than where we would be standing today, we wouldn’t have believed it” but you know how it is, things never come as planned. Spaghetti Bolognese a Little different „vegan, no soy“ 🌿🍝 * * Quick recipe: -Favorite pasta - 1 cup sunflowers soaked - 2 carrots - 1 garlic glove - 1 green pepper - 2 tbsp olive oil - 1 handful of basil - kumin, chili flakes, sweet bell pepper powder and spices of choice - 2 tbsp tomato paste - 1 glass of diced tomatoes - 1 piece of chocolate (Cheese topping: roasted cashews, nutritional yeast & sea salt) * * So, I graved a vegan Bolognese so much the other day that I had to get creative. I didn’t have tofu so I decided to soak sunflower seeds instead and create my own kind of Bolognese and it turned out to be suuuuper delicious. * * * Put the carrots, basil, spices, sunflowerseeds and garlic into a foodprocessor and blend until you get a nice moist “meaty” mixture. Heat olive oil in the pan, while cooking pasta and add the mixture into the pan . Stir until carrots start to get softer and add the green pepper. Stir until everything is starting to get soft and caramalized. Add the tomato paste and let it cook and develop a rich tomato-tangy flavor. Add the diced tomatoes as well as the chocolate. (It helps to balance the sour taste of the tomatoes).
