Jamaican Carrot Cake (Vegan & Gluten-Free)

My mom moved out of our family home of 40+ years this year. In the process of going through all of the things a big family collects in four decades, we came across many old recipes from my grandmother and great aunts.

One of them was for my grandmother’s famous cranberry “salad.” It basically consists of finely ground cranberries, chopped toasted pecans, crushed pineapple, miniature marshmallows, and whipped cream folded into soft set black raspberry jello. Jello doesn’t make their black raspberry flavor anymore so I used plain raspberry and:

It’s complete nostalgia. When I tasted it I was immediately transported back to family reunions, holiday dinners, and neighborhood block parties. My grandmother would special order frozen cranberries when they were in season and keep them on hand so she could make this at any time of the year.

It’s surprisingly balanced because the cranberries are so tart. It’s still very much a dessert but it’s not as sweet as you might think.

Anyway, happy Thanksgiving to those who celebrate. Who wants some cranberry salad? I have enough here to feed the neighborhood.
