Since I am tired of everyone already, I decided where will my next trip be: Coahuila, here in Mexico. The reason? Animals, of course. I’ll go see the black bears of my country.

They were almost extinct. In fact we extinct the Mexican Grizzlies. Luckily, we are working towards saving these guys and the rest of the nature of the place.

#208 Taco de asado de puerco en tortilla de harina.

Taquería LOS PIONEROS DE SALTILLO, Carretera Monterrey - Saltillo 25000, Rancho de Peña, Saltillo, Coahuila

El asado de puerco norestense (conocido así en Monterrey y zonas aledañas, pero también nombrado como asado de bodas en algunas partes del norte de ese estado y en la región central de Coahuila) es probablemente uno de los platos más icónicos de la cocina regional.

Se trata de trozos de cerdo (costillar, pulpa, pierna, o lomo) que se fríen en manteca hasta dorar por completo y posteriormente se cocinan a fuego lento dentro de un adobo de chiles secos (guajillos, anchos y pasillas) sazonado con comino y hierbas de olor. La carne se suaviza hasta casi romperse y el guiso se espesa para formar una salsa delicada, consistente y llena de sabor del norte mexicano.

La combinación con tortilla de harina es prácticamente un culto. Se trata de un sabor ideal para el asado, lo convierten en un bocado delicado y de gran personalidad.
