Lemon and Tomato Pasta (Vegan)

Fragrant with bright flavours, this Lemon and Tomato Pasta makes a hearty lunch, exactly one one needs after spending a sunny morning pottering in the garden. Happy Thursday!
Ingredients (serves 2):
2 cups short pasta (like fusilli or penne)
2 tablespoons olive oil
陆 large Green Onion
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 1/2 lemons
1/3 red chili pepper
2 small, ripe tomatoes, rinsed
a pinch of fleur de sel or sea salt flakes and freshly cracked black pepper, to taste
2 teaspoons caster sugar
3 leaves聽Garden Basil
2 1/2 tablespoons Limoncello聽
In a pot of聽salted boiling water, cook聽fusilli according to package鈥檚 direction, usually 9 to 11 minutes until聽al dente.
While the聽pasta聽is cooking, heat聽olive oil聽in a large, deep, nonstick skillet over medium heat.聽
Finely chop the Green Onion and stir into the skillet, saving a bit of the green part. Cook, a couple of minutes until softened.
Add dried oregano, dried basil, and grate in the zest of a whole lemon. Fry, a couple of minutes more.
Thinly slice聽red chili pepper, and add to the skillet; cook, 1 minute more.聽
Roughly chop the tomatoes, and stir them into the skillet, along with their聽juice. Increase heat to medium-high, and simmer, 4 minutes, stirring often. Season with聽fleur de sel and聽black pepper, to taste. Then, stir in聽caster sugar until dissolved.聽Thoroughly squeeze in the juice of the lemons, and cook, 1 minute more.
Then, drain聽fusilli, saving about 1/4 cup of its聽starchy water. Stir both into the skillet, coating the聽pasta聽in聽sauce. Give a gentle stir until the聽sauce聽beautifully coats the聽pasta.
Finely chop聽Basil, and stir it in, along with Limoncello, and remove from the heat.聽
Serve聽Lemon and Tomato Pasta hot, sprinkled with reserved green part of the Green Onion, with a glass of聽chilled dry white wine, like a light and citrus-y聽Chardonnay聽or聽Sauvignon Blanc.

Octopus in Tomato Sauce

This fragrant, colourful and absolutely delicious聽Octopus in Tomato Sauce聽make a comforting and warming stew on a chill and rainy Spring day --these happen! Happy Monday!
Ingredients (serves 2):
3 bay leaves
1 heaped teaspoon coarse sea salt
700 grams/1.5 pound fresh octopus tentacles, rinsed
3 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 small hot red chili pepper
half a dozen large leaves聽Garden Basil
1 onion
half a small courgette, rinsed
1 tablespoon Modena Balsamic Vinegar
4 small, ripe tomatoes, rinsed
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 small lemon
1 teaspoon caster sugar
2 tablespoons聽Chili and Herb Oil
a small bunch fresh聽Parsley,聽Chervil聽and聽Chives
Place bay leaves in a large pot. Cover with water and with a lid, and bring to the boil over a high flame. Stir in coarse sea salt until completely dissolved, and then plunge in the octopus tentacles. Reduce heat to medium, cover with the lid, and cook, about half an hour.
Meanwhile, heat olive oil in a large pot over medium-high heat.
Add dried thyme and oregano, and fry, 1 minute.
Thinly slice red chili and stir into the pot. Cook, a couple of minutes more. Finely chop聽Garden Basil, and stir it in.
Peel and finely chop onion. Stir into the pot, and cook, 3 minutes, until just softened.
Dice courgette, and add to the pot, coating in herbs and oil, 3 minutes more.
Deglaze with Balasamic Vinegar. Cook out, 1 minute.
Dice and roughly chop tomatoes, and stir them into the pot along with their juice. Season with fleur de sel and black pepper. Thoroughly squeeze in the juice of the whole lemon.聽
As the mixture comes to a boil, gradually stir in about 1 1/2 cup of the octopus cooking water. Once boiling, reduce heat to medium, and simmer, until slightly reduced. Keep hot over a low flame.
Once the octopus is cooked, lift out of its cooking water (keep it for fish or seafood soups or stews, or risotti...) and place onto a cutting board. Allow to cool slightly, before cutting into generous chunks.
Heat a large frying pan over medium-high heat. Add Chili and Herb Oil. Once hot, add octopus chunks and saut茅, a couple of minutes.
Finely chop聽Parsley, Chervil and Chives聽and add half to the octopus. Saut茅, a few seconds more, before stirring into the tomato and courgette sauce.
Serve Octopus in Tomato Sauce hot, sprinkled with remaining chopped聽Parsley, Chervil and Chives, and聽Parmesan Polenta. A light and crisp dry white wine, like a Pinot Grigio or a C么tes de Gascogne, pairs beautifully with it!
