She loves the swings, the gloomy weather and screaming songs out on night car rides. She loves stealing hoodies and jumpers, if yours is missing, you'd know she has it. She adores the cosmos, starry nights and talking hours about how much she likes that one song. Don't call her chubby or fat, she would skip meals again. Don't call her annoying or chatty, she goes silent and you'll hate how loud her silence can be. She often cries her to sleep so send her a song or two, music is her love language. Recite her poems, annote paragraphs from her book and you'd find her zoned out because she was focusing on your voice than the words. Don't be all sweet with her, she likes it when you retort with a better comeback. She would get on your nerves and sometimes you'd just want to leave but don't do that, she wouldn't ever befriend anyone again. I lost her like that, don't do that to yourself because she's not the girl one would fall in love with but she's also not the girl one would forget- I hoped someone else would write this about me and not myself. I'm not the kind of girl you'd fall in love with anyway."

Ingredients For the Biryani Masala:
2 medium sized onions, sliced
6 - 8 green chillies
Mint leaves
Coriander leaves
2 tablespoons of ginger garlic paste
2 - 3 strands of javitri spice, also known as mace
5 black peppercorn
2 sticks of cinnamon, one inch each
3 cloves
3 pods of cardamom
2 tablespoons of oil
1 tablespoon of ghee
Ingredients For the Mutton Marinade:
½ kg mutton,
1 teaspoon red chilli powder
½ teaspoon turmeric powder
½ cup of curd
1 teaspoon ginger garlic paste
Salt to taste
For the biryani rice:
2 cups jeeraga samba rice
2 tablespoons of cooking oil
2 tablespoons of ghee
2 cloves
½ inch cinnamon stick
2 cardamom pods
1 bayleaf
1 tablespoon kasurimethi
Lime juice, prepared from a single lime
Salt to taste
Preparation
The preparation time is about 30 minutes, while the cooking of the biryani takes about 20 minutes.
Begin with the marinade
Marinating the lamb helps to flavour the meat even before the cooking process so that the meat absorbs the masala. It also helps to break down the toughness of the meat, making it easier to cook.
Wash the lamb well with several rinses of water. Cut the lamb into cubes, making each piece medium sized.
Choose a large deep vessel that you can use to mix together the various spices and lamb. Into this, add the masalas listed.
Mix the ingredients together well, and ensure that each piece of meat is evenly coated with the marinade.
Leave the marinade to rest for 30 minutes at room temperature, or in the fridge.
Prepare the biryani masala
Naati style mutton biryani is prepared with a characteristic green biryani masala which gives the biryani its unique flavour and look.
Heat some oil and ghee in a vessel and then add the spices listed in the biryani masala section of the ingredients to this.  
Next, add the sliced onions and fry well until the onions lose their colour.
Finally add the mint leaves and coriander leaves to this.
Remove from flame and allow the fried preparation to cool.
Place the cooled ingredients in a mixie jar and blend it well to a fine paste. You can add some water at this stage so that it blends well. Keep this masala aside as it will be used in your biryani preparation.
Prepare the biryani!
Naati style mutton biryani is traditionally prepared in clay pots, roasted over hot coals for hours together. Given our modern culture, you can use a pressure cooker for this preparation.
Take a pressure cooker and place it on medium flame.
Add 2 tablespoons of cooking oil and heat.
Now, add in the meat that you have marinated. Fry the meat for about 10 minutes.
Next, add sufficient water to this. We added about 3 cups. Add salt to taste and then place the pressure cooker lid and seal it.
Give the meat about 5 to 6 whistles so that it cooks to perfection in the cooker.
After the meat is done cooking, you can take out the pieces and separate it from the meat stock, which we will use later in the biryani preparation.
Next, we will prepare the biryani rice. This recipe uses jeeraga samba rice, which is short grained special rice that looks like jeera and tastes wonderful. Soak the rice and keep aside for about 10 minutes.
Take a deep vessel and place on heat. To this, add the oil and ghee.
Next, add in the dry spices and fry them well.
It is now time to add in the green masala paste to this. You will know when this has cooked well as you will see the oil begin to separate from the masala.
Now, you can add in your cooked mutton pieces and mix well into the green paste.
You can add in the soaked rice to the vessel. Mix well.
Add in the kasurimethi at this point.
We will now take the mutton stock that was prepared from the cooking of the mutton. This will flavour the biryani rice.
You need to add three cups of the mutton stock for every 2 cups of rice.
Add in some salt according to your preference.
Next, add in the lime juice and mix well.
Seal the pressure cooker and allow for two whistles until the rice is cooked to perfection.
Your biryani is ready to be served!
Tips
Just as it is done in traditional naati style hotels, serve the biryani with onion and curd raita.
A boiled egg nestled within the biryani is a treasured part of an authentic mutton biryani. Boil an egg separately, peel the shell and then place as you are serving.
Serving the biryani on the banana leaf adds to the aroma of the biryani.
