Day 153

I had insomnia last night and after getting out of bed around two a.m. and reading, I didn’t fall asleep until about three-thirty a.m. My mind would just not surrender. And I know what it is. School. It’s a comin’. I have about one week left of my summertime freedom. I’m going to soak up every minute. Maybe I was also thinking about our upcoming camping trip on Wednesday, what to pack, the anticipation of seeing the ocean. It will be grand.

In my restlessness last night, I was also thinking about my Fig Newtons, but I’m not really calling them Fig Newtons, as my cookbook, Flour, calls them. What I made is really more like a rectangular galette, with a too-crumbly dough. I messed up on the dough this time. I left the butter out too long, intending to just get it to room temperature; it became much too soft, but I made the dough anyway. I reasoned, I waited so long for the butter to get to room temp, and I want to make those Fig Newtons....today! I made the jammy center and the dough yesterday. I assembled it all and put it in the fridge overnight.

This morning, I popped it in the oven and waited for it to bake while enjoying my coffee in my fabulous swing chair (no mosquitoes.....maybe the wind sent them away) and reading a New Yorker article about how the virus has been controlled in China (by Peter Hessler, a former Peace Corps Volunteer). When I came back into the kitchen after 30 minutes or so, it smelled divine. There is little that smells as wonderful as pastry baking in the oven. Especially in the morning.

Here are the fresh figs that I found at Trader Joe’s:

I had my first fresh fig in Macedonia when I was also a Peace Corps volunteer, living in my host family’s home. My host mother made a jam called smokvie from the figs off of their own tree.
