Going coarser while increasing extraction Hey,I've recently watched some Lance Hedrick and read Johanatan Gagne. They both mentioned that the finer you grind the more chances of not only overextracting, but of extracting bitter compounds usually hidden somewehere in the bean. So what they were pointing to was going coarser than your usual grind while doing other stuff to increase extraction (more smaller pours instead of one big one, more stirring / swirling / wet WDTing, higher temp et al.). Seems like an exciting idea to try - try to extract as much as possible while keeping the bitter compounds away from the brew. I'm gonna test it, and here I'm just letting you know of this idea.
