PARIS, Feb 21 ― The World’s Best Restaurants ranking has honoured Japanese chef Natsuko Shoji with the title of “Asia’s Best Female Chef 2022”. A distinction that not only draws attention to the need to highlight women chefs, but also to women chefs of Asian origin in this professional environment, who rarely get the same visibility as their male colleagues.
In 2015, chef Vicky Lau, head chef of Hong Kong restaurant Tate Dining Room, was awarded the title of Best Female Chef in Asia by the World’s 50 Best Restaurants ranking. To announce this news, French-language blog Food & Sens, from the Pourcels, two chef brothers, wrote in the introduction to its article “She is a bit of an unknown entity among chefs, but if she received this title, we imagine that it is because she deserves it... let’s try to find out a little more about her... in any case, we can say that she already deserves a prize for her looks...”.
A statement that not only puts its foot in its mouth but that reveals much about how women continue to be perceived in the industry; female chefs find themselves in the position of demonstrating that their success is not down to their looks, but to their talent and professionalism.
The proof is in the pudding: Vicky Lau, who has become a true reference in fusion cuisine blending Chinese flavours and French techniques, was awarded two Michelin stars in 2021. In an interview with the South China Morning Post, this alumnus of the internationally renowned Le Cordon Bleu institute indicated that there is a long way to go to achieve parity in the male-dominated culinary world.
Another leading chef in Hong Kong, Peggy Chan, one of the first to offer vegetarian haute cuisine in Hong Kong, revealed to Chopstix & the City that “Unfortunately, there’s only a very rare breed of women who are capable of making it through the hours, the screams, the heat and physical pain, the sexist comments, foul language and very often feeling belittled.”
The place of Asian women in the kitchen is complex. In China, “they are still considered pillars of the family,” said DeAille Tam last year when she won the Asia’s 50 Best Female Chef award. “There are certain expectations of how much time they need to spend with the family and sacrifices have to be made,” said the chef who runs the gourmet restaurant Obscura in Shanghai.
The struggle for recognition of female chefs in Japan
In Japan, too, the task is difficult for women who want to succeed in professional kitchens, especially behind the counter of a sushi restaurant. In the Land of the Rising Sun, where the preparation of these bite-sized seafood dishes is a true culinary art, the idea “that women’s hands are too warm to keep raw fish fresh, or that their periods alter their sense of taste,” persists even among sushi chefs, and prevents many women from being seriously considered for the job, AFP correspondent Natsuko Fukue found out. The share of women who have managed to become sushi chefs in Japan is less than 10 per cent, although there is no official data.
This disparity when it comes to female chefs in the top eateries in Japan can even be spotted in the list of the 22 top starred women chefs in Asia, drawn up by the Michelin guide in March 2021. Only three Japanese women chefs are listed. Only one of them runs a restaurant dedicated to kaiseki cuisine, the traditional Japanese gastronomy that is executed around small portions including broth, sushi, sashimi, steamed vegetables. This is Akemi Nakamura, who heads up Nishitemma Nakamura, located in Osaka.
The awarding of the title of best female chef this year by Asia’s 50 Best to Natsuko Shoji is therefore not insignificant. The chef, who has already hosted stars such as David Beckham and famous artist Takashi Murakami in the past, has already been lauded with the title of best pastry chef. She runs a gastronomic dining establishment in Tokyo called Eté (French for summer), where she maintains a close connection between cuisine and the fashion world with creations that are jewel-like.
The chefs that paved the way
Compiled by Debbie Yong, editorial director of Michelin’s digital strategy in Asia, the “list” of 22 influential women chefs reveals a trend: more women chefs from Thailand and South Korea are in the spotlight. Some of them have paved the way by making their mark with a certain culinary style or even a whole new vision of food.
In Thailand, Supinya Junsuta, who is often called by her nickname, Jay Fai, the name of her food stall, is famous around the world because she managed to obtain a Michelin star in the Thailand guide with culinary repertoire of street food.
But it’s neither her unique recognisable look with aviator goggles nor her age of 76 that is the main reason for her popularity. Visitors and locals alike are willing to wait hours for her crab omelet. Just watch the episode featuring her in the documentary series Street Food Asia, broadcast on Netflix, to understand the influence of this cook in the Thai culinary sphere.
In South Korea, it is Cho-Hee-sook who has strived for greater recognition of her native cuisine. First as a chef at the Korean Embassy in Washington, the woman who is often referred to as the “godmother of Korean cuisine” has been instrumental in promoting her country’s national gastronomic culture throughout the world, paving the way for a generation of young chefs.
“At the beginning of my career, it was very difficult to try new things ― breaking away from tradition was discouraged. But as time went by, Korean food started to fuse with Western food, and modern Korean cuisine started to rapidly spread, led by the globalization of Korean gastronomy,” she told Asia’s 50 Best, on the occasion of being named Asia’s best female chef in 2020. Happy Tuesday, dear readers! Time for more 1-A bonding time with Mei and Dark Shadow in the mix. ^____^ Let's get to it!
Warning for teasing. A minor one from ["Good idea..."] to ["See? Told ya..."] to the point I'm not sure it needs it but just in case. Second is the paragraph starting at {Red bloomed on his freckled cheeks...] but the next one is fine. Third from ["Uh oh, Izuku..."] to ["Well, you two..."] and after that is fine.

If you skipped the teasing. The first minor one was just Hitoshi teasing Ochako for being hungry and her stomach grows. The second is Mei being Mei and embarrassing her best boys that not even Hitoshi is immune to. Third, Hitoshi is teasing Mei for being 'friendly' towards Tenya. ;) While also joking that Izuku and him were being replaced but Mei was all 'hell nah, son'.
Class 1-A has officially been introduced to Mei! And she finally got to apologize to Tenya. Their even on a first name basis now along with the others in the regular lunch group! :D I had originally played around with all of 1-A being on a first name basis in this chapter but changed my mind because it felt forced. Plus, they've only just met while the seven regulars have spent more time together. Also, Tenya...good luck to him for offering to help Mei with her babies. XD
Mei is learning more about friendship and is missing her Hero-kun. But I didn't want her to be alone in 1-H. The ones who approached her were the among the ones who had Izuku's back after the award ceremony. They may not become the best of friends but they're going to be trying to include Mei more. Though that's mostly going to be in the background.
My personal MVP in this chapter is Dark Shadow because Dark Shadow is adorable and I love him so much. If anyone has any fun Dark Shadow ideas, lay them on me! Because I want Dark Shadow to have a presence in this fic because the spirit may be part of a quirk but it does have a personality of its own. Also it is canon that Dark Shadow gets pets like when Uraraka did after Midoriya learned they were in fourth place and was crying a geyser of tears. Dark Shadow was even blushing! :D Such an adorable sentient shadow.
Fun Facts About Japan:
I typically like to connect the fun fact with the chapter but I couldn't think of a particular one for this one. So we're just going to talk about school lunch in general. A typical school lunch consists of a carb, protein, vegetables, soup, milk, and sometimes an extra side. For the carbs, it's typically white rice but also was sometimes fried rice or some sort of pasta. The proteins typically was various fish but they would also have beef, pork, or chicken cooked in different ways. Sometimes super special like for the last lunch before winter break my area would serve a whole baked chicken drumstick as a special end-of-year/Christmas treat. They also would do egg omelets or tamago yaki ( 卵焼き , たまごやき ) which literally translates to fried egg and are actually slightly sweet in flavor.
Oh! Speaking of eggs, here's a random joke. How long ago did Japanese people start eating eggs? A long tamago! (You know 'ta-ma-go' like 'time ago'? :D What? I thought it was funny!)
For vegetables, they would typically be variations of salads. Most commonly with cucumbers, carrots, lettuce or cabbage, bean sprouts, etc. And often using sesame oil or goma abura ( 胡麻油 , ごまあぶら ) for dressing. They would sometimes add shirasu ( しらす ) which are the super tiny fish that are popular in Japan. They would also sometimes add, -cough- ruin with -cough-, natto but thankfully that did not happen a lot.
For soups, it was usually miso soup. Shocker, right? XD But there were others as well. The one I found most entertaining is their alphabet soup. Reason being is because they call it ABC soup. ^____^ And sometimes when I would eat with the kids on days with ABC soup, they would start taking out letters to make English words on their plates. XD As for sides, they were sometimes fruit, bread, or little tarts. Or pudding, ice cream, or jello. Not every day but every once and a while.

stranger things season 3 was not only the best season of that show so far, but alongside good omens and always be my maybe was the best thing i watched this summer. let’s go team scoops troop
remember woohyun’s comeback? it was so great! so were the glimpses i got of his solo concerts. now what i really need from him is to get his cute butt to army and get it over with. please and thank you.
comebacks imminent for bolppalgan4, KARD, choa & way, AND AKMU OMG. i cannot describe my excitement for akmu’s return!!! and profound relief that yg’s implosion didn’t mean the end of my favorite baby geniuses. thank goodness chanhyuk is done with enlistment and we can get on with excellent music.
gbbo continues to be the most wonderful show ever made, and i am made of smiles while watching it. my early fave this season is michelle, followed closely by michael and helena. and henry’s tie. < *spoilers* > i never expected fig newtons to be featured as a technical challenge and am delighted by the pretentious silliness of it. thank god jamie’s gone what a nincompoop < /*spoilers* >
lee taemin has come into his own as a pretty amazing solo artist. kudos to his japan tour it was awesome. also he appears to have started an instagram solely for the purpose of telling his hyungs he misses them over and over. they in turn have been slobbering over him from afar, and sending him coffee trucks because minho is always doing the most. as for my thoughts on superm? well, i like many others thought the group was called “sperm” at first. frankly, that would have been a better name. avengers of kpop indeed. honestly... is any of this really... necessary?
f(x) ended with a whimper instead of a bang, which is the greatest injustice of our modern times. i pray my favorite girls will have nothing but success in their future careers now that they are finally free of sm. krystal too, assuming she leaves once her contract expires. i’ll never stop being mad about f(x). and i’ll never stop listening to their albums.
authors who write mpreg ending only in c-sections are cowards. nature designed baby humans to come out the same way they go in, so unless all male pregnancies ended in death for parent and fetus prior to the advent of modern surgical medicine, then you’d better damn well be writing some ass babies. this has bugged me for YEARS. get it together, fandom. (i read a lot of fic. i have opinions and i need to get them off my chest)
last month kim junsu became the mayor of seoul (wait. my sources tell me he only received an award from the mayor. unacceptable. JUNSU FOR MAYOR 2K19)
i’ve been rereading the harry potter series in full, not just bits here and there, for the first time since the books originally came out, and i still have so many emotions about these characters. also i am perplexed to discover that this time around draco malfoy is my shipping bicycle. that was definitely not part of my read the first time. 
fans of hala will be pleased to hear that the vet recently proclaimed her “the youngest 12-year-old cat he’s ever met.” still hale and hearty, still plucky as a kitten, still fluffy and cute as a button, still puking up hairballs approximately every 15 minutes. she may be an old lady, but she can’t discern the passage of time and so forgot to act geriatric.
myungsoo leaving woollim was a surprise. when hoya left it seemed like the most natural decision for him (even if his post-infinite activities were decidedly lackluster prior to his enlistment) (except for his high school dance team. that was transcendent). but myungsoo’s departure took me aback. i suppose it’s time, if he wants to only act from now on. but somehow i thought it wouldn’t happen until after enlistment was done for everybody. i experienced sadness. he’ll always be my pudding, and he takes my heart with him forever as he goes.
do this if you like veggie juice and bubbly things: mix vegetable (like V-8) or tomato juice 50/50 with club soda and squeeze a little lemon into it. 
jaejoong spent the summer giving love advice on a dating show. a real thing that happened in the real world. 
my nephews, aged 6 to 10, have started making movies in their backyard, with the eldest adding the sound effects and music. i was recently treated to a movie night starring four little boys in blanket capes battling an evil crow to save the kingdom. it had five parts. there was popcorn. i don’t think i’ve ever been more delighted.
nothing stays the same, but it’s alright. we’ll just keep swimming.

14th Annual Kim Possible Fannies Awards - Final Round of Voting
Hello and good evening to everyone in the Kimmunity.
Now that the first round of voting has come to a close, I am happy to tell you that we have approached the final round of voting. This is going to decide the winner of each of the 29 categories
Now, before the voting can commence, I need to go over a few house rules with y'all on this very important round of voting.
Rule #1) You can pick any category you desire, but you only get one choice per category. No more than that. Authors may vote on their own stories up to 5 categories.
Rule #2) You cannot split your votes.
Rule #3) You can submit your vote in either one of two approved methods
A) You can submit the form by PM to the Kimmunity Fannies fanfiction account (if you have an FFnet account) The link is here: https://www.fanfiction.net/u/2622561/KP-Fannie-Committee
OR
B) You can submit the form by an email to the Kimmunity Fannies Yahoo email account. The email address is [email protected].
You cannot, however, do both. It will screw up the system.

Master Director’s Daughter: It’s not fair only TRIGGER gets to be celebrated. So I wanted to mess it up, just like my birthday.
Sougo: …… What do you mean by magic bag?
Master Director’s Daughter: It’s a big bag Papa’s new coworker put in our garage, he asked us to keep it for him.
Master Director’s Daughter: There’s a lot of difficult instructions in it. But I’m used to computers, so I learned how to access it.
Master Director’s Daughter: Then, when I tried pulling a prank, the instructions told me how to do it and then I could write whatever I wanted and make it appear on TV.
Tamaki: A prank, you mean that news about King Pudding being discontinued!?
Master Director’s Daughter: Yes. The bomb was a lie, but there are detailed instructions on how to create breaking news about a meteor.
Iori: Is that… A special machine and instructions on how to hack master control’s work!?
Iori: It’s dangerous for you to have those things. Let us go, and give that bag to us……
Master Director’s Daughter: No!!
Tenn: ………………..
Tenn: You haven’t satisfied messing up our party?
Master Director’s Daughter: I haven’t……
Tenn: I see. But I don’t think you can be satisfied even if you continued.
Master Director’s Daughter: Why?
Tenn: Because you like us, after all.
Master Director’s Daughter: ………………….
Tenn: You won’t ask what love is to guys you hate, right?
Tenn: If you almost started to hate us, try to like us. We will definitely make you love us again.

Gaku: I heard from Mom. When I was a kid, we celebrated my birthday at that restaurant before.
Yaotome Sousuke: ………………..
Gaku: …… If that’s the truth, you should’ve told me.
Yaotome Sousuke: …… Your mother was raised in a small town with an impetuous personality. She always complained about the French cooking there.
Yaotome Sousuke: ‘The cooking time is so slow. Even a Soba just takes 10 minutes to be served,’ she said. Thinking about it now, we never got along from the start.
Gaku: …………….....
Yaotome Sousuke: …… However, it was a good memory.
Gaku: Hmph……
Yaotome Sousuke: I won’t take us to dinner again. You made friends with those brats without my permission and messed up the dinner.
Gaku: Thanks to that, you were saved by them, right? Anyway, I don’t care, we can have a party ourselves.

(1) *part 3 spoiler* do you know how much I cried at this line knowing yamato spent his young days not believing in anyone SOBS
(2) Freezing a CD can actually remove scratches on a CD. By placing a damaged CD into the freezer for several hours and then letting it thaw to room temperature on its own and removing any excess moisture afterwards will fix the CD. When small ice layers forms in the scratch, this will allow the laser to read the song normally and it basically won’t read the scratches anymore and play the CD like normal. (TBH I didn’t know this until Sophia told me hahaha thanks!)
(3) One arm shoulder throw is a judo/sumo move.

Author Interview with June Jo Lee & Man One
“Remix” is integral in Chef Roy Choi’s work as he uses food to remix culture and communities. What does remix mean to you and does it apply to your daily work?
JJL: As a food ethnographer, I think about “remix” all the time! Remix is now the culinary code for good and interesting food, not just in America but in the world. Remix represents a growing circle of empathy in which traditional walls between “us v. them” are cracking up and breaking down. We naturally express our remix identities and experiences by cooking and sharing foods we know and can imagine. As an immigrant, I am a “remix” of Seoul, Pusan, “Korea,” Texas, California, and “America.”  As a student of cultural anthropology, remix represents the concept of bricoleur which (I immediately fell in love with) means someone who takes whatever is on hand to mix-and-match and create their own identity, meaning and truths.  This is me. When Chef Roy Choi put Korean BBQ in a tortilla with Awesome sauce on a food truck and announced it on Twitter to the world, he was speaking to me.
M1: As an old school hip-hop head, REMIX to me means the fresh mixing of music or visual flavor and by flavor I mean style!  I have created many murals and pieces of art where I have taken something cultural or iconic from my Mexican culture and “remixed” it to make it relevant to a new generation. It’s a lot of fun to do but also a great way to pass on legacy to future generations of young people.

June Jo Lee is an immigrant from South Korea and Man One is a child of immigrants (from Mexico.) How does your family immigrant experience influence your work? 
JJL: An immigrant’s experience for me was source of my deepest suffering and greatest gift. I was awfully teased for my stinky food, my slanted eyes and my flat face in elementary school in Palo Alto, California. And, when I returned back to Seoul, South Korea as a third-grader, I was teased for my American accent, weird behaviors and not being a perfect Korean girl. I felt as though I didn’t fit in any which way, and so I escaped into books and the forest behind my house. I was very lonely and all alone. As I grew older, this “not fitting in” gave me the skills of adaptability, fluidity and empathy. I learned to see, hear and feel more deeply as a survival tool. And, I discovered cultural anthropology as a way of understanding me and my context in relation to others and their context. Anthropology led me to my profession as a researcher of food culture and a writer of food culture for kids. The books I write — I’m working on my next children’s book with Jacquline Briggs Martin — are based on deep ethnography of our foodways and diversity of ways of being in this world that I first experienced as an immigrant.  
M1: Being a first generation US citizen, I have a great sense of American pride as well as cultural pride with my Mexican roots. Although I was born here, my first language was Spanish. I grew up watching Mexican TV shows and sports, like Lucha Libre (Mexican wrestling), these things were very influential and I draw inspiration from them all the time. I also grew up watching American TV and movies which were also very influential to me. Coming from an immigrant family I feel 100% connected to two different cultures at the same time. It’s a very unique experience and I love celebrating it in my art!  
How does food play a role in your family traditions? 
JJL: I love cooking for my family. After a long day of researching, writing and emailing, I cook…with a glass of White Burgundy…and seasonal vegetables and some good meats. I cook from memory of all the dishes I have eaten and imagination of new possibilities of remixing flavors, textures and experiences. Sometimes I listen to an audiobook (right now I’m listening to The Sun is Also a Star). And I enjoy being in my senses, my heart, my thoughts, my feelings. I have cooked dinner for my family ever since my kids were born, so we all share this time in the evening, all back at home, sitting around the table, sharing food I have made. Sometimes we talk. Sometimes my husband cooks. Now that my kids are in college, we still share this time when we are together. Sitting down and eating family dinner together is expected, the norm in our family tradition.
M1: "Food equals family,” it’s that simple.  Most of my fondest memories of my grandparents were sitting around the kitchen table and helping in preparing large meals for the holidays.  The smell of beans cooking or chili’s being roasted on the stove top are forever engrained in my head. Mexican hot chocolate (champurrado) and tamales were reserved for Christmas time. Capirotada (Mexican bread pudding) and torrejas de camaron (shrimp patties) were only served on Fridays during the Lent season. I can go on for days about the food and our traditions!

As a Korean American author and Mexican American artist, what reaction do you get from children when you share your personal experience? What are the biggest surprises?
JJL: Kids today either have already tried kimchi (my “stinky food”) and love it, or they pinch their noses after I open a jar during my author visits. But, by the end of my book reading, they are all gathering around that funky jar, smelling and looking at the bubbles from the lacto-fermentation. My favorite quote is from a kindergartner in LA who asked, “why did you open that? It hurts me,” as I opened the jar. Afterwards she rushed up to have a closer look (and smell?). Another kindergartner boy who was Korean American asked me, “can you tie my shoe?” as his way to connect with me.  All the kids that day then got to eat lunch from Chef Roy’s Kogi Food Truck. That was a perfect day! 
M1: Kids love the book! They identify with the story so much and they love the graffiti style I brought to it, which makes me really proud. I knew many kids would really love it in LA, but I had no idea how deeply it would resonate with kids in so many other cities around the country! One of the biggest surprises is that many readers that I’ve met at book signings often think I’m the illustrator AND the chef! It must be the goatee I guess.
CHEF ROY CHOI marks the picture book debut for both of you (The book was co-written by Jacqueline Briggs Martin as part of her “Food Heroes” series.) What have you discovered working with teachers, librarians, and children?
JJL: I love teachers, librarians and children. They are the most open, curious, generous and weird cohorts I have ever worked with.  (As a former Austinite, “weird” is a good thing in my book). In my day job as a food ethnographer, I usually work with corporate types in casual Thursday attire. I like them too. But I love teachers, librarians and children because they are our future.  
M1: This book has opened up a whole new dimension to my career and put me in front of so many great people that I would’ve never met had it not been for this book. I’ve always enjoyed working with kids but I have a new found admiration for teachers and librarians. The work that these people do is so amazing and to know that my artwork is helping them facilitate the education of our next generation is just beyond words. I hope to create more books and stories that speak to all our kids, it’s such an amazing feeling to connect in this way.

She is also co-founder of publisher READERS to EATERS, with a mission to promote food literacy. Like Roy Choi, she was born in Seoul, South Korea, and moved to the United States where she grew up eating her mom’s kimchi. She now lives in San Francisco. Man One has been a pioneer in the graffiti art movement in Los Angeles since the 1980s. His artwork has been exhibited in galleries and museums around the world, including Parco Museum in Japan and the Museum of Contemporary Art, Los Angeles. He has painted live onstage at music concerts and festivals. He is also co-founder of Crewest Studio, a creative communications company focusing on contemporary global culture. Anyone for sushi KitKat?

Two years ago, KitKat’s marketing manager in Japan won an internal corporate award. His prize: a golden trophy shaped like one of the iconic chocolate bars.
Today, the manager, Ryoji Maki, doesn’t remember why he won the award. But he’s immensely proud of what it inspired.
“That’s how I came up with creating a gold leaf-covered KitKat,” he said. Before long, the chocolate wafer bars were on sale in Tokyo for about $18. “They were like an edible golden trophy.”
Maki’s creation joined a long, and ever growing, list of distinctive, fun or just plain weird KitKats found only in Japan. The country is a KitKat-lover’s paradise, with so many unique varieties--an estimated 300--that some travelers visit Japan just to try them.
Many flavors are alien to the American palate, and they go far beyond Japanese staples--such as sake, wasabi and green tea--and into uncharted territory: “French salt,” “college tater” and “Muscat of Alexandria.”
The 40-year-old Maki, like a Japanese Willy Wonka, has developed several varieties, such as Iwaizumi Yogurt. “It may seem as if we just want to develop weird flavors for Japanese consumers,” he said. “But the concept is really to diversify.”
The candy with the European pedigree went on to conquer Japan thanks to constant invention--blueberry cheesecake, cherry blossom and melon--and a linguistic coincidence that makes KitKats here a harbinger of good luck.
KitKat’s history dates to the United Kingdom in 1935, when the York-based confectionery company Rowntree introduced the bar--originally called “Rowntree’s Chocolate Crisp”--as the perfect complement to a working man’s cup of tea. In 1937, the snack was renamed “Kit Kat Chocolate Crisp.”
In the 1950s, the bar arrived in Canada, South Africa, Ireland, Australia and New Zealand; in 1973, it finally made it to Japan. (The Swiss food and beverage giant Nestle acquired Rowntree in 1988. Eventually, Kit Kat became KitKat, and it is now sold in more than 100 countries. It is licensed by Hershey’s in the United States.)
Yet the story of how Japan made the snacking staple entirely its own begins in 1990, in Hokkaido, Japan’s northernmost main island, known for its skiing, hot springs and beer. KitKat’s marketing team believed the island’s souvenir shops--in fact, souvenir shops nationwide--could stand to diversify their snack offerings.
“Wherever you went, you could only find rice cakes,” said Takuya Hiramatsu, a spokesman for Nestle Japan. “But people got kind of bored with traditional rice cakes.”
The company introduced a strawberry-flavored KitKat exclusively in Hokkaido--and after it took off, tried more limited-edition varieties. The more they introduced, the more popular the bars became. The KitKat makers leveraged local products into exotic flavors.
In time, exotic and strange KitKats began appearing all over, including on Honshu, the nation’s largest island. There, in Shizuoka prefecture, the candy-makers offered Tamaruya-Honten brand wasabi KitKats; in the Kanto region, adzuki bean sandwich KitKats; in Hiroshima, KitKats flavored like momiji manju, a locally produced pastry made of rice and buckwheat.
“I lived in Hiroshima when I was young,” Maki said. “So I knew people in Hiroshima love momiji manju so much--that it’s a soul food. I wanted to develop a business with that.”
The snacks live up to their packaging in bold, bright colors. Citrus flavors have a sharp, acidic twang; “matcha green tea” has bitter overtones; “Shinshu apple” tastes a bit like cider. The wasabi variety tames the heat in favor of flavor.
Nestle gives several reasons for KitKat’s success in Japan. Giving sweets as gifts is a national custom, and the country has deep pride in its local culinary traditions and industries.
Not least, the chocolate bar’s English name is a cognate--it sounds like kitto kattsu, which means “you will surely win,” a sort of good luck blessing. Nestle leveraged the association into huge sales. In 2009, the company created “KitKat Mail,” a partnership with Japan’s postal service that allowed students to send KitKats as good luck charms before the country’s high-pressure January university entrance examination. Some KitKat wrappers contain blank spaces for students to scribble in heartwarming messages.
In March 2011, after an earthquake, tsunami and nuclear disaster devastated a swath of Japan’s Pacific coast, people sent KitKats to the region, appending the message: kitto fukkyu kanau, or, “you’ll surely recover.”
Nestle says KitKat sales in Japan have risen 50% between 2010 and 2016, and this August the company opened its first new manufacturing plant in Japan in 26 years to keep up with local demand. The company develops 20 new flavors every year, and replaces flavors on convenience store shelves every two months. “That’s how the cycle has been ever since strawberry,” Maki said.
This year, a new KitKat specialty store in Tokyo’s ritzy Ginza district--called Chocolatory--established the chocolate bar as a premium brand. Chocolatory has sold “orange cocktail noir” and “Sakura green tea,” containing cherry leaf extract.
The store, which also sold Maki’s gold leaf bars, once offered a limited-edition that was distinctively Japanese--sushi KitKats. No tuna, no mackerel. Just fun-sized bars with KitKats (pumpkin pudding, Hokkaido melon, raspberry) laid on puffed rice and wrapped in seaweed.
