Hyderabadi Chicken Biryani in Greater Noida

August is a month of festivity and celebrations for all of us.First it was Rakhi pornima, then Janamshtami, and then soon will be Eid this weekend concluding holy Ramzan, rigorous fasting period.And today it’s our Independence Day. I really don’t know what independence means to all of you. Independence from slavery or colonial influence or perhaps any other such means or shouting out slogans, updating FB profile, Tweeting messages or wishing each other “Happy Independence”.
I have never ever understood the propagnda that surrounded this celebration, one day we are so excited and wear our Indian pride on our sleeves and the very next day we start nagging about everything going wrong in the country. Who to blame and who should take responsibility. Freedom comes with responsibility. But we are always shy of sharing our responsibility. For a change let’s start sharing our responsibility, from a very basic level.
We are free but yet not free, there is may be many more miles to cover. Anyways if I keep on saying more, you all will be saying here are the words of this NRI- “non-reliable-Indian”. But just look around and you will see such drastic paradigm, high rise building, BMW on one side and slum and poverty on other side. This perhaps says we have become free and independent from a foreign rule but yet we are not free.
While I am typing this post my son came to me and showed above flag which she colored and sketched, and asked me do you know the meaning of "three colors" on the flag. I counter asked her if she knows it. This is what she told me – "orange for courage, white for peace, green for prosperity and the wheel is for the development of the nation." And a clean sparkling glitter in her eyes. Our nation’s future rest in these innocent hands. I think when I said start from a basic level, I meant that, giving them good education (that doesn’t mean scoring good marks in exams- education and scoring marks are two different things, lets just leave it for some other day) and make them conscious of their surrounding and making them responsible citizen so that they can share the responsibility of running a nation on grounds of equality, compassion and truthfulness.
Now to the recipe that the best biryani restaurant in greater noida uses
Hyderbadi biryani has been on my mind since long; perhaps somebody even did a recipe request by mail or was it in a comment section. I completely forgot about it, last weekend we did made this. And since I do not belong to Hyderabad region I can not claim it to be authentic or traditional. I sneaked peaked into my pantry and looked for shyah jeera or royal cumin – actually it’s cumin with very distinct aroma not to be confused with "caraway". I didn’t had so, got little upset. The only missing ingredient was this I guess. And since we Bengalis are so fond of our panch phoron, I added this to the home-made Biryani powder. Now puritans of Hyderabadi cuisine, I know it’s not the ingredients that go into making Biryani, but since this is a customized version, I would like to use that liberty and today its Independence Day also.
Here is how they make Hyderabadi Chicken Biryani at EDigest Foods
Hyderabadi Chicken Biryani – Customized Version
Recipe requirements( Measurements are approx)
3 cups of high quality basmati rice (I use Kohinoor X-long Basmati Rice)
7-8 chicken drumsticks
2 cloves
Little cinnamon
1-2 cardamoms
5 tbs of coriander seeds
3 tbs of cumin seeds
2 tbs of panch phoron
1 twig mint leaves or about 8-9 leaves
6-7 dry red pepper the small ones
8-10 whole black pepper
½ inch cinnamon stick
3 cloves
4-5 cardamoms
Pinch of nutmeg
1 strand of mace
1 large lemon and the juice from it
2 tbs of yogurt
1 tsp of salt
1 large and 1 medium size white onion/purple onion whatever is available
5-7 garlic
½ inch ginger root
4 tbs of cooking oil/sada tel
1 cup finely chopped mint leaves
½ cup finely chopped coriander leaves
Two generous pinch of saffron soaked in half cup of milk
1 large onion for deep frying
2 tsp of cooking oil
Method
Bring a pot with above listed garam masala ( gota moshla) and ample water to boil, now add in the basmati rice and cook till it’s ¾ done or better half done. Strain the starch. Our rice is partially cooked in this yakhni water- aromatic water. Keep it uncovered so that the moisture can escape.2 tsp of lemon juice should be added to further reduce the cooking. And also 1 tbs of ghee.
For the chicken
Clean and pat the chicken dry with kitchen towel.
Now prick with fork or the pointing end of knife all over the chicken drumsticks.
Now marinate the chicken with the juice extracted from 1 large lemon, and 2 tbs of yogurt+1 tsp of red pepper powder+ 1 tsp of salt. Keep this marinated for overnight. If you forgot to marinate them overnight then at least 2 hr of marination works best.
Meanwhile the chicken is marinating, prepare the dry masala that will be added to cooking the biryani.
 Dry Biryani Home-made-masala
Recipe requirements
5 tbs of coriander seeds
3 tbs of cumin seeds/Shyah Jeera/black cumin seeds
2 tbs of panch phoron
1 twig mint leaves or about 8-9 large leaves
6-7 dry red pepper the small ones
8-10 whole black pepper
½ inch cinnamon stick
3 cloves
4-5 cardamoms
Pinch of nutmeg
1-2  flower of mace
2 bay leaves
Start roasting them over low heat on an iron skillet. After 4-5 mints a nice aroma will hit your nose. Take it off and then let it cool a little bit.Now grind them very finely in blender or mixer.
This masala is the base masala or the biryani masala.
If you are making kache-gosht ka biryani then no need to precook the chicken but overnight marinating with yogurt+lemon juice+red pepper powder+salt+ this Biryani masala + the ginger/garlic and onion paste is essential as this tenders the marinated meat.
Otherwise like me who keeps forgetting to marinate the meat, it’s better to precook the meat a little bit before layering is done.
Now for the gravy
Recipe requirements
1 large and 1 medium size white onion/purple onion whatever is available
5-7 garlic
½ inch ginger root
4 tbs of cooking oil/sada tel
Make a smooth paste of above listed ingredients in a blender
Now heat up a big frying pan. Add in 2 tbs of cooking oil
We will first fry the chicken pieces till the entire chicken pieces gets evenly brown or the color changes.
Now add rest of 2tbs of cooking oil
Add the prepared paste, and then add in 1/2 tsp of red pepper powder and salt. Sprinkle little bit of water so that the paste doesn’t stick to the bottom.
Keep on frying the masala for 7-8 mints at medium-high flame. Now add in fried chicken pieces
And keep on frying further 10 mints. Cover it and then put the flame to low. Let it cook another 15 mints.
Meanwhile chicken is cooking at low. Fry the onion which will go with the layering
Heat up a small saucepan adds in 1 large onion sliced evenly. Keep on frying till they shrink. Now add in 1 -2 tsp of cooking oil.TIP- This way the oil required for frying onion can be reduced.
Chop mint and coriander leaves very finely.
Now bottom layer will be of rice. Then will come some pieces of chicken with gravy then mint+coriander leaves, then generous amount of saffron milk and last will be fried sliced onions.
Make another layer with similar ingredients and then cover with left-over half cooked rice.
Cover with aluminum foil. Bake this entire rice casserole for 20 mints at 175 deg C.
Turn off the oven and let it sit there for further 10 mints.
Take out and let it covered further 20 mints.
Let this biryani absorb the flavor, and at the time of serving just reheat in oven again.
Resting time is essential as it helps in more intense flavor. And it’s even more flavorful next day if you have some left-over.
Notes
The measurement of dry home-made biryani masala is approx, and I did have some left-over biryani masala which I like to add in other veggie recipes from time to time. This dry masala woks great even if you do not have other dry masala in home viz- coriander+cumin or garam masala powder. So, left-over dry biryani masala can be used in other recipes as well.

Patty and Bun, our oh-so-familiar Sunday sofa BFFs, have launched Sidechick - a rotisserie chicken and sides takeaway and delivery service. The chicken comes in three marinades - lemon, butter, and herbs, za’atar, and piri piri - along with sides like crispy potatoes and smoky aubergine with labneh. It sounds good because it is good.

If you’ve been dreaming of waking up to a bacon and egg naan then you’ll have to wait a little longer. Breakfast isn’t yet on the menu of Dishoom’s new delivery service, but that chicken ruby is. And you’re lying to yourself if you think you wouldn’t eat that for breakfast. Delivery is from their Shoreditch, King’s Cross, and Kensington branches, and you can check if you’re within range here.

When we reviewed Flor in 2019, we said that if there was better cakes in London than their brown butter creations then we were yet to try them. Hoppers East (might just want to amend the existing caption) Hoppers has been among the very best places in town to eat delicious Sri Lankan-inspired things ever since their first spot opened in Soho. You should definitely get involved with their bone marrow varuval, and the black pork kari. But honestly, anything you get delivered is going to make you very happy.

Hame is a delivery and collection-only menu developed by Adam Handling and the team at The Frog. Whether you keep things relatively simple with sourdough and chicken butter and a pheasant pot pie that serves four to six people, or go all in with a wagyu beef tartare and a whole lobster, everything comes with full instructions for serving at home. Endo was our highest rated new restaurant of 2019, and while the 18-course omakase we’d usually recommend isn’t being served right now, you can order a premium bento box which they’re delivering throughout London. Keep an eye on their Instagram and then act quickly because they sell out fast, with a share of the proceeds going to Hospitality in Action.

Naughty Piglets is a brilliant neighbourhood spot serving some great food and wine in Brixton. They’re only doing 40 covers a day, which means if you like the sound of dishes like BBQ pork belly with XO rice and Korean sauce, you’re going to have to keep your eye on their Instagram and place your order for the following week. And you’re going to need to move fast.
Crispin ££££ White's Row
Crispin’s an all-day restaurant in Spitalfields, but they’re limiting delivery to to breakfast and brunch for now. Options range from scrambled eggs with Berkswell on sourdough to daal, purple kale, and black turnip pickles on flatbread. They’re also delivering coffee. Order here.

Almost the whole Din Tai Fung’s menu is now available for delivery, from their special noodle soup with braised beef through to wontons and steamed buns. Sadly the xiao long bao aren’t on the menu for now, but their shao mai, jiao zi, and steamed buns are all available in a number of varieties.

The London branch of steak restaurant Le Relais de Venise is famous for only having one option. It’s always been like that. You get steak. You get special sauce. You get french fries. The cha shao pork belly rice box is particularly mouthwatering and we’re happy to report that their famous fried chicken travels well. Very well.

The Persian spot in Soho is opening kitchens across north, south, east, west and central, to ensure that large swathes of London can enjoy their jujeh kebabs and oh-so-smooth hummus in the comfort of their own home. Check their website for details where you are.

Leroy has moved some letters about in its name (and yes, added one more) to launch Royale, a new rotisserie chicken delivery service. Half a juicy chicken, seasoned with their own blend of herbs and spices, will set you back £12. Or a whole bird with potatoes and salad to share is £38. There’s a cod’s roe side and dips like roast chicken aioli too.

Barbecue-season is incoming, and there’s no better place to get inspiration from then Smokestak. The Saturday-only takeaway and NE London delivery service features their famous brisket, pulled pork, spicy sausage, and more. It isn’t related to this Chelsea fishmongers and restaurant, but we thought you should know it. Option one: call your ex and say something along the lines of ‘so like, lockdown. Mad isn’t it? Would you be interested in marrying me for a bit?’. Option two: call 020 7724 4545 to order grilled octopus and suckling lamb shoulder from Lurra. We know which one we’d pick. This top Spanish spot in Marylebone is also delivering meat, cheesecake slices, and wine across London from their online shop.
Hakkasan ££££ 17 Bruton St
No, you’re not going to put some raw tuna on a seaweed crisp and call it dim sum. Order from high-end Chinese restaurant Hakkasan in Mayfair instead. There’s a whole Peking duck. There’s a classic steamed dim sum selection. And there’s a champagne brunch for two that’s got ‘Welcome to your isolation birthday babe’ written all over it.
Iberica ££££ 89 Turnmill St
Eating a whole leg of ibérica jamon for breakfast? Do it. The rulebook went out the window around minute six of lockdown. As well as that casual leg of jamon, Spanish restaurant Ibérica are delivering other cured meats, artisan cheeses, and frozen wild Atlantic peeled prawns from all four of their London restaurants. Frozen octopus leg? Yup, they’ve got that too.

Fried haddock sandwiches are basically the fish finger butty glow-up we never knew we needed. Crispy baby squid is now what we call our flatmate after they spent a little too much time out on the balcony during the good weather. But, importantly, it’s also one of the tapas dishes you’ll find on Arros’ delivery menu. They specialise in paella, there are several variations to choose from, as well as grilled octopus and plenty of wine.

We have three words for you. Crispy. Prawn. Maki. Fitzrovia’s sleek and sophisticated Japanese spot, Roka, is now bringing their spicy tuna maki, salmon fillet teriyaki, kimchi steamed rice, and more, to you. There are also plenty of wines and sake to get involved in.
 Melabes £ £ £ £ Mediterranean  in  Kensington ££££ 221 Kensington High Street
Melabes is a cool and casual Kensington restaurant that specialises in traditional Mediterranean and Middle Eastern food. Basically, if it goes with tahini it’s on their menu. Open seven days a week, they also have kids options, beer, and super smooth hummus. In case we weren’t clear, order the hummus.
 The Compton Arms £ £ £ £ British ,  Pub  in  Islington ££££ 4 Compton Avenue
There’s something uniquely disappointing about homemade burgers. Or at least there is with ours. Which is why it’s an enormous relief to know that Four Legs are making their cheeseburger for delivery and collection from The Compton Arms. It’s available between 6pm - 10pm daily and if you’re in the delivery zone and want something meaty to your door, then slide into their DMs.

Wine bar and small plates spot Top Cuvée has rebranded itself as Shop Cuvée and is offering a range of different food and drink options on their website. There’s a set meal for two for £40, a load of beers and wine, and more.

1251 have started a new delivery service called Around The Cluck, and they’re delivering their jerk chicken, cauliflower, and more. You can order online.

If you’re looking for classic, home-style Indian dishes like chicken tikka masala, palak paneer, and lamb korma, you’ll be hard-pressed to find better versions than the ones at Al-Noor. Located right off the 405 in Lawndale (about five minutes from LAX), this strip-mall spot is currently offering both takeout and delivery on most major delivery platforms. Be sure to throw in some garlic naan as well.

Located just a few blocks north of Al-Noor (and also Zam Zam Market), Al-Watan has found its niche on this highly competitive stretch with its mixed tandoori. Plain and simple, this is the best version in town and once you try it, you’ll wonder why you’ve ever eaten it anywhere else. With five locations spanning from Los Feliz and Westlake Village, Anarbagh has become its own mini-empire in LA and for good reason - the food is excellent. Anarkali Indian Restaurant $$$$ 7013 Melrose Ave
If you live in the Melrose/Fairfax area, Anarkali has probably been your go-to Indian spot for a while. If you don’t live around there, it’s time to make it your go-to spot, because the food is that good. The matar paneer is one of our favorite paneers in LA, second only to their paneer coconut curry. Badmaash is one of the most popular Indian restaurants in Los Angeles and it’s easy to see why - the food is fantastic. With a menu that features dishes like chicken tikka poutine, chili cheese naan, and masala potato fries, this isn’t traditional Indian food by any means, but it’s also some of the most inventive in town. Both the Downtown and Fairfax locations are open for takeout and delivery.
 Bhanu's Indian Grocery & Cuisine $ $ $ $ Indian  in  San Gabriel $$$$ 7246 Rosemead Blvd 7.9 /10
Bhanu’s is a family-run Indian grocery store in San Gabriel with a tiny counter in the back that’s cranking out tremendous home-style Indian food. You can order anything a la carte, but we prefer the thali plate. One entree of your choice, plus two sides, yogurt, rice, and garlic naan - all for about $12. Both takeout and delivery available.
 Biriyani Kabob House $ $ $ $ Indian ,  Bangladeshi ,  Pakistani  in  Koreatown $$$$ 3525 W 3rd St 8.4 /10
This tiny Pakistani/Bangladeshi restaurant in Little Bangladesh is one of those places we often think about late at night (and not just because we’re very lonely). From Hyderbadi biriyani to lamb shank curry to spicy nali nihari stew, this is complex, flavor-packed food - and it’ll only take only one meal here before you also partake in said late night fantasies. You might think that an Indian fusion cafe inside a gas station is a fairly niche concept, but it’s actually the first of two on this list. As the name suggests, this tiny West LA spot is all about the frankies - Indian wraps from Mumbai. Fillings include everything from chicken tikka masala to saag paneer to fried fish. Takeout and delivery available on most major platforms.
Cardamom Indian Cuisine $$$$ 7233 Beverly Blvd
Cardamom is one of the most underrated Indian restaurants in central LA, with an excellent menu that focuses primarily on dishes from the southwestern state of Kerala. Located on the second floor of a giant Brentwood office building, India’s Oven is a longtime neighborhood standby with an array of very good vegetarian dishes. The channa masala, dal makhani (lentil-based curry), and aloo gobi (spiced cauliflower) are all stand-outs. Takeout and delivery available on most major options.

India’s Restaurant is located on the Los Feliz/Silver Lake border and has built an almost cult-like following over the years. Like many places on this list, this family-run restaurant sticks primarily to classic dishes, but does them all incredibly well. The lamb vindaloo is a favorite.  IndiMex Eats $$$$ 1106 N Cahuenga Blvd
This tiny Indian/Mexican fusion cafe inside a Hollywood car wash is about as LA as it gets, but it isn’t just a gimmick - the food is good, too. The menu is full of classic Indian dishes, but IndiMex’s strength lies in the “Meat Lovers” section, where you’ll find chicken tikka burritos, quesadillas with masala sauce, and tacos covered in chutney. If you’re looking for good Indian food in Studio City, Lal Mirch is our favorite in the neighborhood. The colorful, family-run spot on Ventura has every staple in the book and everything is currently available for takeout and delivery.

Located on Venice Blvd. in Culver City, Mayura often gets overlooked, but this family-run spot continues to serve some of our favorite Indian food in LA. The menu is massive, so concentrate on the Southern Indian specialties like Kerala fish curry, cheese uthappam (rice pancake), and the Kerala special avail (curried vegetables). Samosa House $$$$ 11510 W Washington Blvd
Open since 1979, Samosa House is an LA classic and its original location in Culver City West makes it convenient for just about anyone on the Westside. Their entire menu is available for takeout and delivery, but if you’re looking to pick-up some ingredients to cook at home, Samosa House also happens to be home to Bharat Bazaar, one of our favorite Indian grocery stores in town.
