Like most folks, it’s frugal January where tax bills loom for those of us self-employed and where lots of us are feeling the pinch of the new year. I quite like making the pennies go a bit further and so today I made some delicious broccoli, kale and Stilton soup using the left over Christmas cheese and chicken stock I made from a leftover roast carcass.
