Hasselback Potatoes
Chef’s Note: Glorified baked potatoes, but it feels novel to eat. Also I really like the topping (cream cheese and everything bagel topping)

Ingredients
Potatoes
4 large russet potatoes
2 tbsp extra-virgin olive oil
1 garlic clove, grated/minced
Kosher salt
Toppings
4 tbsp cream cheese, softened
1/4 cup boiling water
1 tbsp sesame seeds
1 tbsp dried onion flakes
1 tbsp garlic powder
1 tbsp poppy seeds
(opt.) Sriracha or hot sauce
(opt.) Diced red onions
(opt.) Freshly chopped chives
Instructions
 Potatoes
1. Preheat the oven to 425°F.
2. On a cutting board, place a potato lengthwise between two chopsticks. Cover the chopsticks with a paper towel to protect them. Partially slice each potato into 1/8”-thick slices, making sure not to cut all the way through by using the chopsticks as a safety guard.
3. Place cut potatoes on a large, foil-lined baking sheet.
4. In a small bowl, whisk together oil and garlic. Brush half the garlic oil mixture all over the sliced potatoes. Season each potato with salt
5. Bake potatoes for 30 minutes.
6. Remove potatoes from the oven, then carefully fan out the slices by gently squeezing while twisting the potato with just your index finger and thumb. Brush remaining garlic oil mixture onto the potatoes, making sure to brush in between the slices.
7. Continue baking for 40 minutes more, until potatoes are completely tender and the slivered tops have bloomed outward and turned crispy and deeply golden.
 Make Cream Cheese Sauce + Toppings
*You do this while the potatoes are baking
1. In a small bowl, combine softened cream cheese with boiling water, whisking until smooth.
2. In a second small bowl, combine sesame seeds, dried onion, garlic powder, and poppy seeds. (This is the Everything Bagel seasoning)
3. Once potatoes are done, drizzle with cream cheese sauce and (optionally) hot sauce. Sprinkle with the Everything Bagel seasoning, red onions, and chives before serving.

Herb Blue Moki with Spicy Balsamic Tomatoes

I returned from a meeting at the University of Auckland - Waipapa Taumata Rau under what started like a drizzle and ended in a downpour, and was, as I walked into our rental, properly soaked. This made Ava laugh heartily! Once I was in dry clothes, my girl offered to be my sous-chef and we cooked this delicious and warming Herb Blue Moki with Spicy Balsamic Tomatoes!
Ingredients (serves 2):
1 tablespoon olive oil
1/2 teaspoon dried tarragon
1/4 teaspoon dried sage
1/2 teaspoon dried marjoram
200 grams/7.05 ounces Blue Moki fillet
a pinch of salt and freshly cracked black pepper
1/2 tablespoon olive oil
1/2 small red onion
a dozen Baby Roma tomatoes, rinsed
a pinch of salt
1/2 teaspoon Red Chili Flakes 
1 1/2 tablespoon Modena Balsamic Vinegar
Heat olive oil in a large, deep skillet over high heat.
Add dried tarragon, dried sage and dried marjoram, and fry, 1 minute.
Add Blue Moki fillet in the hot herb-y oil, and cook on one side, about 4 minutes. Season with salt and black pepper, to taste, and turn on the other side. Cook, 3 minutes more. Transfer to a plate, and cover, to keep warm. Set aside.
Return the skillet over high heat, and add olive oil.
Thinly slice red onion, and stir into the skillet. Cook, a couple of minutes until softened.
Halve Baby Roma tomatoes, and add to the skillet, stirring to coat in herbs and oil. Season with salt and Red Chili Flakes, and cook, about 3 minutes.
Deglaze with Balsamic Vinegar. Reduce heat to medium-high, return reserved Blue Moki fillet to the skillet and cover with a lid. Cook, about 3 minutes more.
Serve Herb Blue Moki with Spicy Balsamic Tomatoes hot, with a glass of chilled Waiheke Island Pinot Gris.

Meatball Soup
Chef’s Note: Seasoning puts the emphasis on the broth. Meatballs are relatively bland. I want to fix that later on (maybe add some grated onion or Worcestershire), but because I really enjoyed the warm soup, I am posting this

Makes: ~ 3 quart soup
Ingredients
  Meatballs
1 lb ground beef
1/2 cup Italian bread crumbs
2 garlic clove, minced
1 tbsp dried parsley
a few dashes of crushed red pepper flakes
a few pinches of kosher salt
  For the Soup
2 tbsp vegetable oil
1 large yellow onion, (~ 3 cup diced)
2 garlic clove, minced
2 tbsp tomato paste
28-oz can crushed tomatoes
3 cup beef broth
1 cup milk
1 1/2 cup shredded mozzarella
1/2 cup grated Parmesan
1/2 tbsp Italian seasoning
1 tsp dried oregano
a few pinches kosher salt
bread, for serving (such as Baguette slices or sandwich bread)
(opt.) shredded mozzarella, for serving
Instructions
  Make the meatballs:
1. Preheat oven to 350ºF. Line one baking sheet with parchment paper.
2. In a large bowl, combine ground beef, bread crumbs, minced garlic, parsley, crushed red pepper flakes, and salt.
These are very dense because of the amount of breadcrumbs. That’s because they need to stand up to the soup later on.
3. Roll into about 1-inch meatballs. Transfer to the baking sheet.
I made 22 meatballs
4. Bake until browned and cooked through, 15 minutes
  Make the soup:
1. In a large pot (~ 4 qt), add oil and diced onion. Cook over medium-high heat, until onions are soft and translucent, about 6 minutes
2. Add garlic and cook until fragrant, about 1 minute.
3. Add tomato paste and stir until onions are completely coated
4. Add crushed tomatoes, beef broth, and milk. Stir until combined.
5. Add meatballs and bring to a simmer
6. Once simmering, turn heat to low.
7. Stir in the mozzarella, 1/2 cup at a time to prevent clumping. Add in the grated Parmesan, Italian seasoning, oregano, and salt. Stir until combined and flavors mix. Taste and adjust seasoning as necessary
8. Ladle into bowls. If desired, top with more shredded mozzarella. Serve with a slice of bread. Serve warm
