This weekend I was actually kind of excited to go shopping. I had my list of fruits and veggies I was planning on buying (and subsequently eating) this week. I also had a list of beans. We bring our own bags, I scan and hand it to him, and he uses his Tetris brain to pack it…

we eat the same few things on rotation in our house, as I do all the cooking, and I like a) one-pot meals, and b) pasta, preferably. most of these are fairly low effort but you get a lot of bang for your buck flavour-wise, and they're endlessly customisable!
also, listen, I don't do measurements. follow your heart and taste as you go.
the tiktok viral baked feta pasta from like 4 years ago ingredients: plum or cherry tomatoes, a block of feta (or boursin if you're feeling flush), garlic, pasta optional extras: spinach, cannellini beans, chili crisp recipe: whack your tomatoes, sliced garlic, and olive oil in a big dish. nestle your feta in there. I like to add a tin of drained cannellini beans at this point to bulk it out/cut down on the pasta/make the texture confusing, but you don't have to. stick it in the oven at like 180-200C for half an hour ish. after half an hour boil your pasta. retrieve your oven dish, stir everything up to desired consistency (I'm a chunk girl). you can add spinach while you do this for extra greenery, or a massive spoonful of chili crisp for heat and crunch, but it's good on its own. add the pasta and some pasta water if you need. voila. you simply cannot go wrong.
gochujang and hummus pasta ingredients: gochujang (this keeps forever in the fridge so it's a good kitchen investment), a tub of hummus, garlic, white onion, parm optional extras: parsley recipe: chop onion and garlic, sling them in a pan with butter and a splash of EVOO. when the onion is sufficiently sweaty and nice, add a dollop of gochujang (the bigger the dollop the spicier the end result) and stir it all in, followed by the whole tub of hummus. boil the pasta. add the cooked pasta to the pan, along with some pasta water, a shit load of grated parm, and garnish with parsley. my friend sent me a vegan version of this recipe about a year ago and I've made the non-vegan version roughly once a week since. it is so fucking delicious. butter bean thing ingredients: butter beans, garlic, red onion, tomato paste, cream/double cream/greek yog, lemon, sourdough/nice crusty bread optional extras: parsley recipe: throw chopped garlic and onion in a pan with butter and EVOO and really let them sweat it out. add tinned butter beans WITH THE JUICE. yes, I know. add in a few good squirty piles of tomato paste and stir, then let it all heat through. at this point start toasting your crusty bread of choice because I ALWAYS forget until the end and then I'm rushed. I recommend splurging for the good bread, slathered with melty butter. add whatever creamy thing you have to hand (the og recipe I saw said double cream, but I usually have greek yoghurt in and that does the job) to the beans, along with some lemon juice, garnish with parsley if you like and serve. use the bread as a giant spoon. you are welcome.
sausage soup/stew? casserole?? ingredients: celery, white onion, carrot, sausage/s, cherry tomatoes, tinned tomatoes, chicken broth, parm optional extras: creamy thing of your choice, spinach, orzo recipe: dice the celery, carrot and onion (mirepoix!), and throw it in a big big big pot with some EVOO. now: I get a pack of nice sausages and either mash or chop them depending on how much energy I have, but if you live somewhere with a butcher or whatever you can save your mashing arm and just get ground sausage. throw in the ground, mashed, or chopped sausage and cook for a bit. follow with a tin of chopped tomatoes and chicken broth. I usually put in about a litre. chop the cherry toms and toss them in. follow with a load of grated parm. if you have any parm rinds, throw em in and leave it to bubble away. this doesn't sound like much but it is so good. the longer you leave it the more flavourful it will be! towards the end I like to add in whatever creamy thing is in the fridge (double cream, greek yog, milk), along with lots of chopped spinach and a cup of orzo to really bulk it up. we can happily live on this for DAYS, especially if we have leftover fancy crusty bread from the gochujang pasta. oh and remember to take out the parm rind.
thai chicken curryish ingredients: chicken (thigh/breast), garlic, ginger, yellow peppers, spring onion, cashew nuts, rice, coconut milk, chicken broth optional extras: sriracha, coriander recipe: I love this one cos it is SO quick and SOOOO easy. cut chicken into chunks and brown it in the pot. whip it back out and throw in the chopped garlic and ginger (I have a tube of ginger paste in the fridge cos WHO has the time?) with a big glug of EVOO, then a cup of rice. jasmine works, but I've also used risotto rice. toss in the chopped peppers, spring onion and cashew nuts (if I have the energy I'll chop the nuts, but you can put em in as-is), then add coconut milk (a tin's amount, be that an actual tin or some of the melted stuff that costs 1/4 of the price - thanks Asian supermarket!) and chicken broth. put the browned chicken back in, give it all a stir, cover it, and stick it in the oven for like 25ish mins. here’s the NYT recipe if you need liquid measurements/an actionable recipe that isn’t me riffing. (as always, 12ft.io/ in front of the address to bypass the paywall.) serve it with sriracha squirted all over it (HIGHLY RECOMMEND) and coriander if you like it.
delicious little rice waffle ingredients: leftover jasmine rice, chili crisp, an egg, kewpie mayonnaise, sesame oil, spring onion, A WAFFLE MAKER optional extras: furikake recipe: full disclosure, you need a little waffle maker for this. mix the rice with chili crisp, a little sesame oil, and egg yolk. dollop it into the waffle maker and cook. garnish with kewpie mayo, sliced spring onion and some furikake if you have it, or just toasted sesame seeds if you have those, or neither! delicious little spicy umami snack, my beloved.
tuna melt of dreams ingredients: you know what's in a tuna melt recipe: swap the butter on the outside of the bread for kewpie mayonnaise and thank me later.
ADDENDUM: this goes without saying for me but sadly I know it does not for everybody: SEASON YOUR FOOD WITH SALT. IT WON'T MAKE YOUR FOOD SALTY IT WILL MAKE IT DELICIOUS. COOK YOUR PASTA IN SALT. WHEN IN DOUBT, ADD SOME SALT. THANK YOU.

What are your favorite egg-based meals?
Eggs! Whether they're from chickens, ducks, geese, quail, and more, there are many dishes around Tamriel that feature this simple ingredient.
Altmer
In Summerset, a popular starter dish is a savoury steamed seafood egg custard known as chawanmushi. Served either chilled or hot enough to melt your face, this little dish is packed with prawns and shellfish and mushrooms, and topped with a slice of chewy fishcake.
Argonians
Crocodile eggs are a delicacy in Black Marsh, and the local Saxhleel have many ways of preparing them. My personal favourite is a flavourful scrambled omelette with scallions and oysters, cooked until the oysters are juicy to the point of bursting and the eggs are fluffy yet crisp. Known as or luak, this omelette is served with a healthy serving of chili sauce.
Bosmer
While people tend to hyperfixate on the meat aspect of the Bosmeri diet, they forget that eggs are just as important a food source. Poached giant snake eggs with cream sauce and smoked salmon atop cricket bread are the perfect brunch delight, especially when paired with a bit of jagga-and-honey.
Bretons
If there's one race in Tamriel who's mastered the soufflé, it's the Bretons. Whether savoury or sweet and set aflame with liquor, you can't deny that this tricky dish is worth every delicious mouthful. I'm personally a big fan of (surprise) four-cheese soufflé, where the egg is whipped with a clever blend of local High Rock cheeses to enhance the stiffening and therefore prevent an immediate collapse upon leaving the oven.
Dunmer
You'll never guess what this Dunmeri dish involves. Kwama eggs? Volcanic ash? Yes. Whole kwama eggs are buried beneath a mixture of lime and ash, and left to ferment for a few weeks until they have achieved a jelly-like texture on the exterior, and a creamy yet firm yolk. The eggs are served sliced and chilled, with pickled ginger on the side. Also great atop savoury saltrice congee.
Imperials
Like their penchant for eating pecorino-stuffed dormice, this dish will have you wondering what's wrong with Imperials. Balut is simply a raw duck egg, containing the lovely surprise of a two week-old foetus. Crack open the egg and sip up the whites, then season that foetus with salt and a splash of vinegar and slurp it up whole. This is, to some, unimaginably cruel, but Imperials in the Blackwood region insist that it's good for the health, and that it's delicious. I'll take their word for it, as this is one of the very few dishes I can't bring myself to try.
Khajiit
If there's a quintessential dish native to southern Elsweyr, it's probably telur balado, or twice-cooked eggs with chili sauce. Eggs are first boiled, then briefly deep fried to give them a delightfully crisp exterior while maintaining a rich yolk. It's then slathered in a rather spicy tomato-based sauce, and served with steamed rice. Also rather nice with a pinch of moon sugar.
Nords
While eggs from just about every bird are commonly used in Nord cuisine, chicken's eggs are by far the most popular and easily accessible. A signature egg dish in Skyrim is a thick omelette studded with bacon, served with sliced spring onions and rye bread. Simple, delicious, and downright good (except for its traditional, apparently Atmoran name, flæskeæggekage).
Orcs
Not everyone enjoys chub loon eggs, but Wrothgarian Orcs can't get enough of their rich, slightly fishy flavour. One popular egg dish is a seafood soup with egg drops, horker meatballs, and mudcrab meat. The egg drops are formed by whisking beaten eggs into the boiling soup, allowing the tendrils to cook on contact. It's served with seaweed noodles and a dash of strong black vinegar.
Redguards
Seagull eggs are a popular ingredient in coastal Hammerfell, and also act as a control measure against too many seagulls. This has happened numerous times in Stros M'kai, where shakshouka hails from. This famous dish is comprised of seagull eggs poached in an iron skillet with a spicy, flavourful tomato sauce, onions, and charred peppers. Usually eaten at breakfast with flatbread to mop up the sauce.

grocery list time~
literally just get these things if you want a vegan low cal life, because you can control portions and make things you enjoy eating with less calories- i made some example recipes under the list:
coffee.
SPICES. please make the investment into SPICES!
->continuation of spices, heres a basic list- cocoa powder, cinnamon, garlic powder, onion powder, chili powder, veggie bouillon powder/cubes, salt, pepper, lemon pepper, etc (you can find more online but please dont forget it)
->and simple sauces like soy sauce, basic hot sauce, mustard, white vinegar, apple cider vinegar, etc.
stevia or agave fruit sweetener. (please make sure whatever you choose you dont buy any sweetener with aspartame!!)
dairy free yogurt (i’ve heard coconut is good)
dairy free butter (earthbalance is my fav by far)
-> you could also make due with olive oil (cooking)
1st milk for normal stuff- unsweet cashew milk or unsweet creamy almond milk
->2nd milk for cooking- i suggest soymilk but creamy coconutmilk works good too
tofu. extra firm and silky work for different things (meat substitutes, egg substitute, diff. milk products substitutes) get either/both
carrots, mushrooms, chickpeas, and cauliflower all make good meat substitutes (bacon, chicken nuggets, pulled pork, etc) if cooked properly
OATS! plain oats are soooo versatile (used as flour, cereal, granola, crust, etc)
ricecakes (i use it as replacement for toast)
Pumpkin or sweet potato (in NO SYRUP canned form, very good for cooking low cal desserts or protein bars)
apple sauce (used for cooking and just yum- can be an egg substitute)
low cal noodle types- chickpea, edamame, shirataki, konjac, cauliflower, zucchini, spaghetti squash, and i think miracle noodle
literally any and all veggies and fruits- but a reminder of basics are broccoli, cucumber, onions, spinach, beets, eggplant, tomato, zucchini, potato, apple, banana, grapes, oranges, pineapple, strawberries, watermelon, mango, etc
WARNING ⚠️ be careful of sugar free drink flavor packets as they contain aspartame and other strange ingredients that ppl have complained of side effects- i would suggest to steer clear of many of the packets and go for a large unsweetened lemonade or fruit punch bin of flavoring so you can make it yourself. please check ingredients for health reasons.
-> HOWEVER, drinks like olipop, simple truth organic, waterloo, and zevia all have flavored water/sparkling water/cola drinks that are aspartame free.
I highlighted things that i think are really important
Veggie dip: yogurt, seasoning spices (ranch seasoning is goated), and a tbsp or lemon or soysauc, all mixed and best used as a “veggie chip” dip, like baked cucumber chips
Literally any cake/protein bar: oats blended, protein powder, 1/2cup apple sauce OR mashed banana, some milk, and whatever toppings you like
Granola: oats, chia seeds, cut up fruit pieces, and maple syrup or honey for binding. mix in bag, bake on baking sheet on pan.
Hot n sour soup: you can use hot n sour packet or make veggie bouillon and add hot sauce, soy sauce, and tsp chili powder. Then (to whichever mix you’ve made) add egg mixing around, and then add extra firm tofu in little cubes. Let the soup mix well and set a little while cooling.
Nicecream: freeze banana. add banana, tbsp of milk, 2 tbsp of yogurt, tbsp of sweetener, and a fruit of choice (a tbsp of protein powder also will help). blend with blender and then let it sit for a minute- add whatever you want on top
my best “toast”: seasalt ricecake, spread 1tbsp vegan cream cheese, and then spread 1.5 tbsp of organic raspberry jelly.
