The History Of Alcohol

Throughout recorded history there has always been some kind of alcohol, think about this, when you sit down on a Friday night with your vodka and coke or your Pernod and your lemonade, don't you think that drink exactly how not. born. Below is a history of some of the most popular drinks enjoyed today, such as vodka, gin, pernod, and cachaça.
Pernod
Pernod is an anise wine that has been popular in France for about 200 years as an aperitif and as a spicy cooking ingredient. In Babylonian times, anise seed beverage was known as an elixir with unique qualities for curing a variety of stomach and digestive ailments. It has long been recognized that when you combine wormwood and anise, it contains certain medicinal uses and is known for its effects on mood.
Cachaca
Cachaça is made from raw cane sugar and the main difference is that the lighter rum is usually made from what is known as molasses, (a thick syrup created when the raw sugar is refined and has light brown to dark brown color). -The product boils sugarcane juice to extract as much sugar as possible. It is made from fresh sugarcane juice that is fermented and distilled. Cachaça is Brazil's national spirit and the main ingredient in the classic caipirinha cocktail, the history of Cachaça dating back almost five centuries when plantation owners began serving Cachaca to their slaves after found it increased their vitality. Over the next few years, better varieties of cachaça were distilled and soon people started drinking them in colonial Brazil while dining at home. Soon after, this slavery was banned in 1888, when Brazil was declared a modern republic.
Gin
Gin The earliest confirmed date for gin production is the early 17th century in the Netherlands, although there have been claims that it was produced earlier in Italy. In the Netherlands, it is produced as a medicine and sold in pharmacies to treat stomach ailments, gout and gallstones. To make it more palatable, the Dutch began to flavor it with juniper, which has its own medicinal properties. British troops fighting in the Netherlands during the Thirty Years' War were awarded 'Dutch Courage' during long campaigns in wet weather due to gin's warming properties. Eventually, they started taking it home, where it was usually sold in pharmacies. Distillation is done on a small scale in England, but it starts on a larger scale, although the quality is often very questionable. The new drink has become a favorite of the poor. In 1730, London had more than 7,000 shops selling only spirits. The abuse of alcohol by the poor became a major problem, which was resolved by the enactment of the Gin Act at midnight on September 29, 1739, which made gin seriously expensive. The Prime Minister, Sir Robert Walpole and Dr Samuel Johnson are among those who oppose the law because they argue that it cannot be enforced against the will of the people. They were right. Riots broke out and the law was broken widely and openly, the Gin Act was finally repealed in 1742 and a new policy was introduced with the help of distillers: reasonably high prices, reasonable excise tax and licensed dealers under the control of a judge. This is essentially the situation that exists today. Since then, many companies have become rich producers, and gin has become a high-quality drink.
Vodka
Vodka is a drink originating from Eastern Europe. The name comes from the Russian word "voda" which means water or, as the Poles say, "woda". The first recorded vodka production in Russia dates back to the late 9th century, but the first known distillery in Khylnovsk dates to about two hundred years later, as recorded in the Vyatka Chronicles from 1174 Poland claims to have distilled vodka even. earlier in the 8th century, but since it is a distilled spirit, it would be more appropriate to consider it a raw spirit. The first recognizable Polish vodkas appeared in the 11th century when they were called "gorzalka", originally used as medicine. In the Middle Ages, distilled alcohol was mainly used for medicinal purposes, in addition to being an ingredient in the manufacture of gunpowder. In the 14th century, a British ambassador to Moscow first described vodka as Russia's national drink, and by the mid-16th century it was considered the national drink in Poland and Finland. Because of the primitive production methods, vodka often contains many impurities. To mask them, distillers flavor their spirits with fruits, herbs, or spices. The mid-15th century saw the first appearance of pot distillation in Russia. In the past, seasoning, aging and freezing were all used to remove impurities. At this time (450), vodka began to be produced in large quantities, and the first recorded export of Russian vodka was to Sweden in 1505. Polish exports of "woda" began a century then, from the major production centers in Posnan and Krakow. . Product Type Includes: Acorn, Anisette, Birch, Calamus Root, Calendula, Cherry, Chicory, Dill, Nut Ginger, Horseradish, Juniper, Lemon, Mastic, Mint, Rowan, Oak, Peppermint, Peppermint, Raspberry, Sage, merel , right and watermelon. In the 18th century, a professor from St.Petersburg discovered a method of filtering alcohol by filtering charcoal. Felt sand and river sand were used for some time in Russia for filtration. The popularity of vodka continued to spread throughout the 19th century, aided by a presence in many parts of Europe's drunkenness and by Russian soldiers participating in the Napoleonic Wars. Increasing popularity has led to an increasing demand and to meet this demand, lower quality products have been produced mainly based on distilled mashed potatoes. After the Russian Revolution, the Bolsheviks confiscated all private distilleries in Moscow. As a result, a number of Russian vodka producers have emigrated, bringing with them their skills and recipes. One of these exiles relaunched his brand in Paris, using the French version of Smirnoff. From there, after meeting a Russian ŽmigrŽ from the United States, they established their first vodka distillery there in 1934. It was later sold to an American beverage company. From this small beginning, vodka began in the 190s to gain wide popularity in the Western world. After the Russian Revolution of 1917, a number of Russian refugees brought their skills and love of vodka to many parts of the world. In the 1930s, one of these exiles immigrated from Russia via France to the United States, bringing with him the recipe of one of Russia's top vodka brands. Through a connection with another Russian, the first vodka distillery in the United States was established in the 1930s. Although initially not particularly successful, the business was sold to an entrepreneur who finally made a splash in the 1950s with his vodka cocktail - Moscow Mule. Vodka did not experience a major explosion in popularity in the West until the 1960s and 1970s, when many other brands were launched in the United States and United Kingdom. you forgot who recommended it to you, but someone told you there is this quiet bar where the owner mixes great cocktails
so on this evening after work, you really could need a drink and thus find yourself visiting this bar 
quiet was right, because other than you, there are no people as you enter
so you think about leaving again but before you can, the mysterious mist man walks through the curtains from his storage room and greets you
“welcome. you’re the first customer for today, so may i offer a drink on the house?” 
who would say no to a free drink? so you accept. although it still makes you nervous being alone with the stranger
you sit down by the bar on the stool and give the mysterious barkeeper a proper scan
there is something intriguing about the male and you can’t deny it
“what may i offer you to drink?” 
“I hear you mix great cocktails. which one’s your specialty?” 
he doesn’t even answer but goes straight to mixing your drink
you watch, he’s very skillful with his hands despite them being black mist. again, you’re infatuated as you watch. he’s so elegant in everything he does and somehow you find him to have a smart and handsome aura
“a refreshing drink for a refreshing presence” 
he places the cocktail in front of you. it has slices of lime, brown sugar, cachaça and lots of ice. (its a caipirinha) 
you take a sip, and it is indeed very refreshing and tasty, just what you needed today
you wonder if you should try small talk but somehow you find yourself a little nervous, not knowing how to approach a conversation with the barkeeper
luckily he takes the initiative when he casually asks you about your day
you had a bad day, and for some reason you find yourself ranting to the stranger about it. something about him just makes you pour it all out
the way he listens, the way he doesn't judge but responds with understanding and sympathy... you never felt this comfortable to confide in a stranger 
more and more you are drawn to him and you find yourself not wanting this night and the conversation with Kurogiri to end
this is what makes you return to this bar regularly. now not only for nightly cocktails but also during the daytime to share tea with him
and with every time you come here, you tell the barkeeper more about your life. he always gives you a feeling like he enjoys the stories you tell him. not once does it feel like you’re bothering him because you don't. he truly enjoys your presence and to hear about your life
until you realize one night that you don’t know anything about him
all you do know is his name and occupation but you are hungry for more information about the man that makes you feel so at ease around him so you make it your mission to find more about Kurogiri
but that turns out harder than you had imagined. despite being very polite about it, he refuses to answer any personal questions and he doesn’t budge no matter what
but there is one thing he will do that shows that he is fond of you: despite not sharing any personal information about his life, he will tell you about the things he loves: poetry, different kinds of tea, classical music, old movies...
when he talks about the things he loves, he is like a different person. his usual very calm way of speaking turns into an enthusiastic one. it’s like he completely brightens up, you feel like even his eyes have a passionate glow when he talks about the things he loves to indulge in
you fall in love with that side of him, so you start listening to the music he likes, bring him gifts like foreign teas and books with poetry and even ask him to watch old movies together 
Kurogiri never met someone who is so interested to learn about the things he is passionate about so he first doesn't really know how to deal with it but he can’t deny it makes him really happy
that sincere interest you show him will even make him gradually open up to you more, even about a couple personal things, though there are secrets he won’t ever be able to tell you, partly because he doesn’t know them himself, partly because he would never want to put you into danger
and if you’re lucky you even get to meet the bratty guy he’s babysitting

Brazilian breakfasts tend to be feasts in themselves, with cakes, fresh fruit, freshly-baked breads, cheeses and sliced cold meats all present and correct, alongside fresh-squeezed juices and wonderfully strong Brazilian coffee.
Brunch is a concept that has been slow to take off in Brazil – in fact, there’s no Portuguese word for it, but nobody will bat an eyelid if you order breakfast items at noon. Our top pick,  Da Casa da Tata, offers indulgent breakfast and lunch spreads as well as a-la-carte sandwiches, soups and the like, while the cakes and cookies here are legendary across the city.
One restaurant that has picked up on the brunch concept is Pergula, Copacabana Palace hotel´s famously chic poolside restaurant, the Sunday brunch is appropriately grand (smoked salmon and Champagne are both part of the indulgent offering.) It comes at a predictably eye-watering price, too, but it makes for a memorable experience.
More accessible prices can be found at Cultivar Brasil, up in the hills of Santa Teresa. This tiny organic cafe has delicious vegetarian-friendly snacks, including the best Pao de Queijo (little rolls made from manioc flour and cheese) in town.  For brunches with a sea view, it’s hard to beat Copacabana’s Cafe 18 de Forte, which has some extremely good cakes and pastries as well as fruit salads and the like. Meanwhile, visitors hankering after hash browns, waffles or other home style North American goodies, meanwhile, can join the hordes of ex-pats who flock to Ipanema’s  Gringo Cafe for a taste of home.

Whether you’re a staunch vegetarian, a health-food enthusiast or even a carnivore who has tucked into one steak too many, this cosy corner restaurant in Leblon is just the ticket. Healthfood and organic eating is a growing sector of Rio’s dining scene, but this Leblon favorite was one of the first to open, and is still unarguably one of the best. At lunch, diners can load their plates high at a wholefood buffet including soups, salads, beans, rice, soya dishes and a range of healthy pies and pastries for a set price, while a-la-carte options are available in the evening. The vegan version of ‘feijaoda’, the usually-meaty national dish, made here with smoked tofu, is legendary.
Recommended for Brunch because: You don’t need to be a vegan, or even vegetarian, to appreciate the yummy buffet at this Leblon instition.

Located a few blocks from Ipanema beach and right next door to the strip of backpacker lodgings dubbed ‘Hostel Alley’, this health food store, buffet restaurant and snack bar offers a huge range of wholesome ingredients for self caterers as well as a range of eat-in dishes that are every bit as tasty as they are nutritious. While there is plenty of choice here for vegetarians, New Natural is not entirely meat-free, with low-fat chicken and fish putting in a few appearances on the menu. The buffet operates on a pay-by-weight system, and prices here, while on the high side, are reasonable for the neighborhood. There’s an air conditioned lounge upstairs and a couple of sidewalk tables and chairs, making New Natural a favourite spot among backpackers looking for a quick, healthy lunch.
Recommended for Brunch because: This health-food cafe opens early in the morning until late at night, and serves coffee and light snacks as well as full meals.
Lucy’s expert tip: Don’t feel like a sit-down meal? There’s a range of takeaway snacks too, among which the oven baked, wholemeal pasties are stand outs. The palmito (palm heart) with soft cheese version is addictively good.

For a taste of Rio’s Belle Epoque past, head to this historic cafe-restaurant in downtown Rio. Ornate chandeliers and jacaranda wood mirrors make an elegant setting for breakfasts, brunches and afternoon teas, and this is the ideal place to take the weight of your feet and soak up the opulence during a Centro shopping or sightseeing spree. While most people head here for the experience of diving into Rio’s past, the food and drinks are top-notch, too. Come with the family for a long, leisurely brunch, or by yourself to get a morning coffee fix and try some of the lovely cakes and pastries.

Occupying a corner building on Santa Teresa’s liveliest square – Largo do Guimaraes – Cafe do Alto has carved out a reputation for serving delicious dishes at fair prices, in a wonderfully colorful setting. The emphasis is on food from Brazil’s Northeast, but but avoids the stodginess that sometimes weighs down Nordestino cooking. Light dishes include tapioca panckaes filled with everything from tomato and marinated tomatoes or shredded jerk beef, to sweet versions filled with fruit and curd cheese; while recommended mains include moqueca – a typical seafood stew, here adapted to include veggie friendly versions made with palm heart or yucca. There are abundant breakfast options, and the weekend breakfast buffet – which runs until 1pm – is the ideal hangover cure for anybody who partied hard in nearby Lapa the night before. Service is attentive, the decor is cheery and the cafe scores major parental brownie points for its kid-friendly menu and drawing materials.

Aimed squarely at North Americans with a hankering for taste of their homeland, Gringo Cafe does a roaring trade in US DIner-style favorites such as hash browns, bottomless coffees, pancakes, waffles and French toast, as well as delicious cakes, milkshakes and cheese burgers made with imported American cheese. The breakfasts, served all day, are manna from heaven for many homesick ex-pats, who can indulge a craving for bacon, eggs made any way you choose, while mains such as mac & cheese and spaghetti with meatballs also help to keep homesickness pangs at bay. Alongside a range of wholemeal sweet and savory tarts and pies and some yummy sandwiches, there are gluten-free cakes, tarts (try the palm-heart and yogurt) and a mini-store stocked with a range of pastas, biscuits and other goodies to take away. In addition, Cultivar Brazil serves unarguably the best Pao de Queijo (little cheese breads made with manioc flour), here made with organic ingredients. There’s no sign above the cafe, but Cultivar Brazil opens right onto Santa Teresa’s main drinking and dining strip.

BRUNO MARTINI'S "CAIPIRINHA" QUARANTINI:
1 2/3 ounces Cachaça (recommended brand: 51)
2 teaspoons brown sugar
1/2 lime cut into 4 wedges
Crushed ice (recommended: use filtered water for ice)
Ice cubes (recommended: use filtered water for ice)
Lime or sugarcane for garnish Preparation: Place lime and sugar into old-fashioned glass and muddle (mash the two ingredients together using a muddler or a wooden spoon). Fill the glass with crushed ice and add the Cachaça. Serve on the rocks, in an old-fashioned glass, by pouring over the crushed ice.

The Caipiroska is very famous cocktails of Brazil , Uruguay ,Paraguay and Argentina. It’s famous Brazilian drink. A very special cocktail of summers. Caipiroska is similar to Caipirinha, using Vodka instead of cachaca as the spirit base. First things first, cachaca . Basically we can think about it like rum as they both come from sugarcanes. The main difference is that rum comes from the byproduct of sugar production and cachaca gets fresh sugarcane juice. Many persons says that they’re cousins. It’s very simple to make with vodka, lime and sugar . Using a good quality vodka is best. You can make it with white sugar, cane sugar, brown sugar or turbinado sugar. No matter which sugar you use to make drink, it will taste very good. Using white sugar will result in a clearer drink and using turbinado sugar will result in a tan color drink. It is easy to make, potent, delicious and a regular at any party. INGREDIENTS Vodka – 60 ml Lime chunks – 6 pieces Brown sugar – 1 tsp lime juice – 10 ml Sugar syrup – 10 ml Crushed ice – to top up glass Glass type -old fashioned Mint (option) INSTRUCTIONS Cut up a lime into quarters. Friday, 26th October 2018 – The Garage, Buckingham
The Garage has been open for a while now, based in – you guessed it – an old garage in the middle of Buckingham. We’d attempted to eat there before, only to be frustrated by technical issues that had led to the place being closed over an entire weekend, and thus we only finally made it in there last October, as the preamble to a gig at the old Town Hall (Bernie Marsden doing a Q&A and a number of numbers from his blues guitar playing history which was good fun). Consequently we didn’t have too much time to relax and enjoy the surroundings. We were seated upstairs, where you have a view of the open kitchen rather than downstairs where the bar is located. This meant we had no time for more than one cocktail, which served as an aperitif while we studied the menu. Mine was a Bramble, made with blackberries as you might expect, creme de mure (which is not seen enough in these parts, if you ask me), lemon juice and gin. One of the major pluses of this sort of drink is that you can’t taste the gin!

Lynne went for an Old Fashioned, claiming it’s because that’s what she is… and also happy to avoid gin altogether. The Old Fashioned is, of curse, a whisky-based drink and all the better for it. I have to say the combination of bourbon, bitters, vanilla and sugar didn’t look too much different to what I was drinking, though it definitely tasted different.

The food arrived pretty sharpish as we finished our cocktails, a couple of starters that we’d agreed to share. One dish was a duck and bacon hash, served with peppered rocket and a poached hen’s egg. It was good, the egg nicely judged, once you could battle your way past the rocket! There seemed to be a lot of greenery, but the meat was excellent. They clearly have a good butcher.

The mixed game terrine with sourdough bread and a carrot, clove and orange marmalade also backed up that theory, as did the fact that someone was at least conventionally clever with flavours if the marmalade was anything to go by. The butter sealing the top was lovely on the sourdough toast too, and you got two types of sourdough which was generous.

The meat theme continued into our mains, a large chunk of venison steak that had been seared to just the right degree of rareness, and served with bacon and braised red cabbage, along with a fondant potato which I felt could have been a lot better, and a pink peppercorn and redcurrant jus that again I felt could have been better, in this instance if it had been made as a proper, thicker sauce, but that was tasty and definitely delivered on the peppercorn heat.

The other main was again great on the meat, not so great on the vegetables, with roasted duck breast and a trio of confit duck made into bon-bons, served with buttered savoy cabbage, which needed more butter, an apricot puree which I felt lacked the acidity a fruit accompaniment to duck needs, and some somewhat under-powered Parmentier potatoes. The vegetables on both mains seemed rushed, and maybe they had been. Hopefully that can be addressed in future because there was quite a lot to like otherwise about the venue, the ingredients, the staff and the general attitude.

There was quite a lot to like about their wine list too, particularly the bin ends section which produced a half-priced Portuguese wine, a 2014 Adega de Pegões Colheita Selecionada that we very much enjoyed. It had a distinct aroma of red and black fruits, and was a lovely jammy concoction. If we’d had time I could imagine having had a second bottle and taken what was left home. It’s an interesting blend of Touriga Nacional, Trincadeira, Cabernet Sauvignon and Syrah, fermented in stainless steel tanks initially, then aged for 12 months in French oak. I’d rather like to try some more of it, as it seems the wine-maker, Jaime Quendera, is making something of a name for himself. If this example is anything to go by, then he’s doing a very good job.

Saturday, 15th June 2019 – Zinc Bar, Buckingham; The Garage, Buckingham
We were back again in June, after a very expensive book-buying day at the 2019 Buckingham Literary Festival. With the demise of Vibin’s (at least as a restaurant by that name – it seems to have become a Mexican fast food place now though under the same ownership) there’s a serious shortage of anywhere really worth eating at in Buckingham, so we had to hope they wouldn’t let us down. First though we decided to try the bar opposite where Vibin’s used to be, Zinc. After having to spend time in our own local cocktail bar trying to teach the bar staff how to make a caipirinha properly (and then being mind-boggled by the fact that said bar ran a series of cocktail masterclasses at the local food festival) this was a positive pleasure, and more to the point a caipirinha done just right! I couldn’t find any fault with it; it contained cahaca, lime, sugar (not syrup, not sugar cubes that won’t dissolve, just granulated sugar) and ice which is all you want in a caiprinha.

Given we still had time to spare, we figured we’d better explore the more exotic end of the list, but then the regular cocktails side-tracked us from that plan in the shape of a raspberry mojito for me:

We left the bar very happy in every sense, and were soon ensconced in a downstairs nook at the Garage and mulling over the menu while we made inroads into the bread basket, complete with its two types of butter (pesto, sun-dried tomato), olive oil and balsamic vinegar.

We did eventually decide what we wanted to eat. As usual it was the starters and mains that got our interest. I can enjoy a dessert with the best of ’em, but if I’m only going to have room for two courses then I’d prefer to stick with the savoury choices. For starters we would share the aparagus, duck egg and home-cured ham, which delivered on the egg front in just the way you would want, the yolk oozing out and coating the asparagus nicely.

There was also a beef tataki, the dressing packing quite an umami punch, the beef tender and rare and just as I like it. Once again it seemed clear that whoever they get their meat from, it’s a good source.

The mains were again slightly less well-executed, though the tuna steak was still pink, which is better than you usually get in UK restaurants (think grey, tough, dull and dry). It was still the right side of overcooked, which meant it was edible. I’d have liked a slightly pinker take on it, with a nicely browned (at high speed and high temperature please) outside and an almost uncooked inside.

The guinea fowl was very good, and had been beautifully cooked, the leg confitted, and the breast roasted. I think this worked better because it doesn’t require the precise timing that the tuna does. The vegetables were better this time too, though not particularly exciting.

In conclusion, it’s not going to set the world on fire, but it does provide a good option for some solid enough cooking. If we’re in Buckingham and want a dinner that’s a cut above the chains, then the Garage will fit the bill. If we really want to go out for a push the boat out celebration, say, then there are better options around.
