I think it's because he's normally so self-serving that seeing him actually value his S/O, at least to some extent, makes it feel special. Especially because his other wives did not receive the same treatment (even if they only existed as a cover for him when in human society)

Demons all having a more feral/animalistic side with Muzan being really possessive is hot ngl. The other demons knowing not to mess with them because an insult towards them is as bad as insulting Muzan himself.
