EGGLESS BROWNIE:
INGREDIENTS:
• 85g Butter 🧈
• 50 g Icing Sugar
• 110 g Condensed milk @milkmaidindia
• 6ml Vanilla
• 90g Dark chocolate
• 75 g Flour
• 15 g Cocoa powder
• 4 g Baking Powder
• 5g Coffee Powder
• 55 g Warm water
Method:
1. Combine Butter and icing sugar.
2. Add vanilla and condensed milk
3. Mix mix mix.
4. Add the melted dark chocolate and mix
5. Add all the dry ingredients Flour, cocoa powder, baking powder, coffee powder in wet mix.
6. Then mix in the warm water.
7. Mix it well.
8. Add hazelnuts or walnuts.
9. Put in a tray
10. Always allowed the batter to rest in the fridge for 3 hours minimum. It helps in getting a nice stable structure.
11. Bake at 160 degree and till it's done.

Christmas Plum Cake 🍰
Ingredients
For the cake
•1 + ½ cup maida
•¼ teaspoon cinnamon
•⅛ teaspoon ginger
•⅛ teaspoon clove
•1 teaspoon orange zest
•1 teaspoon baking powder
•½ teaspoon baking soda
•½ cup vegetable oil
•¾ cup brown sugar
•1 cup yogurt
•1 teaspoon vanilla extract
For soak
•⅓ cup orange juice
•⅓ cup water
•1 tablespoon lemon juice
•1 cup tutti frutti
•¼ cup raisins
•¼ cup dried apricots
•⅛ cup dried cranberries
•⅛ cup prunes
For folding
•¼ cup almonds
•¼ cup walnuts
•¼ cup cashews
Instructions:
•In a saucepan, take orange juice, lemon juice and water.
•Add tutti frutti, raisins, dried apricots, dried cranberries and prunes to the juice mix and cook till the mixture thickens and the dry fruits absorb all the juices. Set aside.
•Pre-heat the oven to 160 degree C and line an 8 inch round cake pan with parchment paper.
•In a bowl whisk together flour, baking powder, baking soda, the spices and orange zest and set aside.
•Whisk together brown sugar and oil in a separate bowl until pale and well combined.
•Now add the yogurt to the oil and sugar mixture and mix well.
•Add the vanilla extract.
•Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage.
•Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped walnuts, almonds and cashews in the batter and transfer the batter to the prepared cake pan.
•Bake at 160C for 50-55 minutes or only until a skewer inserted in the center comes out clean.
Top the cake with the leftover soaked fruits and serve!

PANEER CUTLET...😋😋😋
Paneer cutlets are a delicious snack made with paneer,spices and vegetables. These stellar crispy treats are better for parties and game days as these are made really quick with a very few ingredients. You can make cheese and store them beforehand. The crunchy outer layer that lasts longer with the spongy cheese and Veggies filling inside is a bomb and it's too good that anyone can't resist .
INGREDIENTS
FOR CUTLET:
•2 cups paneer, crumbled
•1 cup potato, boiled and mashed
•2 tbsp onion, finely chopped
•½ carrot, grated
•1 green chilli, finely chopped
•½ tsp ginger paste
•½ tsp kashmiri red chilli powder
•2 tbsp coriander leaves, finely chopped
•½ tsp aamchur
•½ tsp garam masala
•½ tsp salt
FOR MAIDA PASTE:
•¼ cup corn flour
•¼ tsp pepper, crushed
•2 tbsp maida
•¼ tsp salt
•½ cup water
OTHER INGREDIENTS:
•1 cup bread crumbs
•oil for shallow frying
INSTRUCTIONS:
•Firstly, in a large mixing bowl combine all the ingredients listed for cutlet.
•Now prepare maida paste by combining ¼ cup corn flour, 2 tbsp maida, ¼ tsp pepper, ¼ tsp salt and ½ cup water.
•Mix well to form lump free and flowing consistency batter.
•Prepare a small ball sized patties greasing hand with oil. greasing oil prevents dough from sticking.
•Now dip in prepared maida paste and cover batter all sides.
•Further coat with bread crumbs all sides. use panko bread crumbs / crushed corn flakes as they give nice texture.
•Now shallow fry or deep fry or pan fry in hot oil. alternatively, bake in preheated oven at 180 degree celsius for 12 minutes.
•Fry on medium flame, flipping occasionally till it turns golden brown.
•Finally, serve panner cutlet with mint dip or tomato sauce.

This is my superfood infused Chia Pudding. It is packed with nutrients and it is delicious! Perfect for a snack or breakfast. 🌈🌈
Ingredients:
•1/2 cup of Oat milk per glass
•6 tablespoons of Chia Seeds
•1tsp of Chlorella
•1tsp of Blueberry powder
• 1tsp of turmeric
• 1tsp of Acai berry powder
• 2tsp of Honey
Preparation:
•Take 3 separate glasses and divide the oat milk between the 3 and two tbsp of Chia seeds to each one .
•Then add the Superfood ingredients and the sweetner to each separate glass and put in the fridge overnight.
• When the seeds double in size and the consistency is pudding like, it is ready to eat and just take a glass and put each layer of pudding .

MARBLE CAKE 🎂...
This marble cake recipe uses one batter to make both the vanilla and chocolate batter ! It is simply delicious!!
DRY INGREDIENTS
All Purpose Flour - 2 cups +2 tbsp
Baking Powder - 2 tsp
Baking Soda - ½ tsp
Salt - ½ tsp
Sugar, fine grain - 1&1/3 cup
Cocoa powder, unsweetened - 4 tbsp
WET INGREDIENTS
Vegetable or Canola Oil - ½ cup
Yogurt, thick at room temperature - 1 cup
Milk, room temperature - ¼ cup
Hot Water - 4 tbsp
Vanilla Extract - 1 tsp
Instructions:
First mix flour, baking powder, baking soda, salt, and cinnamon. Set aside.
Then, beat together butter and granulated sugar. Add vanilla extract.
Add dry ingredients and milk mixture; beat until just combined.
Stir together cocoa, hot water and espresso powder.
Take one-third of the vanilla batter and place it in a small bowl. Fold the cocoa mixture into the batter until blended.
Spread a cup of vanilla batter in the bottom of the pan. Dollop on half of the chocolate batter, then repeat with another heaping cup of vanilla batter, the remainder of the chocolate, and top with the rest of the vanilla batter. NOTE: There’s no need to swirl the batters together to get a marbled effect.
Bake at 350º F for 50-60 minutes, or until a toothpick poked in the center comes out clean. Let it cool and unmold.

🥞Who doesn't love 'FLUFFY AND WARM' Pancakes. Here is the perfect recipe for this one. I promise you this is better than any boxes premix available in the market. This is HANDS DOWN THE BEST EGGLESS PANCAKES RECIPE 🥞
Whole Wheat Pancakes (Eggless)
Dry ingredients
1 cup whole wheat flour
1 tbsp corn flour
2 tbsp sugar
2 tsp baking powder
A pinch of salt🧂
Wet Ingredients
1 cup + 2 tbsp milk 🥛(room temperature)
2 tbsp melted butter 🧈
1/2 tsp vanilla extract
You can also put cinnamon powder, cocoa powder, orange zest🍊 to add additional flavour
1/4 cup walnuts
Toppings -
Mangos 🥭/ Banana 🍌/ Strawberry🍓 - Any fruits
Fruit & chocolate Sauce (Optional)
Method
🥞Mix all the dry ingredients and then add the wet ingredients and make a smooth flowing batter (like idli batter).
🥞Pour batter on hot non stick tawa and cook on low flame, once you see bubbles, flip it and cook on the other side.
🥞Do not cook this on a super hot pan.
🥞Add toppings of your choice & serve.

Navratri Special - Aloo chat Recipe
Vrat Ki Chaat
(Aloo Tikki)
Serves 4
For Sweet Curd
Curd – 1cup
Sugar – 2tbsp
Sendha Namak – to taste
For Khatti Meethi Chutney (vrat ki chutney)
Water – 3cups
Anardana powder – ½ cup
Ginger grated – 1tsp
Roasted cumin pounded – 1tbsp
Sendha Namak – to taste
Black pepper powder – ½ tsp
Gur grated – ½ cup
For Aloo tikki
Potato (boiled & Mashed) – 2cups
Kuttu Atta (bhuna) – ¾ cup
Green chilli chopped – 1 tsp
Ginger chopped – 1tsp
Coriander chopped – handful
Sendha namak – to taste
Pepper powder – ½ tsp
Oil/Ghee – for frying 
Method
For Sweet curd
Mix together curd, sugar and salt. whisk and keep aside
For Khatti Methi Chutney 
Mix all the ingredients and bring to a boil, lower heat and cook for 10 mins. Once it thickens a but remove and strain it. What ever is left in the strainer put it in a blender along with some of the strained chutney and grind it. Strain again and serve.
For Kuttu & Aloo Tikki
Mix all the ingredients and shape into small patties. Heat oil or ghee on a flat griddle and shallow fry on both sides till it is browned and crisp.
remove and place it on a plate. Top it up with chilled curd, green chutney, khatti meethi chutney, some grapes, sliced bananas, pomegranate seeds. Additionally you may garnish it with coriander leaves and roasted cumin.
Serve immediately.

• 3/4 cup Milk 🥛
Method
🥞Mix all the dry ingredients and then add the wet ingredients and make a smooth flowing batter (like idli batter).
🥞Pour batter on hot non stick tawa and cook on low flame, once you see bubbles, flip it and cook on the other side.

This is a super simple and easy recipe that is nutrient dense and high in protein!
I love chia pudding and smoothies, so this combo was a winner for me 🙌👌
Everything you need to make this parfait is below👇.
Ingredients:
Layer 1:
•2 tbsp @urbanplatter.in chia seeds
•1/2 cup milk 🥛
•1/2 tsp vanilla essence
• 1tsp Honey 🍯
Layer 2:
•1frozen banana 🍌
• 1frozen kiwi 🥝
• 1tbsp @urbanplatter.in acai powder
•1-2 tbsp milk
• 1tsp honey 🍯
•1/2 tsp @meronagaragar spreadable Agar agar
Toppings :
• Banana 🍌
• Chia Seeds

Recipe:
1. Mix the chia seeds, milk ,vanilla and honey 🍯in a bowl until combine. Place into the fridge to gel overnight.
2. Once your chia has formed a putting, place into a glass .
3. In a blender or food processor, blend together your bnana,berries, almond milk and agar agar mixture (dissolve 1/2tsp into 1/2cup powder and bowl till agar Agar dissolve , and cool it too room temp.) Until it forms a thick icecream like texture .
4. Pour over the chia pudding. Top with banana and chia seeds.
