If you pay someone else to make a fanbinding, or make fanbindings for others, without permission, it is not a single fan having a copy of that fic, it is redistributing that fic. Period. You can justify being an asshole to a writer however you want, but if more than one party is involved, it's not just the equivalent of a fan printing out a fic and shoving it in a binder anymore, it's the equivalent of posting it somewhere else. Because you could literally repost someone else's fic and only have one person view it, views aren't the issue, it's removing it from the format and location the writer explicitly put it in.
"Oh, their name is still on it!" And if they change their user/penname do you update it? Is the url to it included? What happens if the url changes? Did you include all their notes? All their tags? Is it formatted in exactly the same way it was online? If it's a deleted fic do you just keep it to yourself and never share that file, never get it bound, because the writer doesn't want it around anymore?
If you pay someone for fanbinding without a writer's permission, when you obviously can't pay the actual writer of that fic you like enough to pay a third party for, you are letting someone else make money off of that writer's free labor.
You're saying the writer is not worthy of your respect by not getting permission or honoring a refusal and that you don't give a fuck that they'd be the ones that would ultimately get in trouble if someone decided to get a lawyer involved nor do you care about all the other people who would no longer be able to read that fic if it gets taken down to protect the writer or their careers.
This whole fanbinding thing is wild. Imagine taking something you know someone put a ton of work into and CAN'T get paid for and giving money to someone who happened to bind it/would bind it, neither of you even bothering to get permission. Binding for yourself is a grey area, doing it for someone else is no different than reposting a fic without permission. God, readers can be such unrelenting, entitled assholes.
