I’ve always been a big cheese lover. If I need an appetizer, adding pizazz to soup or salad, or just deciding what to make for dinner, I always have a block of cheese in the refrigerator to expand my choices.  We love pork chops, but Gouda Cheese and Apple Stuffed Pork Chops that have been wrapped in bacon?  That’s a recipe you can make easily for one or a dozen and it’s so easy that it makes a great weeknight dinner.
When I was first on my own and very poor I was very careful about how I spent money.  When I went to the grocery store I bought ingredients that could be used for several meals.  On one of my grocery shopping trips, I bought a block of an off-brand cheese because it was a little cheaper.  It tasted so bad that I couldn’t eat it.  I can’t tell you how devastating that was to me. It was like throwing money you don’t have out the window.
I learned my lesson and even though I can spend a little more these days on groceries, that doesn’t determine what brands I use. In my Gouda Cheese and Apple Stuffed Pork Chops recipe, I used a block of Crystal Farms® Gouda.  Crystal Farms Cheese is located in Lake Mills Wisconsin and has been making cheese since 1926.   Wisconsin produces over 600 varieties of cheese and they say people crave cheese even more than chocolate!  That’s a tough field, folks!  Crystal Farms Cheese is passionate about their products and takes quality very seriously.   They even count the holes in their Swiss cheese!

Gouda Cheese and Apple Stuffed Pork Chops Recipe
Food isn’t just food when you add layers of flavor with quality ingredients.  Gouda Cheese and Apple Stuffed Pork Chops are like a party of the senses and more of an experience than a meal.  
6 pork chops (Boneless 1-1/2" thick)
4 oz Gouda Cheese (Crystal Farms Cheese Brand)
12 slices bacon (thin or regular cut)
1 green apple (cored and sliced thinly)
1 tbsp thyme (chopped)
18 toothpicks
Preheat the oven to *225°F.  Spray a 9×13″ baking dish with non-stick cooking spray.
Make a deep slit into the side of each pork chop being careful not to go through the sides or bottom.
Slice the apple into 1/8″ pieces, one for each chop
Cut the Crystal Farms Gouda Cheese block into 1/4″ slices, two for each chop.
Sandwich each apple slice with cheese slices and insert it into the chop and sprinkle with thyme.    
Wrap each chop with two slices of bacon tightly.  Secure with three toothpicks and place them into the pan.
Bake for 60-70 minutes or until the chop registers 140°.  Allow meat to rest for 10 minutes.  Remove the toothpicks and serve immediately.
*Chops can be cooked at 350° for 40-45 minutes as an alternative to the slow cooking time.
My block of gouda went a long way.  In addition to using it in this recipe, it made a quick appetizer with some fruit and crackers.  The hardest part is not eating it before it makes it to the plate!

Blueberry Puff Pastry Rolls are quick, easy and delicious.  They are perfect for breakfast, brunch or that sweet treat after any meal.
I don’t think that there is anything more beautiful than what good ole “Mother Nature” creates.  The colors of new berries in the spring and summer are amazing.  Artists test their own talent trying to create a berry as beautiful as the original, just as I tried to create Blueberry Puff Pastry Rolls that tasted like Mother Nature intended.
When berries look good, I just buy, buy and buy.  When I can’t get fresh, frozen work perfectly.  In fact, since they don’t grow here frozen can be tastier.  So when my refrigerator is full of blueberries, I get creative.  Creative doesn’t mean difficult or time-consuming.  These Blueberry Puff Pastry Rolls are quick, easy and delicious.  That makes this recipe about as perfect as those blueberries.
The filling is such a deep purple, that only my fingers showed how purple they really were after I shoved a couple not-so-delicate bites into my mouth.  The buttery puff pastry was a perfect match for the sweetness of the blueberry filling, and the whole thing was finished with a light sprinkling of powdered sugar.
These Blueberry Puff Pastry Rolls make a perfect breakfast over the holidays or a great addition to your brunch menu.  I love working with puff pastry because it looks like you went to a lot more work than you actually did.  They are sure a lot easier than they look to make!
Blueberry Puff Pastry Rolls
Blueberry Puff Pastry Rolls are quick, easy and delicious. They are perfect for your breakfast, brunch or that sweet treat after any meal.
2-1/2 cups fresh blueberries
1/2 cup white granulated sugar
1 tbsp fresh lemon juice
½ tsp ground cinnamon
¼ tsp nutmeg
1 tbsp unsalted butter
1/8 tsp kosher salt ((pinch))
2 tbsp all-purpose flour
1 puff pastry sheet
1 egg (or egg white)
1/2 cup powdered sugar
Preheat oven to 425 degrees F. Line two baking sheets with parchment paper.
In a saucepan combine blueberries, sugar, cinnamon, nutmeg, lemon juice, salt, and butter. Cook over medium-low heat until berries soften (5 minutes). Stir in flour and cook until thickened (about 2 minutes). Remove from heat and set aside to cool.
Lightly flour a work surface. Unroll puff pastry and cut into thirds.
Spoon cooled filling down the center of each piece of puff pastry. Bring edges together and pinch to close. Don’t overfill or they will break open during baking. Slice into 1-1/2 inch lengths. Place rolls on baking sheets.
Mix egg (or egg white) with a small amount of water. Whip with a fork until foamy. Brush the top of each roll with egg mixture. Prick with a knife or fork to vent.
Place on the parchment paper lined baking sheet and bake 15 to 20 minutes or until golden brown. Dust with powdered sugar. Allow to cool completely on the baking sheet.
Store in an airtight container.
