Sunday Night Meal Prep…Tuesday’s Meal 🥘 Grilled Chicken, Sweet Potatoes and LeSueur Peas: 1.Prepare your Sweet Potatoes 🍠 an hour ahead of time. Preheat oven on 425. While oven is preheating wash Sweet Potatoes thoroughly and then rub olive oil on the outside of each Sweet Potato. Take a fork and punch several holes into the Sweet Potatoes. Place foil on cooking sheet and then place the Sweet Potatoes on top of foil. Place Sweet Potatoes in the oven and cook for 50 to 60 minutes, depending on size. 2. When Sweet Potatoes are almost done, simply pour a can of LeSueur Peas into pot/pan on stove top while adding one tablespoon of butter. Heat on medium and bring to a boil. Once peas have come to a boil cover after one minute to make sure they have been thoroughly heated and remove them from stove eye. *We love LeSueur Peas at our house, so we purchase them in a bulk/box of 8 at Costco because they run close to $2.00 a can in most stores. They are $10.49 per box which makes them $1.31 a can. Before inflation hit they were priced a little over $8.00 a box at Costco…one of the best deals I ever found on LeSueur Peas. 3. Sunday Night Meal Prep…Monday’s Meal 🥘 Grilled Chicken, Bacon, Egg & Avocado Salad Ingredients: 1 Grilled Chicken Breast 1 Cup of Sliced Cucumbers 2 Boiled Egg 1/2 Medium Avocado 2 Slices of Bacon Kinder’s Premium Quality Seasoning Lemon Pepper or Lemon Pepper of choice (purchase at Costco) Olive Garden Signature Italian Dressing (purchase at Costco) Directions: 1. Cut up your cucumber into slices. I chose to cut my slices in half. Place one cup of sliced cucumbers on bottom of bowl. *I use a soup bowl when making it individually/one person. 2. Take boiled eggs, cut up, and spread out on top of cucumbers. 3. Peel and cut up Avocado into small bite size chunks. Spread out across the top of cucumbers and eggs. 4. Take two pieces of cooled off fresh cooked Wright Brand Bacon and spread over top of salad. This is our favorite bacon due to thickness in cut and flavor. Try Wright Brand or use your preferred brand. 🥓 5. Take your Grilled Chicken and cut it up into bite size chunks and spread it out over the top. 6. Take a few of your left over cucumbers and spread them out on top. 7. Sprinkle Kinder’s Premium Quality Seasoning Lemon Pepper on the top and then pour Olive Garden Signature Italian Dressing to taste over the salad. Toss salad briefly before eating. Easy Last Minute Super Bowl Recipe - Chex Party Mix Ingredients: 3 Cups of Corn Chex Cereal 3 Cups of Rice Chex Cereal 3 Cups of Wheat Chex Cereal 1 Chex Party Mix Seasoning Packet 6 Tablespoons of Butter 🧈 1 Cup of Mixed Nuts 🥜 1 Cup of Pretzels 🥨 1 Cup of Garlic-Flavored Bite-Size Bagel Chips or Regular-Size Bagel Chips, Broken into 1-inch Pieces Directions: Heat Oven to 250 Degrees Melt Butter in Large Bowl Pour season Packet into melted butter and stir until well mixed. Add all other dry ingredients together and gradually mix into butter seasoning mix until well coated. Spread Party Mix out evenly across baking pan and bake for 1 Hour while stirring the party mix every 15 minutes. Spread out on paper towels to cool. Notes: *Our family uses unsalted butter to make it a little more healthy. *We place pecans, almonds, and walnuts in due to peanut allergies so all our guest can enjoy. *We use Honey Nut Chex instead of Wheat Chex to make it gluten-free. We also use Gluten-free Pretzels instead of Bagel Chips. Cheese Log...enjoyed this old family recipe during the Christmas Bowl Game Season and decide it was a must have at our Super Bowl Party!
Cheese Log
Ingredients:
2-8 oz packages grated Cheddar Cheese
1-8 oz package grated Sharp Cheddar Cheese
1-8oz package grated Swiss Cheese
1-12 oz container Pimento Cheese
2-8 oz packages Cream Cheese
Garlic Cloves (peel/breakdown and rub mixing bowl with)
1 /2 cup to 3/4 cup (your preference) Pecans finely grated
Paprika -to taste
Wax Paper
Directions:
-Rub inside of mixing bowl with peeled Garlic Cloves
-Mix ingredients in large mixing bowl (use two wooden spoons to mix, takes some work)
-Thoroughly mix until you get a good blend of all ingredients
-Sprinkle Paprika out on wax paper
-Make log roll the size of your choice and then roll on Paprika (you will have to continually sprinkle Paprika on wax paper during the entire process to ensure exterior of each log is covered)
-As each log is finished cover in wax paper and refrigerate in container with sealed top
*You will know how long the cheese logs will be good for in the refrigerator by the end date on each product used. Make sure to note and write down
*However, if the family knows it is in the fridge it will not last long
*Serve with the crackers of your choice
*We use Blue Diamond Almonds Nut Thins because the are great tasting and gluten-free. They have several different flavors. My favorite is Pecan.

Nana’s BBQ Chicken 🍗 A great seasonal recipe to use when craving summertime Barbeque and unable to access your grill due to winter weather. Satisfy your summer cravings with Nanas Barbeque chicken year round. A three generation family favorite! Of all the holiday dishes our family ate this past week this was our children’s first choice! BBQ Sauce Ingredients : 1/4 cup vegetable/olive oil or ¼ cup melted butter. 1 tsp. garlic salt or 1 garlic clove. 1 tsp. salt 1/8 tsp. black pepper 2 tbs. white vinegar 2 tbs. worcestershire sauce 2 tbs. dried minced onion or one medium grated onion. 1 bay leaf (optional) remove bay leaf before pouring. ¾ cup catsup ¾ cup water Mix and bring to boil on stove top then simmer for 5 minutes. This BBQ sauce is delicious when poured over your rice serving. It is a must try! Pre-Heat Oven to Broil on medium to low heat. Place Chicken Thighs in 2-3 inch pan - start with skin side down. Pour prepared BBQ Sauce evenly over Chicken Thighs (other cuts optional). Cook for 45 miuutes to 1 hour Check every 10-15 minutes and rotate each time.   First, there were your Grandmothers favorite recipes…then they served Ambrosia!
12 to 15 Seedless Navel Oranges – Peel, Cut Out Membranes, Slice
1 Can of Crushed Pineapple in own juice with no sugar added
1 6 Oz. Birdseye Frozen Coconut
Mix all three ingredients in a container and refrigerate overnight.
Grandma’s Ambrosia is so good you will want to hide it in the fridge!

Cornbread Dressing and Chili...A great way to utilize leftovers while making your football watch party favorites. Combine these two meals into one!
I always make extra dressing because it is a family favorite! Simply place the Cornbread dressing in the center of the bowl and surround it with hot and hearty Chili! 🌶
CookinwithCoach Cornbread Dressing
Pre-Heat oven at 450
Take a paper towel (prior to placing the Iron Skillet in Oven w/o ingredients) and wipe a layer of Vegetable Oil, covering the inner surface of 6” Iron Skillet. Once Oven is preheated place in the oven for 5-6 minutes.
Mix in Bowl : 2 Cups Martha White Self Rising Cornmeal Mix Hot Rise 1 3/4 Cups of Buttermilk 1 Egg ¼ Cup pure vegetable oil 6” Iron Skillet The recipe calls for two cakes (bake one cake at a time)
Better to have it moist than too dry. Once stirred and mixed check to see if the mixture will pour well. If too thick add Buttermilk and mix in.
Use heavily padded Hot Pads to remove skillet. Place on top of the stove and pour in the mix. If it is hot enough it should sizzle. Cook for 20 minutes. Take a wooden spoon and check the middle of the cake for firmness. If not firm keep checking in 3 minutes intervals. When ready you should see browning around the edges of the cake. Once each cake is ready to place on towels or plate to cool.
Ingredients for the Double Batch : (To make single batch ½ ingredients) 2 Pre-made cornbread cakes 2 to 2 ½ Cartons of Chicken Broth 32 oz 4 medium onions, chopped 2 Stalks of Celery, chopped Sage-Start off with ¼ Teaspoon, then adjust after for taste. Yellow Mustard-3-4 Tablespoons, then adjust after taste Pre-heated oven to 350
Boil broth w/ onions n celery until tender. Crumble cakes into broth mixture and stir until semi-moist. Add Sage, Mustard, and mix. Taste test and then pour into Pyrex Glass 15” x 10” x 2”. Bake for 25-30 minutes at 350. When ready the top will become light brown. Check as you go for dryness. If it is to dry sprinkle broth sparingly over as needed.
CookinwithCoach Chili 
Ingredients : 2 Packets(1oz) McCormick Seasoning Mix 1 lb. ground beef 1 entire stalk celery 2 medium onions 1 green bell pepper 2 tablespoons butter Salt and Pepper to taste 5 cans Dark Red Kidney Beans (15.5 oz) 2 cans petite diced tomatoes in sauce (14.5)
Instructions : Melt butter in a large pot. Slice and chop bell pepper, onions, and celery. Add to pot. Cook on medium-high heat until tender. Lightly salt and pepper. Add water as needed. Next, add Hamburger Meat and Brown. Ensure all pink in meat is gone. Drain excess fat. Replace drained meat, cooked bell pepper, onions, and celery back into the pot. Add diced tomatoes and stir over medium-high heat. Add Chili Packets and stir. Add water as needed. Add kidney beans.  Bring to boil slowly and continue to stir. Taste test before it becomes too hot to see if enough salt and pepper have been added. If it tastes too acidy you can add Tablespoon of honey or sugar. Once it starts to boil let simmer for 10 minutes.
Serve and enjoy!!
