Mini Hot Ham & Cheese Sandwiches
Ingredients 24 Hawaiian Rolls, Original 1 lb thinly sliced deli ham 1 pkg Swiss cheese, 10 or so slices 2 sticks butter 2 Tbsp minced onion 2 tsp dried mustard 2 tsp Worcestershire sauce Celery seed sprinkled over top-optional Directions Slice rolls in half lengthwise - and flip the top half off. Top with a layer of ham, a layer of cheese and another layer of ham.Put top layer of rolls back on and cut them into individual rolls. Do this with both packages of rolls.Place the individual sandwiches into two pans.Melt butter in small sauce pan - adding onion, mustard and Worcestershire sauce.Mix well. Using a large spoon, spoon the mixture evenly over all of the rolls. Sprinkle some celery seed over the tops.Cover and refrigerate at least one hour. ( I often prepare these ahead and refrigerate over night)Bake at 350 covered for about 8 minutes and uncovered for 8 minutes. Serve warm (also great at room temperature)**Great to keep a full pan in fridge, unbaked, and take out a few as needed **

Easy Crockpot Beef & Noodles
Ingredients: 3 lb Chuck Roast 12 oz Package of Frozen Homestyle Egg Noodles (I used Reames frozen noodles) 4 cups Beef Broth 1 packet of Onion Soup Mix 1 packet of Brown Gravy Mix Salt & Pepper, to taste
Directions Place the beef into the bottom of the slow cooker. Season with salt and pepper. Sprinkle the onion soup mix along with the gravy mix over the beef. Pour the beef broth into the crockpot.
Place the lid on the slow cooker and set to LOW for 8 hours. After 8 hours, remove the beef from the crockpot and shred. Return the shredded beef to the slow cooker with the frozen homestyle noodles.
Place the lid back on the crockpot and cook for 30 more minutes. Serve and Enjoy! Servings~6-8 via~thekitchenwife

No Bake - Pecan Coconut Praline Cookies! Melt in your Mouth! Great idea for Christmas gifts!! Ingredients: 2½ cups sugar ½ cup evaporated milk ½ cup corn syrup ½ cup butter 1 teaspoon vanilla 2-2½ cups chopped pecans 2½ cups grated coconut Set pecans, coconut, and vanilla off to the side Mix sugar, evaporated milk, corn syrup, and butter in large saucepan. Bring to a rolling boil & boil for 3 minutes. Remove from heat & add pecans, coconut, and vanilla Stir for about 4 minutes. Take a spoonful of batter and place on wax paper. Let it sit until batter has hardened. Remove from paper and enjoy.

White Bean Chicken Chili White bean chicken chili simmered in a crockpot with whole roasted jalapenos, tender beans, corn, and lean chicken breast. Ingredients 3 jalapeño peppers 2 tablespoons olive oil 4 cloves garlic, minced 1 1/2 cups yellow onion, 1/4-inch dice 1 tablespoon cumin 1 1/4 pound boneless skinless chicken breasts 1 cup roasted green chilies, canned, divided 2 1/2 cups white beans, (2-15 oz canned) drained 1 cup unsalted chicken stock, divided 1 1/2 cups corn, (15 ounces canned) 1 1/4 teaspoons kosher salt, more as needed 1/4 teaspoon black pepper Instructions Line a small baking sheet with foil. Turn on broil setting on the oven. Evenly space out the three jalapeños on the sheet tray. Place sheet tray on the highest rack in the oven. Roast the jalapeños until the skins brown and blister, turning over as needed to get all the sides roasted, about 15 minutes. Place the roasted chili’s in a small bowl and cover tightly with plastic wrap. Allow the chilies to come to room temperature; the trapped heat will make the skins easier to peel. Once cooled, remove the skin and stems. If you like a very spicy chili, leave the seeds, for a more mild chili remove the seeds and discard. Set the jalapeños aside. In a large microwave-safe bowl add olive oil, diced onions, minced garlic, and cumin. Stir to combine. Microwave for 3 minutes, stir and cook another 2 minutes until onions are tender. Add to slow cooker. Add chicken breasts, ½ cup of the roasted chilies, corn, 1 cup of the white beans, ½ cup chicken stock to the slow cooker. In a blender, puree ½ cup roasted green chilies, roasted jalapeños, 1 cup beans, and ½ cup chicken stock until smooth, 45 seconds. Add to slower cooker. Add salt and pepper to slow cooker. Cover and cook on high for 3 hours, or low for 6 hours. Remove chicken and shred or cut into cubes. Add back to slow cooker and stir to combine. Taste chili and season with more salt and pepper as needed. Serve chili with toppings as desired. Servings ~ 4 via~jessicagavin

 MONDAY - CROCK POT TACO SOUP Ingredients 1 pound ground beef 1 onion, chopped 1 (16 ounce) can chili beans, with liquid 1 (15 ounce) can kidney beans with liquid 1 (15 ounce) can whole kernel corn, with liquid 1 (8 ounce) can tomato sauce 2 cups water 2 (14.5 ounce) cans peeled and diced tomatoes 1 (4 ounce) can diced green chile peppers 1 (1.25 ounce) package taco seasoning mix In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside. Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours. 
 TUESDAY - PEPPERED SHRIMP ALFREDO Ingredients 12 ounces penne pasta 1/4 cup butter 2 tablespoons extra-virgin olive oil 1 onion, diced 2 cloves garlic, minced 1 red bell pepper, diced 1/2 pound portobello mushrooms, diced 1 pound medium shrimp, peeled and deveined 1 (15 ounce) jar Alfredo sauce 1/2 cup grated Romano cheese 1/2 cup cream 1 teaspoon cayenne pepper, or more to taste Salt and pepper to taste 1/4 cup chopped parsley Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Meanwhile, melt butter together with the olive oil in a saucepan over medium heat. Stir in onion, and cook until softened and translucent, about 2 minutes. Stir in garlic, red pepper, and mushroom; cook over medium-high heat until soft, about 2 minutes more. Stir in the shrimp, and cook until firm and pink, then pour in Alfredo sauce, Romano cheese, and cream; bring to a simmer stirring constantly until thickened, about 5 minutes. Season with cayenne, salt, and pepper to taste. Stir drained pasta into the sauce, and serve sprinkled with chopped parsley. 
 WEDNESDAY - CHICKEN FRIED RICE Ingredients 1 egg 1 tablespoon water 1 tablespoon butter 1 tablespoon vegetable oil 1 onion, chopped 2 cups cooked white rice, cold 2 tablespoons soy sauce 1 teaspoon ground black pepper 1 cup cooked, chopped chicken meat In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds. Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot. 
 THURSDAY - UNSTUFFED CABBAGE ROLL Ingredients 2 pounds ground beef 1 large onion, chopped 1 small head cabbage, chopped 2 (14.5 ounce) cans diced tomatoes 1 (8 ounce) can tomato sauce 1/2 cup water 2 cloves garlic, minced 2 teaspoons salt 1 teaspoon ground black pepper Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes. 
 FRIDAY - ENGLISH MUFFIN PIZZAS Ingredients 4 English muffins, split 1/2 cup canned pizza sauce 2 cups shredded mozzarella cheese 16 slices pepperoni sausage Preheat the oven to 375 degrees F (190 degrees C). Place the English muffin halves cut side up onto a baking sheet. Spoon some of the pizza sauce onto each one. Top with mozzarella cheese and pepperoni slices. Bake for 10 minutes in the preheated oven, or until the cheese is melted and browned on the edges.
