Where did Sebatians got his lastname from? Did O!Ciel name him that too?
Where did "Michaelis" come from?
Good question.
Well, there are three things I can think of.
There was a Sebastien Michaelis, a French inquisitor and demonologist. Our earl might have given Sebastian that last name a bit later, as a sort of joke, when it became apparent that Sebastian might need a last name. Maybe it was chosen in the spur of the moment, during one of his assignments as watchdog.
S2 of the anime has some narration near the end, like on the last episode -- I think -- where there's a meaning for the name, but it's based on a similar sounding word in Japanese. To me, that has nothing to do with what Yana-san was thinking when she made the decision to use this as the demon's name. Our earl would not have used a Japanese word or concept to name him, so I don't consider this canon. At least he would have no reason to do so, so that's an anime-only explanation, provided by anime writers... not the original author.
There is a very real possibility that Yana-san got a lot of inspiration from the real Sebastian Michaelis who currently lives and works in London... as the Tea Master for Tetley. I've posted some stuff about him before and even posted some shitposts about him and our demon Sebastian. However, our earl wouldn't know anything about a Tetley's employee living now. So, I'd go back to #1 for how Sebastian gets the name in-story.

i'm having my Fancy Black Tea (purchased at the best tea shop in this city.......... I love it so much. it is for special occasions, which at present moment, means whenever the heck I feel like it) right now but, as a semi-broke jobless student trying to save on money, my go-to tea for any and all occasions (first of all, the go-to is not Starbucks because I can't afford to pay 7-8 CAD for a hot beverage in this economy. I reach for a hot beverage when I'm upset, and I'm upset easily and often these days. or maybe I just want tea all the time, and that would be a lot of money. Also now that I'm home I no longer have near-instant access to three excellent coffee shops within walking distance, which is probably just as well) during Hard Times or Medium Hard Times or Annoying Times or I Just Need Tea Times basically goes as follows:
Tetley's black tea (the best option out of the cheapest possible options in this neighbourhood). Throw that teabag into a mug
steep it for a long time (I put in the water, I forget about my tea, I sprint back in a panic. The tea is dark by then)
Oat milk (splish splash of it). This should result in tea that should be the colour of tea.
Spoonful of honey (preferred sweetener)

bc my dad's from england I've been having tea w milk and sugar since I was Quite Small (I think there's a picture in the hallway of baby harper drinking it out of a giant beer mug)
so I always find it super fascinating that most of my friends had never had milk in ANY hot tea before I made it for them. and I get so giddy when they ask for it again skhfsf
