I'll introduce you to some new sake next year. Yamashiroya series brewed by Koshi Meizou in Nagaoka City, Niigata Prefecture, used to be all fire-aged, but since 2022, only new sake has been released in a limited time. It has a freshly pressed, slightly muscat-like aroma, a citrus-like overtone in the mouth combined with a pleasant gasiness, soft umami of rice, and moderate acidity. The crisp flavor of "Gohyakumangoku," the rice used to make this sake, and the strong core of umami that is typical of a sake made from a sake yeast yeast, will go well with a variety of foods that are in season during the winter season. It is the season for delicious nabe (hot pot). I would like to enjoy this sake over a pot of hot pot.
