pineapple upside down cake

Low-carb pineapple upside-down cake?? GUYS! This is the first time I've had this dessert in SIX YEARS. It is not an easy recipe to cut carbs on, because that so screws with the texture! But, this...this is good, if I do say so myself! Here it is:

3 sticks butter 1 and 1/2 cups vegetable glycerin, separated

1/2 cup stevia 1/2 cup stevia and 1/2 cup sugar-free french vanilla coffee creamer, blended

1/2 cup white flour, 1/2 cup coconut flour, and 1/2 cup carbquick, blended

1/2 cup egg substitute or 2 large eggs 1/2 cup egg whites

1 tsp plus one dash salt 1 tbsp cream of tartar, separated

2 tsp baking powder 1 can crushed pineapple (I used Golden Farms from Walmart, because the whole can is only 56 grams of carbs. Most brands are higher.)

About a quarter cup of nut milk or regular milk, if you prefer.

Preheat over to 400f. Place a metal bowl in the fridge to get cold.

Drain the liquid from the pineapple into a saucepan. Set the pineapple aside. Add two sticks of butter and heat on medium heat, until bubbly. Let simmer for about five minutes, then add one cup of vegetable glycerin, 1/2 cup of stevia, and the dash of salt. Let simmer for about ten to fifteen minutes to form a syrup.

Spray muffin cups or a cake pan with vegetable spray. Make it a good heavy spray to prevent sticking. Add pineapple to the bottom(s).

Once syrup is reduced, divide evenly into muffin cups or pour into cake pan over the pineapple. Set aside.

In a mixing bowl, melt the remaining stick of butter. Once melted, add the egg substitute and the remaining half cup of glycerin. Whisk in all the dry ingredients, except for 2 tsps of the cream of tartar. In the metal bowl, use a beater or whisk to whip the egg whites, until soft peaks form. Gently add the cream of tartar. Keep whipping until stiff peaks form. Gently fold the egg whites into the batter.

Add evenly to muffin cups or cake pan. Bake for about twenty-five minutes. There will be a dark edge around the muffins, but they won't be burnt. Also, be careful of steam! Open your oven slowly and once halfway through. I'm not sure why, but I always get a lot of steam in my oven, whenever I bake with glycerin.

PINEAPPLE UPSIDE-DOWN CAKE

6 Ingredients

440g can pineapple slices in juice

1/3 cup firmly packed brown sugar

90g butter, softened

1/2 cup caster sugar

2 eggs, lightly beaten

1 1/4 cups self-raising flour, sifted

5 Method Steps

Step 1 : Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 20cm (base) round ring pan. Line base with baking paper.

Step 2 : Drain pineapple, reserving 2 tablespoons juice. Cut pineapple in half.

Step 3 : Sprinkle brown sugar over base of baking upside-down prepared pan. Arrange pineapple, just touching, over sugar.

Step 4 : Using an electric mixer, beat butter and caster sugar for 3 minutes or until light and fluffy. Add eggs, 1 at a time, beating after each addition.

Step 5 : Add flour and reserved pineapple juice. Stir to combine. Spread mixture over pineapple. Bake for 35 to 40 minutes or until a skewer inserted in cake comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool. Serve.
