Super kale salad! I was attempting to duplicate a recipe which I tasted when I passed by NYC a couple of weeks ago. I couldn’t remember all the ingredients so went for the main flavours. It came out yummilicious! I started by massaging the kale with apple cider vinegar, then roasted shredded coconut, sunflower and hemp seeds, then went on to melt some raw coconut oil and added chopped red onions. To finish, I seasoned with dried garlic, chilli and sea salt! My first harvest from my container garden...beautiful Claytonia aka Winter Purslane or Miners Lettuce. This green is super easy to grow and is actually frost tolerant! It’s delicious and packed with vitamin C amongst other health benefits. No matter how small the space you have, there is always an edible that you can grow at home.
