Tablet Theory: The exhibits don't actually get their historical figure's personality and memories, they get what the person who created them believes those memories and personality to be (or the more needlessly complicated but poetic version: they take on what museum visitors believe about them). This would only affect exhibits who were created by someone else, so it wouldn't apply to Ahk and his family (or Rexy/the other animals, but we wouldn't be able to tell either way).
This is how Teddy, who irl apparently said some fucked up things about Native Americans, was able to fall in love with Sacagawea. It could mean that mummy!Kahmunrah is more chill than wax statue!Kahmunrah. It could also solve the potential paradox of museum exhibits knowing things about themselves/their time periods that historians don't know (just ignore the end of NATM 1. It's my bedtime) and then sharing that with random people during the night program.
The way I'm explaining it being canonically stated (in the books I think) that the exhibits take on the memories and personalities of their irl counterparts is that that's from the perspective of Larry/Nick, who don't know that it's not quite right.

And just had such a bittersweet feeling seeing a a brand new picture-that he'd never seen before- of a couple of his friends alive and moving again?

Nobody asked, but here’s what I think happens to Nick Daley post-NATM3.
Is being a DJ his career path? No, not for the long run. He goes to Ibiza for a while, parties every night, absolutely crushes it, and then gets burnt out. Six months in, he’s wondering about his long-term goals once more. After lengthy phone calls with Larry and Don, Nick decides to go back to NYC to figure things out.
He works odd jobs, takes various night classes for every subject imaginable, and overall just tries to figure out what he wants to do.
Everything changes when he takes an Anthropology class. Suddenly, everything clicks for him.
He enrolls into university, pushes his way through years of schooling. He interns at museums, studying archeology and history. And finally, it comes time for him to write his dissertation. Nick struggles to find a topic to write about, but luckily, he has a LOT of experience with historical figures.
He writes his dissertation about a dear friend of his: Ahkmenrah. And once it’s done, and he’s officially a forensic anthropologist, he immediately lands a job at the British Museum.
Every night, he gets to hang out with some of his friends again. And finally, Nick feels like he’s found his purpose.
