Mickey and Kermit Racing
There's something sort of fascinating about Mickey's Speedway USA and Muppet RaceMania in that they are mascot-based racing games on the Nintendo 64 that would just not happen today given the shared ownership. Makes you think.

The Greenwood Village track from Diddy Kong Racing actually appears in games from three different franchises, each of its appearances being more obscure.
Top: how the track appears in Diddy Kong Racing, where is it part of the regular track selection.
Middle: in Jet Force Gemini, also developed by Rare, Greenwood Village is an unlockable multiplayer map.
Bottom: in the Nintendo 64 version of Mickey’s Speedway USA (note Mickey Mouse in the car), also developed by Rare, the track is included in the game’s files and can be accessed with cheats.

I gotta be honest "my interests in Mickey Mouse lie in his adjacent-ness to Sonic the Hedgehog" is a really funny thing to say. No judgment just funny.
I was never a Disney kid growing up!!! I don't think I've ever fully seen anything with Mickey as a main character... Minus steamboat Willie when it went public. I've seen stuff with Donald and Goofy (mostly duck tales and then the goofy movies) but no mickey. EXCEPT FOR MICKEY'S SPEEDWAY USA THAT GAME FUCKING RULES AND IS THE SECOND BEST RACER ON THE N64 (after Diddy Kong) and I love that the tracks are all based on American cities (or states) and that they decided to make Chicago into a fucking gross sewer racetrack like, listen to this shit
