For a satisfying weeknight dinner, put together a lasagna with Mexican influences using tortillas, ground beef, Colby-Jack cheese, and taco sauce. 1 jar taco sauce, 12 flour tortillas or more if needed, 1 packet taco seasoning mix, 1 cup shredded Colby-Jack cheese, 1 can refried beans, 3 cups shredded Colby-Jack cheese, 1/4 cup water, 1.5 pounds ground beef

Tried a new recipe tonight and turned out really good.
Mexican Lasagna
Ingredients
Olive Oil
Green Bell Pepper, seeded and chopped
Red Bell Pepper, seeded and chopped
Red Onion, chopped
Celery, chopped
3-4 teaspoons chili powder BLEND (I use Taco Seasoning)
Salt & Pepper to taste
Sweet Corn (canned or frozen)
1 Can Black Beans, drained and rinsed
1 Can Pinto Beans, drained and rinsed
Street Taco-Sized Corn Tortillas
Red Enchilada Sauce
Shredded Mexican Cheese Blend (or used a mix of Parmesan, Mozzarella and Cheddar)
Optional Toppings: Cilantro, Avocado or Guacamole, Salsa, Sour Cream, Peppers, Diced Tomatoes
Optional Add Ins: Shredded Chicken, Ground Beef, Ground Turkey, Ground Sausage
Directions
1. Preheat oven to 400 degrees then spray a 9x13" casserole dish with nonstick spray and set aside.
2. Heat olive oil in a large skillet over medium-high heat. Add bell peppers, celery, and onions, salt & pepper. Sauté until peppers are crisp tender. Add corn then sauté until tender. Stir in beans stirring until heated. Add seasonings and set mixture aside.
3. Place 6 tortillas in the bottom of the prepared baking dish. Spread a thin layer of the sauce on the tortillas. Add a layer of the vegetable mixture then a layer of cheese, and then top with another tortilla. Repeat vegetable, sauce, and cheese layers then top stacks with 1 more tortilla and cover with sauce and cheese.
4. Bake for 25-30 minutes or until cheese has melted. Serve with toppings and warmed enchilada sauce if desired.
