4 strategies to stop blood sugar swings and avoid that afternoon crash
Unless you have diabetes, you probably don’t give much thought to how your blood sugar changes throughout the day. You’d be wise to pay more attention: While some fluctuation is normal, many people experience major spikes and dips, which can sap your energy, derail your focus, and lead to weight gain, says Grace Derocha, MBA, RDN, CDCES, a dietitian and spokesperson for the Academy of Nutrition and Dietetics who specializes in workplace wellness.
Perhaps even more concerning is the fact that high glucose variability—meaning you have a significant gap between your highs and lows—has been tied to an increased risk of insulin resistance, or the inability to use insulin efficiently, which often paves the way for type 2 diabetes. Wide glucose variability may also increase your odds of having heart attack or stroke, according to a 2020 study published in Cardiovascular Diabetology. 
How to get off the rollercoaster? For otherwise healthy people (who don’t have diabetes), it largely comes down to making some key lifestyle changes, starting with what you eat. These four smart strategies can help even out your blood sugar so you feel better and stay healthier.
1. Watch out for surprising sources of sugar
You likely know that candy, pastries, and heavily-sweetened drinks (including soft drinks and various coffee concoctions) can all send your blood sugar soaring. But anything carb-heavy, even if it doesn’t contain added sugar or taste sweet, has the potential to cause a similar effect. Watch out for refined (white) breads and highly processed cereals, which are easy to overdo.
Bottled salad dressings and condiments like ketchup and barbeque sauce also often pack a surprising amount of added sugar, as do many plant-based milk alternatives. Be sure to read labels, and pick accordingly—especially if you tend to drown your salad and like your coffee extra light, warns Derocha.
Fruit is another potential offender, especially if you choose the dried variety or super-size your servings. “One of those little boxes of raisins is probably equal to 15-20 regular grapes” as far as (natural) sugar content is concerned, says Derocha.
Whole fruit is generally a better bet, but that doesn’t mean you should eat unlimited amounts when it comes to higher-sugar options like grapes, bananas, watermelon, and mango. “People think, ‘It’s fruit and it’s healthy for me, because it has a lot of fiber and vitamins,’ and that’s true,” she says. “But I had a patient that used to freeze grapes and eat the whole bag.” 
2. Eat fiber first
It might sound gimmicky, but there’s good evidence that simply changing the order in which you eat your food makes a big difference in terms of the impact it has on your blood sugar, says Jessie Inchauspé, a biochemist who studies the effect of food on health. Even if you don’t change the components of a meal—say, pasta, chicken, and vegetables—eating the vegetables first, followed by the protein and finally the carbs—can cut the resulting glucose spike substantially.
“We often talk about what to eat or not eat, but this is about how,” she explains, echoing advice shared in her new book, Glucose Revolution, and on her popular Instagram page. She points to several studies, including a 2018 research from the Journal of Nutritional Science and Vitaminology in which subjects were instructed to eat the same meal of rice, vegetables, and meat after an overnight fast on different days; when eating rice last, glucose and insulin levels were significantly lower 30 minutes after the meal than they were when they ate the rice first.
Fiber, Inchauspé explains, coats the upper intestines and creates a mesh that prevents the body from absorbing too much glucose from the rest of the meal. Protein and fat also help slow movement of food through the gastrointestinal tract, so by the time the carbohydrates enter the body they don’t flood the bloodstream with glucose as dramatically.
For bonus points, she advocates starting meals with an additional vegetable dish, such as a salad, and drizzling on some vinegar: “It can curb a glucose spike from a subsequent meal by up to 30%, because the acetic acid in the vinegar slows the breakdown of starches into glucose,” she says. “It also goes into the muscles and tells them to soak up more glucose” from the bloodstream.
“I was actually shocked when I learned this about vinegar,” she says, but “clinical trials have shown how it can impact your health from a glucose perspective.”
3. Be carb-consistent throughout the day
Going low-carb at breakfast and lunch for the express purpose of splurging at dinner doesn’t work if your goal is to keep your blood sugar steady. “You can’t bank carbs,” says Derocha. The best way to keep your blood sugar on an even keel is to have a similar amount of carbohydrates during each of your three meals (or, if you prefer, five mini meals).
On a similar note, while a sweet treat might seem most appealing mid-afternoon or late at night, the best time to give into that ice cream or cookie craving is actually right after you’ve finished eating a meal that contains some protein, fat, and fiber. Not only will you eat less of the treat,, but the other nutrients you just consumed will help blunt the impact on your blood glucose level and the impact won’t be as great as if you indulged on an empty stomach. For the same reason, consider starting your day with a savory (rather than sweet) breakfast, says Inchauspé.
4. Move after meals
To avoid a major post-meal blood sugar spike, resist the urge to lounge on the couch after dinner. Instead, do something moderately active for at least 10 minutes, says Inchauspé. The goal is to activate your muscles so they’ll seek out glucose from your bloodstream and utilize it rather than letting it linger there.
Indeed, numerous studies support the importance of moving after meals, including a 2021 meta-analysis published in the journal Sports Medicine; the authors concluded that 30 minutes of aerobic activity in the postprandial state is ideal for decreasing glucose and insulin levels in healthy adults. Derocha also points to research that found people with fasting blood sugar readings in the prediabetic range were able to modulate their high blood sugar simply by walking for 15-minutes three times a day (after each meal). “Even just cleaning up the dishes or folding laundry will provide some movement that helps lower blood sugar,” she says.

Amba Khatta Receipe
Amba khatta is a mouthwatering traditional Odia dish that combines spicy, acidic, and sweet flavours.
Raw mangoes are used in the preparation of ambaji khatta. Every Odia household makes this recipe frequently throughout the summer because there are so many different varieties of raw mangoes available at this time. If you don't want to use raw mangoes with skin, you may also take the skin off before using it in this recipe. Jaggery has historically been used to add sweetness and lovely colour. Cumin, fennel, nigella seed, fenugreek, and the mustard seeds also known as "Panch Phoron" are used to season amb khatta.
For fans of mangoes, this meal is a must-have. This amba khatta dish uses only a few common pantry ingredients. It is a quick dish that takes only 15 minutes to create. Just
List of Ingredients:
Mango - Raw mango is great for our eyes and immune system. Additionally, it lessens the summertime rise in body temperature. I'm using raw, skin-on mangoes for this Amba Khata dish, sliced into cubes for aesthetic purposes.
Jaggery - Jaggery contains more antioxidants than most other sweeteners. It enhances digestion and supports glucose regulation.
Panch Phoron: This promotes weight loss, improves metabolism, and lowers cholesterol. The majority of Indian dishes use it.
This recipe's spice comes from dried chilli. I just used two extremely hot chillies. You can increase the amount of chillies in Amba Khatta to make it spicier.
Asafoetida - These are antibacterial and antifungal, and they also safeguard the health of the brain. This aids in better digestion and is helpful for gastrointestinal issues. I included this in our recipe to receive all these health advantages in addition to the lovely aroma.
Curry leaves: Beneficial for hair and eyesight. It's a common ingredient in many Indian recipes.
Ginger - The meal gains additional flavour from chopped ginger.
Add salt to raw mango to balance the flavour and lessen its sourness. Without salt, no dish can be made.
Black Salt: For this recipe, I enjoy the combination of salt and black salt. Use only salt if you're not a fan.
Turmeric powder: The immune system is strengthened by turmeric powder's anti-inflammatory capabilities. Additionally, using this to give the dish a yellow tinge.
As I previously stated, my dried chilies are too spicy, so I added a 1/2 teaspoon of Kashmiri chilli powder to obtain a gorgeous colour for the Khatta.
One tablespoon of wheat flour can be used to thicken the gravy.
Add roasted cumin powder at the very end to get the real flavour. It's good for digestion.
For deep-frying mangoes, use mustard oil. Olive oil or vegetable oil are both acceptable.

Vietnamese Street Food Snacks You Should not Miss!
Vietnamese Jicama Roll, Bò Bía
The little brother of the famous Vietnamese Spring Roll a.k.a Goi Cuon, Bo Bia is one of the easiest snacks to find when walking down the street of Ho Chi Minh City. This spring roll packs a unique punch of flavor and texture in comparison. With rice paper on the outside, Jicama, Beef Sausage, Dried Shrimp, fried egg, fried shallots, and multiple herbs on the inside this little roll is not to be missed.
You can find this served with a peanut dipping sauce, don’t forget to add the chili for that added heat.
Vietnamese Rice Paper Salad with Dried Beef, Bánh Tráng Trộn
The question “What is your favorite Vietnamese Food?” is a staple during our Interview process at Back of the Bike Tours. Eighty percent of the time I am given the quick and enthusiastic answer of, “Banh Trang Tron!”
Like so many other dishes in culinary history, this dish started out just trying to solve a problem. What to do with all of that scrap rice paper? Well, make a salad out of it! Using thin strips of rice paper to compose the bulk of the salad, Dried beef, Dried Shrimp, Quail egg, Vietnamese Hot Mint, Julienned Green Mango, toasted peanuts, and fried shallots are tossed together with a loose, dark, sweetened soy sauce with kumquat juice.
After being thoroughly mixed, it’s tossed into a bag with disposable chopsticks shoved inside.
This concoction is a fun texture experience and bursting with a great combination of flavors. This dish is great for accenting the strong and unique flavor of Vietnamese Dried Beef.

Quail fried in Butter, Cút Chiên Bơ
It’s not difficult to miss the man on the street corner with a rotisserie over open flames. What might be difficult to miss is the small birds that are strung through the poles roasting over the flame. Every few minutes, the quail vendor will brush these little birdies with his own oil or butter mixture that will usually contain a dried herb and spices to add a unique flavor to each vendors quail.
These quail can be taken to a whole another level when they are deep-fried in sweet butter and served with a baguette. Fried Quail will normally come with pickles, Vietnamese Hot Mint, and Cucumber as an accompaniment to the dish.
Some might be grossed out by the serving of the quail head still attached to the neck. No worries, it has a great pop to it when you take it in one bite.
Pork and Pork Sausage Skewers, Heo Nướng - Hồ Lô Nướng
Grilled pork over an open fire! Count me in! These meat skewers are a great pre-game to hold you over before dinner.
Heo Nuong, Marinated Pork Skewers, find an excellent balance between chewy and tender. That is when the pork shoulder is purchased, then cut, and marinated for 6-8 hours in a mixture of honey and sesame seeds.
Holo Nuong, Sweet Pork Sausage balls, can’t help but leave a smile on your face when your teeth pop the roasted casing on the outside to find yourself enjoying a great balance of fat and sugar that is mixed into the sausage. Named for its resemblance of a round squash, these sweet morsels of meat are typically found in Southern Vietnam.
Don’t miss the chili sauce and pickles that are a necessity in balancing out the rich meaty flavor. Also, a nice cold beer goes quite well.

Hailing from the mountain area of Dalat and one of the newest to arrive in the food scene of Ho Chi Minh City, Banh Trang Nuong, has been dubbed the “Vietnamese Pizza”. Here are the basics for almost every Banh Tranh Nuong, Rice paper, open flame, egg, and cheese. Top this with anything from Dried beef, green onions, spicy chicken, or even take the desert approach and try some banana. This crispy snack is being served in little restaurants or right on the street so it isn’t hard to miss.

Simple Carbohydrates - White rice and other refined carbohydrates lack fiber and break down into simple sugars in the digestive tract. Grains that contain gluten like Wheat, all purpose flour, and spelt should be avoided. This group of foods consists of breads, crackers, chips, pasta, and noodles. 
Refined oils and fats - Foods rich in saturated fats are not easy to digest. Canola oil, soybean oil, sunflower oil or margarine are few such examples and should be avoided.
Food containing yeast - Candida is a yeast, and by eating foods that contain yeast, you add additional yeast to an environment  that already has a lot of yeast. Foods high in yeast include:
Alcohols produced with yeast fermentation - Wine, beer, Campagne
Fermented foods - Vinegars, Soy sauce, ketchup, mayoneise, dressings and seasoning ingredients.
Flour based foods - Breads, Pizza, Burgers 
5. Food containing molds - Foods with a lot of mold can increase the amount of intestinal fungal spores that help Candida flourish. Foodstuffs with mold include:
Meat and Fishes - Pickled or dried meats, smoked fishes, pork, bacon  
Dairy products - Milk, Yogurt, Cheese, cream, butter
Nuts and seeds - Peanuts, cashews, pistachios.
Dried or canned fruits 
6. Mushrooms - They are fungus and cause yeast overgrowth. Thus it is advised to avoid any fungal component when treating Candida to put a check on the yeast growth.
7. Foods and beverages with caffeine - Caffeine stimulates the adrenal glands and can increase the production of adrenaline and cortisol, which disrupts the function of the brain resulting in hormonal imbalance. Food and beverages like chocolates, Kola nuts, Guarana, tea, coffee, and energy drinks should be avoided.
In addition to avoiding some foods, some eatables should be consumed to regulate and keep the candida overgrowth under control. The optimum diet is one that is rich in healthy protein, lipids, and complex carbohydrates. 
​​Protein - Animal sources of protein include chicken, fish, shellfish, and eggs. Plant sources of protein include beans, legumes, nuts and seeds without molds such as walnuts and almonds.
Fresh vegetables and fruits - Fresh green leafy veggies such as collards, spinach, cabbage, Kale and low sugar fruits like oranges, lime, strawberries, blackberries, rasberries, avocado, guava and peaches can be consumed.
Ginger and Garlic - They have antifungal and anti-inflammatory qualities that can guard against the growth of candida.
Cumin and Turmeric - Despite being regarded as spices, they work well to control Candida overgrowth. Curcumin, which is present in turmeric, has antifungal properties and may destroy candida yeasts.
Complex carbohydrates - Grains like oats, brown rice, teff, buckwheat, quinoa, millet can be consumed in moderate amounts.
Good fats - Among the list of beneficial fats are olive oil, coconut oil, Flax seeds oil, fish oil and Chia seeds.

The Differences Between Bitters Tinctures and Shrubs
Finishing touches define art. “A Day in the Life” loses masterwork status if the Beatles don’t add the song’s final lingering piano chord. Without the slightly mischievous upturn in her mouth, Mona Lisa is merely a pretty portrait. Hell, the room in “The Big Lebowski” isn’t tied together without the rug, per the Dude’s infinite wisdom. In the world of cocktails — mixologists’ own form of art —bitters, tinctures, and shrubs are a bartender’s version of these coups de grâce. The right number of drops, drips, or dashes from these power-packed elixirs elevates a libation from mundane to magic, leaving the imbiber little choice but to acknowledge the sublime craftsmanship in the glass.
The shared source of their sorcery is their intensity, which is why they’re typically doled out in teensy amounts. “All three are designed to be highly concentrated ingredients,” explains Gareth Moore, beverage director of Home & Away in San Diego. “Because of this, they can drastically change a drink’s flavor profile with just a few drops. Once you know how to use them, you can build a drink to a specific flavor profile efficiently.”
Originally, the trio’s shared purpose was intended to make those consuming them feel good in a whole different way. “I think it’s important to know that all three started out as medicines,” states Jamie White, co-owner and bartender at Pearl Diver in Nashville. “Even though they have these similar backgrounds historically, it’s important to understand they all have different profiles of ingredients and use.” The best way to get a handle on these differences is by looking at how they’re built. Bitters are made with a pure grain spirit inundated with bittering agents like fruit peels, spices, or funky stuff like bark or cassia. Tinctures act as straight-up botanical, fruit, or vegetable infusions without any bitterness. A shrub adds sugar to fruit juice and uses vinegar to cut the sweetness.
Many imbibers and bargoers these days have an awareness of how these ingredients are used, but this hasn’t always been the case. Those of us who muddled through the bad old days of the pre-2000 bar scene had a vague sense of Angostura bitters’ existence back then, but that was only because we had one friend smart enough to order an Old Fashioned while we did Kamikaze shots. Regardless, bitters were a misunderstood ingredient. Tinctures and shrubs, on the other hand, were fully unknown substances.
This changed with the craft cocktail movement’s nationwide explosion in the 2010s, when bartenders from Orlando to Omaha dug deep into drink history and resurrected their usage. This coincided with a bitters boom marked by several upstart companies experimenting with unique and funky flavor profiles. This one-two punch created a renaissance of cocktail enhancements, one that fully blossoms when you look at each ingredient separately.
Bitters
Cocktail bitters (as opposed to digestive bitters like Amaro Montenegro or Fernet Branca, which are their own beasts) are highly concentrated concoctions designed to add flavor depth and balance to a cocktail. They can also occasionally act as a drink salvager, even for the professionals. “They’re sometimes used as a savior to fix a cocktail that I didn’t nail the first go-round,” White says. “It’s one of the reasons why they usually come in at the end of a drink for me.”
Angostura, Peychaud’s, and orange bitters are the holy trinity of bitters, and they’re essential if you’re making classics like Old Fashioneds or Sazeracs. But they can (and should) lay the groundwork for the kind of alchemy that leads the home bartender to more advanced voodoo.
“Don’t be afraid to experiment!” says Ashlyn Miyasaki, bar manager at Bar Henry in Los Angeles. “Next time you make Moscow Mules at home, try adding a couple dashes of Angostura bitters and see what you notice. Add orange bitters to your Martini. Try different brands of orange bitters and use them in tandem. Once you’ve got a feel for it, then you can branch out to different drinks and unique bitters.”
You can even go beyond the recommended two dashes of bitters — if you dare. Bartenders love the Trinidad Sour, a delicious yet brazen concoction that calls for a whopping 1.5 ounces of Angostura. It tastes like how prog metal sounds: bold, burly, and relentlessly complex.
Making Your Own Bitters
Making bitters is fun, and is easier than you might think. Here’s a recipe to get you going:
What You’ll Need:
16 ounces Everclear
4 teaspoons of botanicals, preferably four different botanicals
Four 4-ounce Mason jars
In each jar, add 4 ounces of Everclear and one teaspoon of a botanical. Label each jar with the botanical used, and seal. Let botanicals steep for about two weeks, shaking the jars daily and tasting them regularly. Strain out the matter with a coffee filter. Dilute with water or sweetener if desired. Mix the contents of each jar.
NOTE: Common botanicals used in bitters include juniper berries, cardamom, ginger, cloves, caraway, rose hips, and fennel. Your neighborhood spice shop should have ample supply. When you get the hang of it, you can also throw in flowers, legumes, or dried fruits to achieve extra funky goodness.
Tinctures
Tinctures are the metronomes of the bartending world, a steadying beat that bartenders break out to achieve singular flavor precision. “I use tinctures when a drink calls for something super specific, like black pepper,” White explains. “I can make a black pepper tincture and use a drop of it in a drink instead of trying to use a pinch of pepper. The drop of a tincture will always be more consistent.”
This sense of control can make it an ideal homemade ingredient if you fret about getting the drink’s flavor just so. And they will be homemade — the only tinctures you’ll find on the market are for medicinal use or are made from cannabis (which has its own medicinal purposes). But that’s no big deal. All you need to make a tincture is alcohol, the agent providing the infusion, and the patience for the infusion to do its thing. There’s no limit to what the infusing agent may be; people use everything from fruit and veggies, to herbs and flowers, so wander around your garden and see what looks delicious.
Making Your Own Tinctures
If you’re new to making tinctures, keep things simple. Here’s how:
What You’ll Need:
4 ounces high-proof vodka (at least 100 proof)
Infusion agent, such as fruit (for this example, use one a whole mango)
1 Mason jar
Place the mango in the jar. Pour in the vodka and seal. Put in the refrigerator for about a week, stirring and tasting each day.
NOTES: Using a higher-proof spirit could expedite things. If using berries as the infusion agent, fill the jar halfway with berries.
Once you get the hang of the process, though, you can push the boundaries of creativity a bit. This recipe from Gareth Moore is a great place to start:

What You’ll Need:
1 part cinnamon bark
4 parts high-proof bourbon (at least 100 proof: the stronger the proof, the better)
1 Mason jar
Fill a jar with the cinnamon bark. Pour in the bourbon and let sit in the refrigerator for one week. Strain out the cinnamon bark and transfer to a dropper bottle.
Shrubs
Because vinegar is involved, shrubs offer a little more food and drink-based versatility than bitters or tinctures. “Shrubs can make a nice base for vinaigrette salad dressings,” Miyasaki says. In a cocktail, shrubs’ mélange of vinegar, fruit, and sugar creates a bright, bold complexity that adds sweet, tangy, and tart notes, making it a favorite ingredient for bartenders when they’re behind the stick. “I prefer working with shrubs at my bar, but that’s because I know I’m going to be making a large volume of drinks every night,” says Moore.
Indeed, there is a bit of a conundrum with making shrubs at home. They don’t have the staying power of bitters and tinctures, which can both keep their integrity for about a year on a home bartender’s shelf. Shrubs are also designed for shelf life, but last half that long and will lose their mojo quicker the more they’re used. This doesn’t mean you shouldn’t make shrubs at home — you should, because they’re delicious. Besides, the vinegar makes shrubs a killer fruit preserver — a property that made them a hit back in the American colonial era. If given the choice between turning a past-its-prime peach into a superb cocktail ingredient or chucking it into your garbage in a few days, there’s only one good answer.
Making Your Own Shrubs
There’s a little more prep work involved when making shrubs compared to tinctures and bitters, but they’re still relatively easy to make. Besides, every shrub you create gives fruit a second life. Here are a couple of recipes to get you started:

What You’ll Need:
4 cups ripe strawberries, hulled and halved
1 cup fresh basil leaves
4 cups sugar
1 teaspoon kosher salt
1 tablespoon balsamic vinegar
4 cups white wine vinegar
Place the strawberry halves and basil leaves in a large bowl. Add sugar and salt, then cover. Let set at room temperature, stirring occasionally, until liquid begins to form. Add vinegar, and stir until sugar is dissolved. Fine strain the liquid, and store in the refrigerator.
Grilled Peach Shrub (Courtesy Jamie White)
What You’ll Need:
1 peach, sliced and pitted
1 cup sugar
½ cup apple cider vinegar
½ cup regular vinegar
Grill peach slices until they have slight char marks. Mix all ingredients in a pot. Cook on low for 15 minutes or until sugar dissolves. Blend ingredients with a hand blender. Put back in the pot, and let simmer for five to 10 minutes. Strain and refrigerate.

19. What is the strangest thing you have eaten? When we were little my sister and I would sometimes eat raw dried spaghetti dipped in vegemite when there was no other easy snacks in the house. We called them cardboard sticks. (The food situation in my house wasn’t dire or anything, we were just too lazy to make a sandwich or something lol)
20. What are you most thankful for? I am thankful for the people I have in my life and for the amount of stability i’ve been able to have in my life in recent times.
21. Do you like spicy food? I do, but if I eat it often enough to increase my tolerance to it I get bad reflux. So I remain a spice wimp who can only have mild.
22. Have you ever met someone famous? Zakk Wylde, Chris Lilley, and some guy who was on Blue Heelers. Also I spoke to Tracy Grimshaw on the phone once. Meeting Zakk Wylde was funny because I was REALLY weird and embarrassing.
(Long story ahead, feel free to skip) Basically, my friend and I were 16 and wandering through the city high on acid. We saw Zakk standing near Hungry Jacks and became completely captivated by him. We had no idea he was some big famous rockstar, we thought he was just some random guy. I cannot convey to you how intense his presence felt at that time. It was like he was everything that is and ever will be metal but congealed into a human being and magnified by 2000x. (in case you don’t know him, he looks like this)

We were so high that we were very in our own world and felt like we were the only ones who really existed and that everything else was just kinda there for us to observe. So we started following him and discussing him as if he couldn’t hear every word we were saying. 
I remember us being like “He’s the most metal thing i’ve seen in my life” “He’s like Neptune, king of the sea, but a brutal version” “He’s the raw original concept that all other metalheads were disseminated from. He’s the true, the original.” It made sense at the time that he could be the origin point of metal and the first ever metalhead because time and space felt like it existed in a looser way than usual. We were really fixated on the idea that metal was invented through his very existence as a direct expression of self, then people copied him, then people copied those people and so on. 28. Do you like reading, what was the last book you read? I like reading books but I don’t always have the attention span for it. I tend to read more non-fiction than fiction. The last book I read was Nothing Feels Good: Punk Rock, Teenagers, and Emo. A really great book if you want to learn about emo history. The only downside is that it was published in 2003, before emo really took off in the mainstream. Had some insightful things to say regardless.
29. How do you show someone you love them? Idk I can’t think of a concise answer for this. I think it varies depending on who it is and what our dynamic is. When I took that love language test it said my love language was quality time.

A kinda sillier dream is that I'd start a cheerleading team where our routines are exclusively to metal songs. As well as entering competitions, we would also be an opening act for bands (in this dream i’m much better at cheerleading than I currently am). It would be cool ok

I haven’t done that in a long while. The limitations that ocd causes me makes it hard for me to imagine a relationship-- even a casual one--being workable. I usually go for Speyside whiskies and even the peatier ones from Islay. But Talisker not so much. I don’t know why but I just never got around to really sampling these whiskies from Skye. So it was a pleasant surprise to receive a bottle as a thank you gift.
Talisker is the oldest Single Malt Scotch Whisky made by the sea on the shores of the Isle of Skye, one of the most remote, rugged, yet beautiful landscapes in Scotland. It’s not my usual tipple but as a treat it reminds me of a warm welcome on a wild sea.
The Talisker 1978 whisky is a marriage of five sherry butts, filled for about three months with 40-year-old Talisker. Before arriving in Scotland, the casks were part of a solera, maturing in 40 year old amontillado sherry.
It's incredibly rare to see solera casks used to mature Scotch whisky, and even rarer for the ancient casks to have been used to create one of Spain's finest sherries. The result is an impressive whisky.
