- 7205 | Lavande et Miel
Bières de garde vieillie 12 mois en innox. Brassée en collaboration avec Jess & Phil des jardins du rucher de Chicoutimi. Le miel artisanal de fleurs sauvages est à l‘honneur, utilisé à cru. De la camerise et de la lavande québécoise ont aussi été ajoutées en fermentation. Il en résulte une bière douce et rosée aux arômes floraux, légèrement épicés et fruités. Finale toute en propolis.
- 7205 | Mûre de Boysen
Saison fraîche assemblée à des bières de fermentation mixte affinées 12 à 24 mois en fûts de chêne. L’assemblage a par la suite passé 12 mois supplémentaires en cuve avec de la mûre de Boysen avant d’être refermenté naturellement en bouteille. Nez complexe rappelant le vin rouge de macération. Point de sucre, pointe de vinaigre de framboise et finale en compote de petits fruits.
- 7205 | Gratzer à l’érable
Bière de blé fumée au chêne, affinée 36 mois en barriques de vin rouge, de rhum et de scotch tourbé inoculées de notre flore sauvage. La bière a par la suite été conditionnée naturellement avec du sirop d’érable du Domaine Deslongchampstin. Le nez est boisé et légèrement tourbé. En bouche, une pointe acétique perce doucement les saveurs boisées en roture vers une finale toute en érable.

James Bay Melts Out Northern-latitude landscapes—and seascapes—come to life in the lead-up to the longest days of the year. Early in June 2023, sea ice breakup was underway in James Bay, an offshoot of Canada’s Hudson Bay. The seasonal rhythms of sea ice are vital to the feeding habits of animals such as polar bears, seals, and walrus. The water and surrounding wetlands also provide habitat for marine mammals, including beluga whales, along with migratory shorebirds and waterfowl. The Moderate Resolution Imaging Spectroradiometer (MODIS) on NASA’s Terra satellite acquired this image of thinning ice on June 2, 2023. At the time of this image, little if any fast ice—stationary sea ice that is “fastened” to the surrounding coastlines—remained in James Bay. On average, fast ice starts growing along the coast of the bay in December and breaks up in mid- to late-May. By the end of July, mobile ice floes have typically all melted away. The open water at the bottom of the image appears in various shades of brown where rivers such as the Harricana, Moose, Albany, and Attawapiskat drain into the bay. Those rivers flow over boreal peat bogs, or muskeg, in the James Bay Lowlands on their journey out to sea. Partially decayed organic matter in the peat releases tannins that stain the water dark brown. Suspended sediment in the water gives it a tan color. Much of the remaining ice in the bay is also visibly stained with sediment. Canadian researchers studying sea ice in southern Hudson Bay note that sediment-laden sea ice is typical there. They speculate that most of the sediment is initially stirred up by tidal action across the region’s tidal flats. The sediment then gets incorporated into the ice, especially at the edges of the fast ice which easily crack and refreeze when tides ebb and flow. As snow and ice melt in the spring, sediment in the ice pack becomes concentrated on the surface and apparent in satellite imagery. The researchers also suspect that sediment transported via sea ice could influence the marine ecosystem. For example, ice may serve as a vessel for redistributing nutrients in the sea by depositing organic material from the tidal flats further from shore. In addition, heavily sediment-laden ice may block sunlight from photosynthetic organisms, including algae within the ice and phytoplankton in the water column beneath it. This could delay and dampen the magnitude of primary productivity in the spring, they write, but the potential impacts of this phenomenon are not well understood. These beauties and a few more of their friends will be available on Saturday, November 18th, during my Facebook sales event "Jen's Fall Crystal Sales Event" — bit.ly/sskc-nov2017 ★ Metaphysical Properties: Harricana, or Fairy Stones, are gorgeous naturally smoothed stones composed of Calcium Carbonate and were formed in quaternary deposits left in lakes by receding glaciers, specific to Northern Quebec. These concretions only form when the conditions are just right – when the water is too high they don’t form and when the water is too low they don’t form – only when the Fairies keep the water at a certain ‘dancing’ level do these stones form beautiful sculptures. The irregular lines on certain stones are traces left by miniature worms, or organic remains, which were fossilized thousands of years ago. They reveal themselves as textured etchings on an otherwise smooth surface. The Algonquins often carried these treasures as luck charms when they went on fishing or hunting expeditions. The biggest specimens occupied a place of honor in their homes.
