Bourbon Renewal !

2 oz. bourbon

1 oz. lemon juice

0.5 oz. simple syrup

0.5 oz. creme de cassis

1 dash Angostura Bitters

Add all ingredients to a cocktail shaker with ice and shake hard for six to eight seconds. Strain over fresh ice into a rocks glass and garnish with a lemon wheel or a couple blackberries on a pick.

Crème de Cassis

Le cassis n'est pas un fruit que j'avais l'habitude de consommer. J'ai eu la chance il y a peu, d'en sauver tout une caisse pour 3 fois rien. Il fallait en profiter! Ça a été l'occasion de redécouvrir cette petite baie acidulée, légèrement sucrée, au goût subtile.

Cette baie est un véritable trésor. Elle renferme beaucoup d'antioxydants et une grande quantité de vitamines, du fer, du calcium et des tanins. C'est un excellent allié pour booster vos défenses immunitaires, pallier à un coup de fatigue, soigner les troubles circulatoires ou encore l'hypertension. Je vous ai dit que c'était un trésor?

Après donc en avoir dégusté quelques coupelles de baies fraîches, j'ai décidé de tenter une crème de cassis maison, et vous le verrez un peu plus tard, une confiture mûres-cassis.

Je vous livre ici ma recette de la crème de cassis, un vrai délice.

Ingrédients

1,5 kg de cassis bien mûrs

2 bouteilles de bon vin rouge (type merlot pour ma part)

2 kg de sucre cristal

10 cl d'alcool pour fruits

Il faut, comme chaque fois ou presque, commencer par laver les fruits. Les cassis n'y échappent pas. Je vous conseille toutefois de les égrapper ou égrainer avant le lavage. Une technique facile pour cela consiste en l'utilisation d'une fourchette qu'on passe le long de chaque tige pour faire tomber doucement les baies dans le saladier.

Quand ils ont été bien rincés et égouttés, placez les dans une jatte que vous pourrez couvrir et écrasez les avec un pilon. J'avais un petit pilon en bois pour Mojito qui a très bien fait l'affaire.

Versez le contenu de vos deux bouteilles de vin sur votre purée de cassis, mélangez puis couvrez et réservez au frais durant 2 jours. Le vin va s'approprier les arômes du cassis et les tanins vont se mêler les uns aux autres.

Au bout de ces deux jours, filtrez le macérat (vin+fruits) à travers un tamis fin. Pressez bien le reliquat de fruits dans le tamis pour en extirper le plus de jus possible.

Pesez votre jus, versez-le dans une casserole et ajoutez le même poids en sucre. Portez à ébullition en remuant régulièrement et laisser cuire une dizaine de minutes. Laissez refroidir et filtrez à nouveau.

Préparez 4 bouteilles bien propres (si des 75cl ou avisez selon la contenance de vos bouteilles). Je recycle souvent des bouteilles de rosés de l'été, avec bouchon en verre pour ce genre de recette.

Ajoutez vos 10 cl d'alcool pour fruits. Cela relève légèrement le degré d'alcool de la crème et améliore sa conservation. Mélangez puis répartissez dans les bouteilles. Gardez les au frais et a l'abris de la lumière, bien fermées au moins huit jours avant de déguster avec modération en digestif ou pour agrémenter vos différentes sortes de Kirs et cocktails.

I wish the lcbo sold small bottles of like every kind of spirit... then you could at least decide if you like a thing/recipe with a thing before committing to like half a litre of it that is probably upwards of $40...

there's so many cocktails I want to attempt to make but I literally cannot buy an entire bottle or two or three of something every time I come across a recipe I wanna try

Sábado de chuva em Curitiba

CREME DE CASSIS, nunca compre licor de creme de cassis e tenha uma garrafa em casa, porque você vai querer tomar com sorvete todo dia, várias vezes ao dia, é tipo punheta pra adolescente. Eu compro uma marca de sorvete italiano que com licor de creme de cassis fica quase melhor que rola, quase. Hoje comprei um pote de sorvete de pistache, é bom, mas achei que seria melhor. O tradicional de papaia com licor de cassis é sobremesa de churrascaria, pelo menos é a clássica do Galpão Nelore, de Londrina, na minha opinião a melhor churrascaria do Brasil, conheci no início dos 90's com meu pai, e até hoje quando vou à Londrina almoço lá pelo menos uma vez. Atualmente a churrascaria está bem sofisticada, diferente do que era na década de 90, nos loucos e deliciosos 90's, é um ambiente muito agradável que faz par com o Pobre Juan, outro lugar para comer carne que amo ir, tanto aqui em Curitiba como em Barueri, no shopping Iguatemi, Alphaville, onde tudo é outro mundo. Comer bem é um prazer que a gente nunca deve abrir mão, afinal, desta vida só se leva o que se come ou as comedias que se leva, o resto é chantilly e purpurina.

HOJE acordei muito cedo, li umas páginas de "O que vi dos Presidentes - Fatos e Versões" da queridíssima Cristiana Lobo, é difícil acreditar que a jornalista não está mais entre nós, que perda! No livro ela conta dos presidentes de Sarney pra cá, quando voltamos aos presidentes civis, quando acabou a ditadura militar. De certa forma o Figueiredo, eu me lembro muito do Figueiredo, ele foi presidente de 1979 a 1984, eu tinha de 8 anos pra cima, já tava começando a bater punheta e ter ereções lindas, foi importante para o fim da ditadura, e, claro, não teve nada a ver com minha ereções lindas. Estou lendo, do livro da Cristiana Lobo, os anos do mineiro Itamar Franco, o vice de Collor que assumiu a presidência do Brasil depois do impeachment do alagoano que foi ficou pouco, mas foi um tremendo fiasco, quando se olha para trás é impossível não perguntar como pode um sujeito como esse se eleger presidente do Brasil. Pode, tanto se elegeu como outro pior também conseguiu se eleger. Vivi todos esses tempos, desde antes de Sarney tenho memória, como citei, então, do alto do meu meio século de vida eu posso te dizer, caríssimo leitor, e acredite, que sempre pode vir um pior, um mais fiasquento, um menos apto, um mais boçal, um sujeito terrível, então cuidado, afinal, quem elege é a massa, em geral a massa manipulável, a massa rude e sebosa, a massa chocha e capenga, a massa que nunca leu um livro. O mundo não é um lugar bom para a maioria das pessoas, é ótimo para uns, uns poucos. A grande maioria só se fode, sem levar pirocada, o que é mais irônico.

ÀS 9h30 eu já estava cortando o cabelo. Cabelo é preciso manter coitadinho, para ficar bonito. Outubro, o mês de cuidados pessoais, já estive no meu urologista, rotina de próstata que faço de 2017, tudo lindo, estou numa fase boa, colhendo os resultados de uma vida de intensa atividade física e dieta bacana. Todos os meus exames estão muito bons, aleluia! Mas ainda vou passar pelos outros médicos que me acompanham, todo ano faço um check-up geral, com exames de imagem e este ano estou determinado a fazer uma tomografia da cabeça, se o plano não cobrir, pago. Quero ver como estou em tudo. Quero estar bem por dentro e por fora. Ja estive na minha dentista que faz limpeza e polimento nas facetas, tudo lindo! Também já fiz o Botox semestral e preenchimento, bioestimulador de colágeno já está agendado, tenho sessão de laser semana que vem, mas isso está na rotina dos 45 e 60 dias, sim, estou me livrando de pelos indesejáveis de quase todo o corpo, até do saco. É preciso cuidar do corpinho, este ano me livrei da miopia e dos óculos com a cirurgia de miopia que fiz quase há três meses.

ALÉM dos cuidados pessoais é preciso se dar presentes, afinal, temos que nos mimar, ninguém merece mais que nós mesmo, semana passada me dei de presente um iPhone 15 Pro Max, e estou amando. Junto me dei também AirPods que eu ainda não tinha e achei a coisa mais legal e necessária, atualmente penso que todo mundo precisa ter AirPods, o meu é de terceira geração, mas depois que comprei fiquei em dúvida não não deverei ter investido mais um pouquinho e comprado a versão Pro. Em todo caso, estou achando incrível!

A transitional drink, perfect for fall, this sour combines the citrus notes of our Oleo Saccharum with the sharp tang of gin and the deep, sweet notes of blackcurrant from Mathilde Creme de Cassis (a staple in your parents bar cabinet, if they were like mine).

Cassis Sour

2 oz gin (the drier, the better)

.5 oz Mathilde Creme de Cassis

.75 oz C&S Oleo Saccharum

1 oz lemon

egg white

club soda

Add ingredients, minus club soda, to a shaker with ice. Shake and strain into a slim Collins (6oz max, or you'll dilute too much with the soda). Top with club soda.

DYK Cocktails 14: Sha Hualing

Well, I'll give Sha Hualing this: she inspired me to go out and get a kind of alcohol I very rarely willingly consume. That said, the El Diablo (thanks to Anders Erickson!) was just too perfect for her. Red, with a sweet kick that's dangerous to consume, I think it fits the Demon Saint perfectly.

El Diablo (pictured is a double)

1.5 oz (45 ml) of tequila (Anders says use a reposado. I used blanco casamigos because I like it.)

.5 oz (15 ml) Creme de Cassis

1 half a lime (squeeze then throw the left over shell into the shaking tin)

Ginger Beer or Spicy Ginger Ale

Throw everything but the ginger beer in a shaking tin. Shake with ice for 5-10 seconds. Then, while pouring in the ginger beer at the same time, strain over ice into a glass. Garnish with a lime wheel.

There was a hint of tobbaco leaves in the taste, the ones she sometimes passed drying in the Bazaar. Creme de Cassis, black coffee, A warm, earthy flavor that reminded her of the texture of warm leather.

It's just a little spicy, a little bitter, but the flavor tastes like a sneak of something naughty, a sip stolen from a shared flask during a vanguard lecture, mischief, fun, and somehow, comfort.

"I kind of like this one."
