Ivar’s restricted life inside the castle walls caused him to lose grip on time. His arrival had been in late summer, but the endless routine of waking, working and sleeping all seemed to morph into one infinite cycle. 
In Kattegat, autumn always dressed herself in the most vibrant hues, her beauty always as surprising as it was bold. Leaves would scatter the woodlands, roam the streets and bless their city with her splendour. Ivar thought back with fondness at how the autumn flooring would crisp and dance underneath his hands. Autumn’s colors would be a red-flag, a warning for winter nearing, but her beauty was always breathtaking. 
In castle de Haar, autumn’s only sign was her coldness; and the deterioration of fresh and nutritious food. Of course Ivar’s lower range would be the first to suffer; as always the richest stayed fat and warm, due to the hard work and suffering of the common folk. 
Besides the cold, there was another change in the atmosphere. Ivar hadn’t been able to place his finger on it, but something was happening inside the castle. In the courtyard, the linen maidens would whisper more cautiously and subdued, the beehive of peasants running amok seemed to have doubled. The Giant’s short fuse had vanished completely and the brute could explode for no reason, making everyone lower in rank, tiptoe on eggshells. 
Piglet knew what was going on and it affected her greatly. She’d skitter over the courtyard like a frightened doe, dark eyes always hastily scanning the crowd. No longer did she allow herself a nap during the Sunday service, in fact, Ivar wondered if the maiden even slept at all. 
On a few occasions, Ivar tried to ask Piglet about her obvious dread, but lacked the proper words. She would meet his stutters with a dull look on her face and stiffened lips, playing the simpleton again. It bothered Ivar, boiled up his frustrations, because he knew she knew that he was trying to be civil by showing her some form of consideration. Instead of being grateful for his efforts, she ignored him, no even worse, made him feel like a fool. 
So after a few attempts, Ivar grew tired and figured out that the source of everyone’s dread would soon reveal itself. 
It did, actually he did. The only fruit from the loins of the Master of de Haar. Their royal blooded son came back home for the winter. 
Of course, this all passed over Ivar’s head, his world was no bigger than the shed, the pigsty and the well. He had missed the arrival of his master's son, but was aware of the major chaos erupting within his small world. 
All of a sudden, his main tasks were swept aside, quite literally. The Giant slapped the bucket out of his hands and before Ivar knew what was happening, his dim world enlarged. Dragged through the side gate, up a few stone steps, kicked through a narrow hall, he was eventually shoved into a chamber; the castle’s kitchen. 
The place was a beehive, maids and servants squirmed around like rats, all dead-set upon fulfilling their duty and tasks. Grease splattered pots and pans were taken and set onto stained counters. Utensils and dried herbs were stored on hooks that hung upon the walls, rows of matching cups lined perfectly on wooden shelves. Unwashed dishes were stacked up high in the corner; where the mice were having a field day. An ancient kettle boiled above a bright fire, filling the room with the mouth-watering smell of pottage stew. 
The Giant smacked Ivar across the face to get his attention. The brute pointed at an imposing bag bursting with potatoes and then got down to his knees in order to chain Ivar to the wall. For a few minutes, Ivar was left unattended and he used that little time to take in his new surroundings. 
Two maidens ruled the kitchens. Ivar named them Big Cunt and Little Cut, because both women had nasty mean streaks. Although Big Cunt was the tallest of the two, it was Little Cunt who was the dominator, as there could not be two captains on a ship.  
Big Cunt was Ivar’s age, a few years older perhaps and a burden on the eye. Her thin petulant face was forced into an ever growing frown which matched well with her whiny voice.
Little Cunt ruled her kitchen with a scepter. Every mistake made by servants, would be punished with a harsh whack of her wooden walking stick. Don’t let her bony arthritic hands fool you, despite her old age, she could hit like a grown man. And with every excuse, her face would prune up like an over ripe apple, bitter and sour. 
For now, both women weren't paying much attention to Ivar, there was enough chaos in the beehive and apparently a lot at stake. 
Through the mass of people, Piglet suddenly stepped into view and took her place next to him, giving him a sympathetic smile before giving him an even greater gift. 
A knife, the foolish girl handed him a knife. It was snapped at the tip, but the rest was sharp. Deadly. After receiving the weapon, Ivar turned into stone, for he could not believe his eyes and Piglet’s stupidity. The girl hummed and started peeling potatoes, oblivious to the natural born killer next to her. Ivar’s eyes focussed on her throat, watching how the young woman’s heartbeat jittered right underneath the skin of her neck. 
If he was to plunge the knife in Piglet’s throat, she’d bleed out within a couple heartbeats. It would make him feel good, there was no denying of that. Since Ivar could not please a woman, he’d fixated his pleasure onto something else; bloodlust. 
Drawing someone’s blood; his pain escaped through theirs. Seeping from their wounds, his rage fled within their hollow screams. In their agony, he’d find his salvation, meeting their pain, it temporarily freed him from the bonds of his useless body. 
Ivar studied Piglet with a predator’s unwavering attention while he held the knife tightly in his fist. It took Piglet four potatoes in to notice Ivar’s cold dead-pan stare and she yelped softly. 
“Ivar?!” She resolutely dropped all her work and clasped her hand over his; bloody and sticky. For a moment, Ivar neither believed his eyes nor mind. Had he wounded someone?
It took him a moment longer to connect the dots, that yes, he’d wounded someone and that someone was himself. As he had clutched the knife, the sharp edge had embedded into his palm.
The possible murder weapon fell onto the floor as a hiss escaped his mouth and Ivar stared at his hand. The crimson fluid ran down his wrist, as a small pool had formed in the palm of his hand. 
“Ivar dumb-dumb,” Piglet sighed shaking her head and dragging his hand slightly to get a closer look. 
As his breath caught in his throat, Ivar allowed her to fix his mistake; she pressed a clean rag on his palm and squeezed his hands shut with her own. Although her skin color was contrasting, her hands matched his roughness.  Like his, her skin told her story of labour and hardships, yet the way she held him was soft and reassuring. 
As if touched by fire, Ivar loosened his grip; the last thing he wanted was to be perceived as weak, and a small cut was no reason to weep or allow consolation over. 
Piglet’s eyes flickered with amusement: “dumd-dumb,” she mumbled and wiped her bloody hands clean on the hem of her underskirt. The congealed red-brown substance, had become caught in the webbing of her fingers. She wore his blood as she continued to pick up her work and started humming; unbothered and unfazed. 
Ivar wondered if her blood was red too, or would it be darker, thicker? He decided that today wasn’t the day he’d find out, and as the pain in his palm lessened, he picked up the knife and started peeling potatoes.

For the next couple of days, Ivar’s quality of life had changed for the good. Although an undetectable sense of tension lingered in the castle, Ivar considered the overall silent stress as something positive. He no longer had time to tend to the pigs because his new tasks were time consuming. He and Piglet were to be present in the kitchen for various odd-jobs spat by Little Cunt. 
Although Ivar still had no knowledge of Dietsc, Piglet was keen on keeping him well informed of their tasks, not wanting to screw anything up. She enjoyed the change of work too and although both were still outcast and shunned by the rest of the maids, they treasured every moment. 
The time in between courses, the most.
Because in that fraction, the kitchen would be deserted; which meant easier access to proper food.
The first time such a moment occurred, Piglet had bolted through the kitchen to scavenge for a decent meal for two. Ivar was still chained up from the moment he’d entered the kitchen until he left and he’d been over the moon to sink his teeth into a slice of roast beef. Piglet knew her way around, she never picked too much of anything, or misplaced any of the cutlery. She was a proper thief. 
And a dirty avenger, but Ivar had to say he admired her relentlessness. During one of the ‘in between moments’, Piglet motioned for Ivar to watch the door and skillfully reached for a jug from one of the higher shelves. Without a trace of shame, she pulled her skirts up and sank to her knees; pissing into the makeshift chamberpot. 
She then emptied the content in the massive soup kettle and placed the jug back in its place, to then hurry back to her spot next to Ivar.
“You disgusting woman,” Ivar whispered in a mixture of disgust and admiration, then scrunched up his nose and glared at her, “don’t tell me you ever pulled such a trick on me!” 
Although not all the words were comprehensible to Piglet, his disgusted face revealed the essence. A grin spread over her face, wide and open, showing her perfect white teeth. Smug and satisfied, she slumped against the wall and watched how the maidens filled silver bowls with soup. 
“Sköl,” she whispered wickedly and made a humble bow with her head towards the second course meal being served.

A/N: Ah, they held hands and Piglet might have/might haven’t pissed in Ivar’s food, now if that’s not companionship I don’t know what is! I really like Piglet, she’s definitely in my top 3 OC’s I’ve written. Oh and Ivar is such an interesting character to write about, I really love that I’ve placed him in this terrible situation because it’s a total treat to write about. What do you guys think of ‘my Ivar’ as he’s being thrown into this position of a slave, is he still in character? Love to hear from ya’ll

The report accounts for the number of people, mostly civilians, displaced in and from Afghanistan, Iraq, Pakistan, Yemen, Somalia, the Philippines, Libya and Syria, where fighting has been the most significant, and says the figure is a conservative estimate—the real number may range from 48 million to 59 million. The calculation does not include the millions of other people who have been displaced in countries with smaller U.S. counterterrorism operations, according to the report, including those in Burkina Faso, Cameroon, Central African Republic, Chad, the Democratic Republic of Congo, Mali and Niger.

The Financial Times reported on Sunday that the so-called internal market bill is expected to remove the legal force of the highly contentious Northern Ireland protocol, which observers have long argued is vital to preserving peace and stability in Ireland after Brexit. Economists have consistently warned that the economic impact of a no-deal Brexit could be severe. On Monday, business leaders in Britain doubled-down on those warnings, telling Johnson that securing a Brexit deal was essential for the United Kingdom’s economic recovery following the coronavirus pandemic.
‘We are in the second wave’: Europe on edge as cases spike (NBC News) Cases of the coronavirus are spiking in France, Spain and the United Kingdom even as social distancing restrictions ease, stoking concerns among doctors and policymakers about a “second wave” in countries still reeling from the pandemic’s first wave. France set a new record Friday after health authorities reported 8,975 new cases, far higher than the previous record of 7,578 the country set March 31 at the height of the pandemic. In the U.K., new infections soared to nearly 3,000 in one day—the country’s biggest jump since May. And Spain saw nearly 9,000 cases Thursday. Unlike the pandemic’s punishing first round in the spring, France’s troubling rise in new cases has yet to cause a significant surge in deaths and hospitalizations, a salutary statistic for policymakers who remain determined to press ahead with reopenings of schools and businesses.
Belarus activist resists authorities’ push to leave country (AP) A leading opposition activist in Belarus was held on the border Tuesday after she resisted authorities’ attempt to force her to leave the country. Maria Kolesnikova, a member of the Coordination Council created by the opposition to facilitate talks with longtime leader President Alexander Lukashenko on a transition of power, was detained Monday in the capital, Minsk, along with two other council members. Early Tuesday, they were driven to the Ukrainian border, where the authorities told them to cross into Ukraine. Kolesnikova refused, and remained on the Belarusian side of the border in the custody of the Belarusian authorities. The authorities have applied similar tactics to other opposition figures, seeking to end a month of demonstrations against the re-election of Lukashenko in a vote the protesters see as rigged. Sviatlana Tsikhanouskaya, the main opposition challenger to Lukashenko, left for Lithuania a day after the Aug. 9 vote, under pressure from the authorities.
Myanmar army deserters confirm atrocities against Rohingya (AP) Two soldiers who deserted from Myanmar’s army have testified on video that they were instructed by commanding officers to “shoot all that you see and that you hear” in villages where minority Rohingya Muslims lived, a human rights group said Tuesday. The comments appear to be the first public confession by soldiers of involvement in army-directed massacres, rape and other crimes against Rohingya in the Buddhist-majority country, and the group Fortify Rights suggested they could provide important evidence for an ongoing investigation by the International Criminal Court. More than 700,000 Rohingya have fled Myanmar to neighboring Bangladesh since August 2017 to escape what Myanmar’s military called a clearance campaign following an attack by a Rohingya insurgent group in Rakhine state. Myanmar’s government has denied accusations that security forces committed mass rapes and killings and burned thousands of homes.
Australia evacuates journalists from China amid ‘national security’ probe (Reuters) Two Australian foreign correspondents were rushed out of China for their safety with the help of Australian consular officials after being questioned by China’s Ministry of State Security, their employers said on Tuesday. China correspondents for the Australian Broadcasting Corporation (ABC) and the Australian Financial Review (AFR) sought shelter in Australia’s embassy in Beijing and consulate in Shanghai as diplomats negotiated with Chinese officials to allow them to leave the country, the ABC and the AFR reported. The two journalists—the ABC’s Bill Birtles and the AFR’s Michael Smith—had been banned from leaving China until they answered questions about detained Australian citizen and television anchor Cheng Lei, the media companies reported. Both journalists were told they were “persons of interest” in an investigation into Cheng, a high-profile business anchor on Chinese state television, who was detained by authorities in August, the AFR report said. The president of Australia’s Media Entertainment and Arts Alliance, Marcus Strom, said the treatment of the Australian journalists by Chinese authorities was “appalling”.

Syria wants more Russian help (Foreign Policy) Syrian President Bashar al-Assad said he wants to expand his country’s economic and business ties to Russia as a way of bypassing crippling U.S. sanctions during talks with Russian Foreign Minister Sergei Lavrov on Monday. Lavrov hinted that Russia was prepared to come to Assad’s aid, noting during a subsequent press conference that Syria needed international assistance to help rebuild its economy now that Assad is in control of most of the territory he lost during the country’s brutal civil war. The meeting was Lavrov’s first visit to the country since 2012, demonstrating Moscow’s continued interest in Syria after providing Assad with critical military support throughout the civil war.

Virus puts new strain on Gaza’s overwhelmed health system (AP) Dr. Ahmed el-Rabii spent years treating Palestinians wounded by Israeli fire during wars and clashes in the Gaza Strip. Now that the coronavirus has reached the blockaded territory, the 37-year-old physician finds himself in the unfamiliar role of patient. El-Rabii is the first Gaza doctor diagnosed with COVID-19 and is among dozens of health-care workers infected during the local outbreak, which was detected late last month. The spread among front-line workers has further strained an already overburdened health-care system. Since 2007, Gaza has been under an Israeli-Egyptian blockade meant to isolate Hamas, the Islamic militant group that seized control of the territory that year from the internationally recognized Palestinian Authority. Few people can move in and out of the territory, and Hamas placed anyone returning to Gaza into mandatory quarantine centers for three weeks. Before last month, the handful of Gaza’s coronavirus cases were confined to the isolation facilities. But on Aug. 24, the first cases were detected among the general population, and the numbers have multiplied since.
When will tourists return to Africa? (AP) Africa will lose between $53 billion and $120 billion in contributions to its GDP in 2020 because of the crash in tourism, the World Travel and Tourism Council estimates. Kenya expects at least a 60% drop in tourism revenue this year. South Africa a 75% drop. In South Africa, 1.2 million tourism-related jobs are already impacted, according to its Tourism Business Council. That’s not far off 10% of total jobs in Africa’s most developed economy and the total damage isn’t yet clear. “Devastation,” council CEO Tshifhiwa Tshivhengwa said. South Africa’s borders, including virtually all international flights, have been closed for nearly six months and there are no signs of them reopening.

Food Allergy vs. Food Intolerance: Why the Difference Matters
Although we have a lot to learn about food intolerances, ever-growing research proves that they aren’t psychological or make-believe. Read on to learn the differences between a true food allergy and a food intolerance, some examples of common food intolerances, and how healing your gut can, in some cases, alleviate the problem.

Food Allergy vs. Food Intolerance—They’re Not the Same
Food allergies are on the rise, especially in children:
Between 1997 and 2011 food allergies increased by 50 percent in American children (1)
Today, around 1 in 13 children and 1 in 25 adults in the United States suffer from a life-threatening food allergy (2)
In a true food allergy, a person’s immune system produces immunoglobulin E (IgE) antibodies in response to her consumption of a particular food. These IgE antibodies initiate a cascade of events that can affect the skin (hives), the respiratory tract (wheezing), and/or the GI tract (vomiting).
In severe anaphylactic cases, an allergic reaction can be life threatening if not treated immediately with epinephrine.
Even more common than food allergies, food intolerances are estimated to affect up to 20 percent of the population in industrialized countries. (3, 4, 5) Food intolerances are not IgE mediated and are thought to be caused by specific enzyme deficiencies, impaired food absorption, and other GI issues. (6) In many cases, other immunoglobulin antibody responses may also be involved (IgA and IgG)—but more on that later.
Food intolerances generally don’t trigger the dramatic or immediate reactions associated with food allergies, but they’re every bit as real, with varied symptoms like nausea, vomiting, respiratory problems, brain fogginess, and skin reactions such as eczema.
If unmanaged, food intolerances can have serious health consequences too. If you don’t know you have a food intolerance and keep eating the offending food(s), you increase your risk of developing an autoimmune disease, neurological disorders, and more. (7, 8, 9, 10)
Five Common Food Intolerances
Let’s explore some common food intolerances that affect millions of people.
1. Celiac Disease
Often confused with a wheat allergy, celiac disease (CD) is not an allergy but rather an autoimmune disease, characterized by an inflammatory immune response to wheat gluten, rye, barley, and related proteins. Affecting 1 to 5 percent of Americans, CD usually manifests as GI disturbances like abdominal pain and diarrhea, but many patients with CD have no GI symptoms and may not even know they have it. (11, 12)
These atypical, or “silent,” forms of CD are far from harmless. Silent CD is associated with higher rates of iron deficiency, anemia, osteoporosis, neurological symptoms, and a nearly fourfold increase in the risk of death. (13, 14)
2. Non-Celiac Gluten Intolerance
CD screening only tests for antibodies to a few components found in gluten, but people can react to many other components of wheat and gluten in a condition called non-celiac gluten sensitivity (NCGS). (15, 16, 17, 18, 19) No robust diagnosis yet exists for NCGS. The best clinical description is: “a reaction to gluten that resolves when gluten is removed from the diet, and CD and allergy have been ruled out.” (20)
Despite its inexact diagnosis, NCGS is real—and studies are proving it. Double-blind, placebo-controlled trials indicate that a subset of people who do not have CD or a wheat allergy can and do indeed react horribly to gluten when they don’t know whether they are being given gluten or not. (21, 22, 23)
Up to one in 20 Americans may have NCGS, which can affect the brain, skin, endocrine system, stomach, liver, blood vessels, and more. NCGS can produce a wide range of symptoms: (24, 25, 26)
Bloating
Abdominal pain
Gas and related pain
Diarrhea
Constipation
Tiredness
Headache
Anxiety
Foggy mind
Eczema
Chronic fatigue
Joint and muscle pain
Asthma
Depression
Unfortunately, many health professionals still don’t take NCGS seriously, which does a huge disservice to those suffering. In fact, NCGS, especially if undiagnosed, can be even more serious than CD. Epithelial damage to the gut, systemic immune activation, and systemic inflammation are all linked to NCGS. (27) By continuing to eat gluten, patients with NCGS are at higher risk of developing arthritis, thyroiditis, multiple sclerosis, ataxia, diabetes, and even amyotrophic lateral sclerosis (Lou Gehrig’s disease). (28, 29, 30, 31)
3. FODMAP Intolerance
Sometimes, people who think they are sensitive to gluten may actually be intolerant to FODMAPs, or fermentable oligosaccharides, disaccharides, monosaccharides, and polyols. FODMAPs, a type of carbohydrate, are found in many common foods besides wheat, including:
High-fructose fruits
Asparagus
Brussels sprouts
Garlic
Onions
In the case of FODMAP intolerance, the GI tract isn’t fully digesting and absorbing these short-chain carbs, which are then fermented by gut bacteria, creating gas and increasing fluid movement into the large bowel. (32)
FODMAP intolerance is common in people with irritable bowel syndrome (IBS) and small intestinal bacterial overgrowth (SIBO). By adhering to a low-FODMAP diet, up to 75 percent of people have relief from functional gut disorder symptoms, especially IBS. (33, 34, 35, 36, 37). However, a low-FODMAP diet is not advisable long term because it can decrease microbial diversity and density of beneficial bacterial species. (38, 39)
4. Lactose Intolerance
Up to 65 percent of the world’s population—literally billions of people—may be lactose intolerant. (40) Lactase, the enzyme that digests the milk sugar lactose, is present in infants and young children, presumably to digest breast milk, but many people don’t maintain full lactase function beyond childhood. (41, 42)
Why Eat Dairy, Anyway?
Most iterations of the Paleo diet don’t include dairy. But, if well tolerated, dairy can be a nutritious and beneficial part of a Paleo template. If you’re not eating fish heads, bones, and skin, getting adequate calcium without dairy isn’t easy. Pastured dairy is a great source of fat-soluble vitamins A, D, and K2 and is a primary source of conjugated linoleic acid (CLA), a beneficial, naturally occurring trans fat thought to have anti-cancer properties. (43)
5. IgG- and IgA-Mediated Food Intolerances
Many prominent immunologists argue that some (maybe even most) food intolerances do activate the immune system, but rather than being IgE mediated like a food allergy, they are mediated by IgG and IgA antibodies. IgG- and IgA-mediated food intolerances are thought to be related to increased gut permeability and are often implicated in Crohn’s disease and other GI conditions. (44, 45) If the gut is permeable, food molecules can escape and be detected by the immune system.
Symptoms of these intolerances range from allergy-like reactions such as rashes and asthma to GI symptoms like cramps, constipation, and diarrhea and neurological symptoms such as migraines. (46) Unlike IgE-mediated responses, IgA- and IgG-mediated responses can take days or even months to occur, which makes identifying the culprit(s) more difficult. (47)
How to Overcome a Food Intolerance
People with food allergies generally have them for life, although children sometimes can “outgrow” allergies to milk, egg, wheat, or soy. But you might be able to do something about a food intolerance by healing your gut.
Food intolerance circles back to compromised gut health. In most cases, a food isn’t being digested properly and/or or food molecules are getting past the gut lining when they shouldn’t be able to.
Here are some ways to fix your gut:
Increase stomach acid using supplementation and herbs. Stomach acid is needed for digestion. Although many people think they have too much stomach acid, they may in fact have too little.
Get tested and treated for SIBO or intestinal pathogens to reestablish a healthy gut flora.
Eat sauerkraut and other fermented foods and consider taking a probiotic supplement.
Eat fermentable fiber, as prebiotics can be even more effective than probiotics at improving the microbiota profile.
Drink bone broth. The gelatin, glycine, and glutamine in bone broth all have beneficial effects for the gut.
Should You Get Tested for a Food Intolerance?
The most budget-friendly way to identify food intolerances is a 30-day Paleo reset diet, as I’ve outlined in The Paleo Cure, where the most common offenders (dairy, grains, legumes, sweeteners, processed foods, industrial seed oils, and alcohol) are removed from the diet for 30 or even 60 days and then systematically reintroduced.
If your suspected food intolerances seem linked to severe reactions or conditions like inflammatory bowel disease (IBD), IBS, or ulcerative colitis, the Paleo autoimmune protocol (AIP) diet, which goes a step beyond Paleo by also initially removing eggs, nightshades, coffee, nuts, and seeds, might be prudent. In a study published in 2017, 11 of the 15 IBD patients who adopted an AIP diet achieved clinical remission in just six weeks! (48) This further supports the idea that the gut and food intolerances are intricately linked.
But because reactions don’t always appear right away, these rudimentary dietary experiments can be incomplete. The next option would be IgA- and IgG-based blood tests.
A lot of controversy surrounds blood tests that screen for food intolerances based on IgA and IgG levels. Some scientists and immunologists claim that levels of IgG and/or IgA antibodies in the blood merely reveal that a patient has been exposed to certain foods, not that they are necessarily intolerant to these foods. (49, 50, 51) I interviewed Dr. Aristo Vojdani, a respected immunologist with many peer-reviewed papers, on this very subject. We explored some of the reasons why not all food intolerance tests are created equal, such as how testing cooked versus raw foods can yield different outcomes, but not all tests measure both. (52)
It’s clear we need more research surrounding reliable, reproducible, and scientifically founded food intolerance testing. However, food exclusion diets based on IgG and/or IgA antibody testing have provided relief for symptoms of:
Ulcerative colitis (53)
IBD (54)
Migraines (55)
Skin disorders (56)
At my clinic, we use the IgG/IgA tests offered by Cyrex Labs. (Your healthcare provider will have to order this for you as this is not a direct-to-consumer lab.) Array 3X identifies gluten and gluten-related protein intolerances. If a patient has celiac disease or NCGS, they are very likely to have other food sensitivities, and I might follow up with Array 4 or Array 10. (57)

Instructions to make Courgette dhal:
Wash and drain lentils at least 5 times until water is clear (initially it will be cloudy and there may be small stones). Then leave to soak in clean water whilst you cook next stages..
Heat oil and gently cook onion until soft. I find about 15 minutes on low heat with lid on makes them intensify but remain colourless..
Then add garlic, ginger and fresh turmeric to pan with onions. Either chopped or I find grating with microplane easier..
Cook for couple of minutes stiring to stop anything catching on bottom. Then add dried spices and cook for a further minute until they release their pungent aromas..
Next add drained lentils and 500ml of boiling water - stir well. Reduce heat to simmer for about 15 minutes..
