Some extra flavour to the #RCW2015
We all know that a good sports bar has three things:
1.       Beer on tap
2.      A television on the wall
3.      A menu that offers Chicken wings.
Rather than going out this weekend to support the home nations, why don’t you and your mates grab a couple of beers, put on the TV and let TABASCO®help you create the best Chicken wings you will ever had! We promise they will go down an absolute storm.
Tumblr media
INGREDIENTS
·         12 chicken wings
·         Salt, to taste
·         Olive oil, as needed
·         4 tablespoons brown sugar
·         120 g  cup ketchup
·         1 bottle TABASCO®  Green Jalapeño Pepper Sauce
·         1 teaspoon mustard powder
·         2 teaspoons Worcestershire sauce
·         1 teaspoon whole grain mustard
 PREPARATION
Spread wings out on a sheet tray and season well with salt. Set aside.
Preheat grill to medium-low heat. Brush grill with a little bit of olive oil to prevent sticking.
To prepare Jalapeño BBQ Sauce, combine brown sugar, ketchup, TABASCO® Green Sauce, mustard powder, Worcestershire and whole grain mustard in a saucepan. Bring to a simmer for about 10 minutes. Set aside.
Place chicken on grill, at least an inch apart. Grill each side until charred but not burnt, about 7-9 minutes each side. When fully cooked, brush each side of chicken with Jalapeño BBQ Sauce and remove from grill. Serve wings with remaining sauce.
Makes 4 servings.
Tumblr media
INGREDIENTS
·         2 tablespoons olive oil
·         1 cup finely chopped onion
·         1 tablespoon minced garlic
·         120g  Dijon mustard
·         120g  cup lime juice
·         2 tablespoons TABASCO®  Green Jalapeño Pepper Sauce
·         1 tablespoon chili powder
·         1 dozen chicken wings
·         100g  sliced green onions
·
PREPARATION
Heat olive oil to the smoking point in a heavy skillet or sauté pan over medium-high heat; add onion and cook until golden brown. Add garlic and cook 1 minute.
Stir in mustard, lime juice, TABASCO® Green Sauce, and chili powder and cook just until steamy, about 1 to 2 minutes. Immediately pour mixture over chicken wings and toss to coat well. Cover and refrigerate for 1 hour.
Remove wings from sauce and grill over medium-high heat long enough to flavour chicken and create grill marks, but don't cook completely. Place wings in a baking pan and spoon sauce over top. Bake in a 350°F oven for 15 to 20 minutes or until chicken is done. Sprinkle green onions over top and serve.
 Makes 6 servings.

An Egg-stravagent Eggs-travaganza
Want to know the worst kept secret in cooking? TABASCO® and Eggs are absolutely delicious together.
To celebrate National Eggs Week we have pulled together some eggs-tremely interesting egg facts & want to share with you some of our egg-ceptional recipes that we promise you will love! We also promise no more egg puns… Okay maybe one more, but we are just so egg-cited!
Top TABASCO® Egg Facts:
1.      Did you know that 1.2 trillion eggs are produced worldwide each year? That means that if we were to distribute them out evenly each person on earth would have 172 eggs a year!
2.      You can tell if an egg is raw or hard-cooked by spinning it! If the egg spins easily, it is hard-cooked but if it wobbles, it is raw. Don’t believe us? Try it!
3.      You literally can make anything with eggs- the only thing that limits you is your imagination. You could scramble some eggs for a quick-and-easy healthy breakfast; or upgrade to an omelet by chopping some veggies and adding mozzarella cheese; or you could even boil a few eggs, sprinkle them with a bit of salt and pepper, and cut them up for a tasty addition to your salad. Don’t forget your TABASCO®
4.      Did you know the world’s largest egg was laid in 2010 by Harriet the hen and it measured a whopping 9.1 inches in diameter… ouch!

Have a look at our Eggs hub on Tabasco.com (link below) to explore the wonderful world of Tabasco & eggs! Click the links below for a couple of our favourites:
Classic Eggs Benedict
Santa Fe Western Omelet Tacos
Classic Steak & Eggs
Oh and one more thing… Think you love eggs? Not as much as Howard Helmer does! He holds not one but two Guinness World Egg records. One for the fastest omelette (in 39 seconds) and the other for turning out a ridiculously fast 427 omelettes in 30 minutes.

Brunch at Home recipe
The PERFECT scrambled egg with Tabasco
3 large free range eggs
6 tbsp single cream
A little bit of butter
Grab yourself a little non-stick pan and heat your butter until it has fully melted! Best not to let is brown, it’ll make the eggs a funny colour. Now crack your eggs, whisky them with the single cream and add them to the pan. NOW. DON’T. TOUCH. THEM. For a whole. TWENTY SECONDS. You will have to resist all the urges to scramble, but we believe in you!
Put down the metal folk… You will need to find a wooden spoon. Take the spoon and fold the eggy mixture from the bottom of the pan. Do this every 5-10 seconds. Repeat until your eggs are nearly as done as you prefer them. Now remove from heat and wait 5 seconds. Salt, pepper and Tabasco. Serve over toast.

Get gritty with breakfast...
As part the American leg of our Tabasco world tour, we have picked out a tasty recipe for you guys to try out at home when you fancy a bit of American style brunch. When most people think of a classic American breakfast, they typically come up with something along the lines of waffles, with crispy bacon and maple syrup. But not here on the Tabasco world tour – we’ve found you something a little different to try!
Grits are a typical breakfast staple of Southern America, often used a base for other ingredients. They are typically made with ground corn, and cooked with a delicious concoction of butter and cream, making a mouth-watering side dish to any brunch. You can use them as an accompaniment to anything from avocado to bacon or poached eggs. They love them so much in the South, they sometimes have them for lunch and dinner as well. If you can’t get hold of grits, fine cornmeal or polenta works just as well and is basically the same thing!

Quick Grits with Tabasco
Ingredients:
Makes 6 servings
6 cups chicken stock
2 cups double cream
4 tablespoons unsalted butter
2 large garlic cloves, crushed
2 cups grits or polenta or fine cornmeal
Tabasco sauce
Salt
Pepper
In a large saucepan, combine the stock, cream, butter and garlic. Add 2 teaspoons of salt and 1/4 teaspoon of pepper and bring to a boil. Slowly whisk in the grits or whatever you are replacing them with,  and cook over low heat. Whisk often, until the mixture is thick and completely smooth. This should take about 10 minutes. When smooth, season with salt, pepper and Tabasco and serve with the brunch accompaniment of your choice – check out some of the pictures for inspiration!
If you can’t quite manage to get through six servings of that buttery deliciousness, have no fear! We have also found an amazing way to use your leftover grits the next day, with an unusual addition of Tabasco Cream. Sunday brunch anyone?
Fried Grits with Tabasco Cream
Tabasco cream Ingredients:
¼ cup sour cream
¼ cup mayonnaise
1 teaspoon sugar
1/2 teaspoon lime juice
½ teaspoon onion powder
Tabasco sauce, to taste
Take your left over grits and form them into patties, ensuring they are tightly packed with no air pockets, and stick them in the fridge for several hours or overnight. When you are ready to cook, fry them up in a little butter or oil and then top them with the Tabasco cream. To make the cream, simply combine all ingredients in a bowl and stir until smooth.

U S OF A
This month our world tour arrives in the USA!  This week we have chosen the best American restaurants and brunch spots from around the UK. Then you guys can all check out some delicious American food in honour of our world tour!
Applejacks, Cardiff:  http://applejackscardiff.co.uk/
Tumblr media
First up on our list of places to go is Applejack’s Deluxe Diner in Cardiff. They serve all your favourite American classics with a ‘deluxe twist’ alongside some more unusual and exotic brunch choices. You can upgrade your brunch session to their ‘bottomless brunch’ option, which gives you any dish with unlimited bubbly for just £15. Their breakfast taco sounds like the best option – a tortilla stuffed with chorizo and scrambled egg. Is it just us, or does this sound like this could be made even better with some tabasco? We certainly think so! They also have a pretty special looking waffles on offer that sound pretty fancy, including ‘The Hudson’ which is a crazy sounding concoction of confit duck leg, bacon, orange and a poached egg! Go on and give it a go – we dare you!
Buffalo Jack’s American Restaurant and Bar, Liverpool.  http://www.buffalojacks.co.uk/
Tumblr media
Buffalo Jack’s in Liverpool has a giant menu that has everything you would possibly want to find at an American diner. From buffalo chicken wings to the humble hot dog, they’ve got you covered. Although they don’t have a brunch or breakfast menu, there incredible selection looked too good to miss, so pop in for a late brunch any time after 12pm. Not only is the food great (and truly American) but they also have classic thick milkshakes that would be the perfect accompaniment for all of their amazing looking food. We would go for this New York strip with bacon and an egg, because who doesn’t want steak?!
Tumblr media
For those of you in Scotland, we suggest The Filling Station in Edinburgh. It is a bit of an institution in Scotland, with restaurants in Aberdeen, Braehead, Inverness and Stirling as well as Edinburgh. Their pancakes, waffles and French toast would be an excellent choice to any discerning Bruncher! Actually, everything on their breakfast moment looks delicious, definitely the taste of America we are looking for. Hopefully it will inspire you to cook up some classic American brunches, perhaps with the little Tabasco kick we know you love!
 The Beat Brasserie, Cambridge http://www.beatbrasserie.com/
Tumblr media
For those of you in the East, Cambridge has this funky little Brasserie on offer. The Beat Brasserie  is located right in the Harvard Square and has an outside patio, which we reckon is the ideal spot to do a little people watching while you brunch.  The brasserie is inspired by the American beat movement of the 1960’s, and has a special weekend brunch menu that we think is totally worth taking a trip to try out.  Their food looks amazing, with some American classics like Turkey hash with poached eggs that is sure t put a smile on any brunchers face!  For those of you on a health kick, they also offer American inspired salad bowls; We like the look of the delightfully named ‘Hippie Salad bowl’ which will take you right back to the swinging sixties.
Bear, Dublin http://www.joburger.ie/bear
Tumblr media
Bear in Dublin has a special weekender brunch menu that is very exciting for a seasoned bruncher – It’s full of exciting new things for you to try, without a boring Eggs Benedict in sight. We particularly fancy the red flannel hash, a combination of steak, beets, potato and fried egg with some hot sauce on the side that is sure to make anyone feel like a real cowboy. They even have mini cactuses on the table!  Fror those of you that like a slightly less meaty lunch, they have a delicious looking scrambled egg that comes with jalapeno and emmenthal cheese on toasted sourdough bread.  Sounds amazing, right?

Mexi-Brunch
As part of our Tabasco World Tour stop in Mexico, we have scoured the web for some of the best Mexican food bloggers to get you inspired to get a bit more yummy Mexican food in your life. Whilst searching, we stumbled up the mouth-watering Amuse your Bouche.com ( http://www.amuse-your-bouche.com/ ) which is a vegetarian food blog created by the lovely Becca.
Although Becca is from the UK, not Mexico, her exotic Mexican influenced recipes are too good to miss. The Mexican baked eggs recipe looks particularly tasty, and really simple to make. The best thing is that you only need one pot to cook with, which means less washing up and more time for brunch! And there’s nothing like a lazy brunch, right? Or if you wanted something a bit more substantial (and a bit more messy to eat), Becca has a great recipe for some breakfast nachos. We can’t think why we hadn’t thought of nachos as a brunch food before now!
We are also very interested in recreating her cheesy Mexican potatoes and honey chipotle roasted peanuts, which put are a couple of unusual recipes that work with Mexican flavours to create something really special.
