Poucave and Fi Usage

Poucave is the most blatant example of a Fi user that this show has given us to date. She doesn't care much for other people's values or desires (like when Kaeloo tells her to stop spying on people because it's mean, and she refuses), but she has a strong moral compass and set of values that she calls her own, and she clearly sees her own values as one of the most important things in her life.

Why Olga is an ISFP

Olga clearly has Fi and Se. Her Fi is visible in how she’s in touch with her own personal values, emotions, desires, etc, and her Se is visible in how she’s very attuned to her physical environment and surroundings and is somewhat impulsive in the pursuit of physical and sensory pleasure despite how risky it can get for her.

The Main Four and Si

Each of the main four uses Si, but in a different place.
Quack Quack (ISFJ) is a Si-dom. He seems to indicate a preference for doing things the same way as always and is rather hesitant to try new things. An example of this is in “Yogurt War” when Kaeloo buys him fruit yogurt instead of his usual plain yogurt, and he angrily refuses to try it because it’s something new. (Thanks to LittleOrangeFish#4497 on Discord for the example!)
Kaeloo (ESFJ) uses auxiliary Si. Since she’s a high Si user, she values traditions and rules, as shown by her hesitancy to create a new bedtime story for Stumpy and Quack Quack instead of reading traditional ones, and her love of things like tea parties.
Mr. Cat (INTP) uses tertiary Si. Despite not being as rigid about rules and traditions as Kaeloo or Quack Quack, he still shows some adversity to change. An example is “Having New Friends”, where he refuses to allow the sheep to join his friend group because he thinks they would change the way the group hung out with each other.
Stumpy (ENFP) uses inferior Si. It shows up when he’s in a Si grip, as detailed here.

MBTI Grips as seen in “Kaeloo”

This post is written under the assumption that Kaeloo is an ESFJ, Stumpy is an ENFP, and Mr. Cat is an INTP.
Kaeloo:
The ESFJ’s grip function is Ti. ESFJs in the grip of Ti tend to use the analytical nature of Ti to criticize everything and everyone around them and are prone to lashing out at others and pointing out every little flaw in the things and people in their environment, as well as themselves. Kaeloo has been seen doing all of these things in the show in scenes where she is stressed: she lashes out at Mr. Cat and smacks the book he’s reading out of his hands when he makes a joke while the main four are at risk of losing their jobs, she yells insults at Stumpy for being stupid and incompetent when he messes up, and she blames herself for letting things get like this in the first place.
Stumpy:
The grip function of an ENFP is Si. ENFPs in the grip of Si tend to hyperfocus on one little issue and panic about it until the issue is somehow fixed. In Stumpy’s case, this can be seen in the episode “Big Book of Destiny”, where Stumpy figures out through time travel that a war may happen several years in the future; back in the present, he can’t stop panicking about the future war and thinking of ways to prevent it, to the point where he is distracted from everything else in life.
Mr. Cat:
The INTP’s grip function is Fe. INTPs in the grip of Fe become more prone to outwardly displaying emotion, be it unnecessary aggression or extreme neediness and insecurity. In Mr. Cat’s case, both of these things have happened before. When the main four are in danger, or something has happened to terribly upset Mr. Cat, he starts panicking, getting angry, or in rare instances, feeling sad - while he may not cry at these times, his voice makes it evident that he is distraught or even on the verge of tears. In the essay contest episode, we see that he’s also prone to feeling insecure and rather needy. Kaeloo writes a generic essay about world peace and Mr. Cat reads too deeply into it and starts to think it’s about how she hates hanging out with him, and as he articulates his thoughts on the matter, he’s clearly growing more and more distraught.

Why Mr. Cat is not an INTJ

Well, I’ve been busy for the past few weeks so I didn’t have time to respond to the anon post about INTJ Mr. Cat (link here), but here’s a response I wrote to it. In this post, I will explain why I’m sticking with my interpretation of Mr. Cat as an INTP and why I disagree with anon’s claims.
The idea that Mr. Cat is an INTJ because he actually does stuff instead of sitting around thinking all day, is good at planning things, and is a good leader is largely based on stereotypes. Many INTPs are good at those things too. As an INTP, I can confirm that we aren’t just lazy slobs who do nothing but daydream, and we can have goals, plan things to some extent, and be assertive just like anyone else.
Going off of my last point, while INTJs are more likely to put up a “shield” around themselves to avoid being seen as vulnerable, you have to remember that Mr. Cat is someone who has endured a great deal of abuse in the past and probably doesn’t want to be seen as vulnerable because he’s afraid that people who think he’s vulnerable will try to hurt or take advantage of him.
It is true that INTJs can be laidback and messy, but even the chaos they create is usually in an organized manner, unlike Mr. Cat, who just throws stuff wherever and doesn’t particularly care about his surroundings.
ENTPs, often seen as the most argumentative type, also have Fe in their function stack. Having Fe in their stack does not necessarily make a person more passive and likely to avoid conflict. In addition, an INTP in the grip of Fe will provoke people to get attention or fill an emotional void and have emotional outbursts, which is something Mr. Cat does when he’s under stress.
Mr. Cat is good at planning things, but he usually does it in a flexible way which allows for a change of plans when something unexpected happens, which is a perceiver trait. This is also typical of Ne users.
Mr. Cat says he doesn’t care what other people think of him, but there are more than a few episodes that prove that he does care about it and just prefers not to show it outside.
Mr. Cat also appears to be in some kind of tertiary Si loop when he gets upset. Because of his past trauma, he often winds up ruminating on bad past experiences.

Why Mr. Cat is an INTJ

I respectfully disagree with your analysis of Mr. Cat as an INTP.  I myself am an INTP and I believe that Mr. Cat is actually an INTJ. Most arguments I've seen in favor of Mr. Cat being a perceiver are just things like "he's messy" or "he's laidback", which does not really address the issue in depth. Here's why I see him as an INTJ:
Mr. Cat does things efficiently and makes decisions upfront, without dwelling on all the different possibilities and being indecisive. He also dismisses theories that are impossible without giving a second thought to them because they are impractical. INTPs like to live in their heads and think of possibilities for their own sakes, whereas INTJs are more likely to actually do something with that information.
When Mr. Cat dislikes something, he doesn’t go with the flow like an INTP and silently rebel in little ways or act passive aggressively, he steps up to change whatever is bothering him.
When Mr. Cat is upset, he indulges in sensory experiences, like drinking alcohol, eating junk food, and physical contact with Kaeloo, be it violent or affectionate. INTJs are prone to doing this under stress because of their inferior Se.
Thanks to inferior Fe, INTPs dislike generating conflict (though they enjoy an impersonal debate) and prefer to keep harmony among people, so they appear more amiable. Mr. Cat, on the other hand, is very assertive and doesn’t mind expressing his opinions, even if he knows very well that they would upset other people.
Mr. Cat is very good at planning things out, and many episode end with the twist that all of the events of the episode were carefully masterminded by Mr. Cat in order to achieve some goal.
Mr. Cat is prone to taking leadership roles and organizing groups of people to do things, which INTJs are more likely to do than INTPs.
He’s not the type to do things without a reason. He causes plenty of chaos, but there is a good reason for that. Maybe he’s trying to make Kaeloo mad, or spite someone, or achieve a personal benefit, but he always has a goal in mind and will do anything to achieve it.
He doesn’t care very much about what people think - with the exception of Kaeloo, of course - and actively advocates for the philosophy that it’s important to be yourself regardless of what others think, whereas INTPs are more likely to get upset when people question their theories or their behavior.
He masks his insecurities with a front of arrogance, not because he’s obsessed with people thinking he’s smart, but because he’s afraid of being vulnerable.
He’s also certain that he’s right all the time, which reflects INTJ certainty. INTPs are usually less certain about being right and open to the idea that they are wrong.
When he’s upset, he gets stuck in a loop of bad feelings and poor self-image, which is more likely to happen to an INTJ because of Fi.

The Bedtime Story Episodes

Kaeloo has two episodes centered around the main four enjoying a bedtime story before going to sleep.
In the first one, Kaeloo’s friends get bored of reading the same old stories every night and ask her to make up a new one. Kaeloo (ESFJ) initially refuses on the grounds that it’s “against the rules”, since xSxJ types value traditions very much. It’s only by appealing to her emotional side that they succeed in getting her to make up a story.
In the second one, Kaeloo is telling her friends classic fairy tales for bedtime stories, but Mr. Cat (INTP) disagrees with her. Being an xNTx type, he carefully analyzes each story and changes its end to show the kids how it would really end if the story happened in real life in the present day. Kaeloo is still upset about Mr. Cat changing the endings and insists that the kids should “appreciate the magic” in old fairy tales, even though the children are clearly enjoying Mr. Cat’s version of the stories better.
